Abstract
- Highlights: [•] For the first time, we aimed to optimize mead production using RSM. [•] The effects of the temperature and nutrients on mead’s quality were studied. [•] These variables influenced glycerol, acetic acid production and fructose consumption. [•] Optimum conditions found: 24°C and a nutrient concentration of 88g/hL.
