Abstract
- The article discusses a procedure developed by the U.S. Department of Agriculture's (USDA) Agricultural Research Service (ARS) to help the USDA'S Agricultural Marketing Service identify microcracks in egg shells. According to the article, the cracks are a food-safety concern because of the pathogens that can pass through the cracks and contaminate the eggs. High-frequency analysis is used at many egg-processing plants to listen for cracks, while other plants use human graders to inspect the eggs. ARS's pressure chamber technology and the specialized camera that captures images of the eggs are discussed.
