Abstract

Taurine, derived from the metabolism of methionine and cysteine, is a strong acidic sulfonic acid zwitterionic β-amino acid that contains an acidic sulfonic group, an alkaline amino group, and two carbons in between. It exhibits strong water solubility and poor lipophilicity within the physiological pH range. Due to the absence of carboxyl groups, it does not participate in protein synthesis and is a semi essential amino acid. The physicochemical properties of taurine make it an ideal regulator for various basic physiological processes, with various functions such as maintaining homeostasis, bile acid binding, anti⁃oxidant stress, anti-inflammatory, protecting cardiovascular, protecting central nervous system, and participating in immune regulation. In recent years, with the promotion of low protein diets and the popularization of intensive factory production, the disease resistance of livestock and poultry has been greatly challenged. It is necessary to add taurine reasonably to the diet. Therefore, the research progress of taurine in the fields of animal physiology and animal nutrition were introduced in this article, aiming to provide reference for the majority of livestock practitioners.
