The article explores the benefits and challenges of increasing pulse consumption as part of transitioning to more sustainable diets. Topics discussed include the nutritional advantages of pulses, such as their high protein and micronutrient content, their environmental benefits like reduced greenhouse gas emissions and lower fertilizer use, and the challenges in changing dietary habits and improving the accessibility of pulses in convenient, affordable forms.
