Abstract

The article chronicles the beginnings of the milk industry in the United States, citing a document in a Dairy Museum in Philadelphia, Pennsylvania, among its sources. It surveys the early organization of milk delivery as settled communities grew, unsanitary and fraudulent practices at distilleries and stables, milk routes, the application of pasteurization, and the evolution of milk containers. Scientific advances that improved hygiene, preservation and testing are also discussed.
