Abstract

This work was made in the distillery annexed to the sugar mill "Melanio Hernández", in which the behavior of the fermentation process at lab conditions was carried out, parting from the determination of the parameters controlled for he process at factory level. A proposal was raised for the combined use of substrates using honey, juice obtained from the filters of the sugar process, and residual musts from the distillery. This study guarantees the economic results obtainable by reducing the production cost for the obtainment of ethanol via fermentation for each of the analyzed alternatives . As a result we concluded that the best fermentation variant was the combination of 52% of musts and 80% the juice, with an economic effect of about 10% of the capital cost. A new combination was analyzed, which would reduce the pollution effect of the residues generally spilled into the river. The economic results suggest technologic applications for these alternatives.
