Abstract
- The author discusses the significance of a restaurant menu as the chef's way of communicating with the restaurant's patrons. He describes menus as a form of literary art and compares the process involved in understanding menu items to reading poetry. He also highlights the changes in menu language's form and content, as well as the gradual transformation of the menu into a set of metaphors with the emergence of nouvelle cuisine.
