Abstract

The article presents the perspectives of food scholars Andrew Smith, Jeffrey M. Pilcher, and Darra Goldstein on popular food writing and academic food writing in the 21st century. Topics include celebrity chefs in food publishing, interest in academic food publishing, and food journalism. Smith addresses the study of food history, his book "Oxford Encyclopedia on Food and Drink in America," and the practice of food scholarship and criticism. Pilcher comments on the financial aspects of graduate programs in food history, the work of modern food scholars, and differences between popular food writing and scholarly food writing. Goldstein addresses the issues of food studies programs, relations between food scholars and publishers, and the writing of dissertations on food.
