Abstract
- Carya cathayensis Sarg was a kind of high nutrition nut, containing rich bioactive substances, could be widely used in food, medicine, functional food and other fields. Carya cathayensis Sarg primary processing technology was important for improving product appearance and quality as well as economic benefits. It was imperative to optimize Carya cathayensis Sarg primary processing technology and promote machinery and equipment to accelerate mechanization, automation and intelligence. In this paper, the research progress of the main bioactive ingredients in Carya cathayensis Sarg was reviewed, the research status of the primary processing technology of pecan was summarized, and the breakthrough point of the current product processing technology was discussed. In order to provide consumers with the scientific basis for the correct choice of nuts, to provide theoretical support for promoting the pecan industry to achieve mechanization, automation, intelligence.
