Abstract

The fermentation process of tempe takes a long time, which is about 24 to 48 hours. Several factors affect the success of this process. Among them are temperature and humidity. Tempe producers generally depend on the weather and do not control the temperature and humidity. Since the weather is often erratic, the ambient temperature and humidity of the process become undetermined. Another research found that the ambient temperature above the room temperature (28 C) will shorten the fermentation time by five hours. Another fact the author found is that tempe from the coastal area (hotter more humid) are tastier than the ones from a mountainous area. These two facts raise a question how if the tempe fermentation process takes place at the controlled chamber. This research proposes a tempe incubator controlled with a microcontroller to regulate the temperature and humidity of the incubator chamber. The first experimental result shows that the system will produce tempe for about 5 hours in the incubator chamber temperature of 41 C and 61% Relative Humidity. [ABSTRACT FROM AUTHOR]
