Abstract

The article criticizes the pumpkin pie as a holiday favorite during the 1890s. A background on the history of pumpkin is presented. The result of the chemical analyses of pumpkin pie is discussed. The taste of stewed pumpkin is criticized. The use of pumpkin as a base for a certain pie is questioned.
