- Highlights: [•] The study provides an approach to reduce allergenic proteins in peanut product. [•] A sequential process of ultrasonication followed by enzyme digestion was developed. [•] Ultrasound assisted protease digestion greatly increased peanut protein solubility. [•] Ultrasound–enzyme combination significantly lowered Ara h 1 and Ara h 2 in peanuts.
