Abstract

Highlights: [•] Fifty polar lipids were identified by UHPLC-MS n in bovine milk from an animal feeding trial. [•] Ten compounds have not been previously identified in bovine milk. [•] 18:1 and 16:0 were the main fatty acids present in the polar lipids (apart from sphingomyelin). [•] Saturated fatty acids were located in sn-1, and PUFAs in the sn-2 position of the glycerol backbone. [•] Cow diets influenced the relative amounts of 8 polar lipids in the milk.
