Abstract

The article discusses a study which investigated mice's behavioral and nerve responses to different umami substances. The study examined the taste characteristics of several umami substances including monosodium L-glutamate (MSG), sodium succinate, and betaine. Results revealed that sodium succinate had strong synergy with inosine 5'-monophosphate (IMP). It notes that the synergy of D-MSG with IMP might be weak.
