Abstract

The article focuses on the Smithfield Foods slaughterhouse in Tar Heel, North Carolina, the largest such facility in the world. Since a November 2006 year raid on the plant by U.S. immigration officials, more than 1,100 Hispanic employees have left, over 20 percent of its workforce. The company is struggling to find and train replacements. Wages have been raised, but the turnover rate for new employees is twice that of the workers they replaced.
