Abstract

Biological deliberate contamination of food and water may lead to intentional foodborne outbreaks. The main biological agents associated with such digestive outbreaks are: Bacilus anthracis, Vibrio cholerae, species of Salmonella, Shigella; bacterial toxines-botulinic toxine, E. coli O 157:H7 enterotoxine and B staphylococcus enterotoxine. Recognition of bioterrorism-asociated foodborne diseases needs some succesive steps: prompt initiation of epidemiologic surveys associated to the outbreak; rapid diagnosis of clinical syndromes associated with deliberate food epidemics; o good diagnosis capacity for regional clinical laboratories and an active surveillance of enteric diseases through a national informational system.
