Abstract

The article offers the author's insights on the manufacturing process of Cru Sauvage chocolate of Felchlin. The author relates his experience of traveling to Bolivia for a research about cacao and chocolate, along with chocolate connoisseur Volker Lehmann. He says that the chocolate was made from ancient cacao tree which grew in the farms of Rio Grande in Bolivia. Furthermore, he mentions the book "American Terroir," by Rowan Jacobsen which offers information on cacao fruit and chocolates.
