Abstract

Jerusalem artichoke has the characteristics of high yield, strong adaptability and wide application range, and is rich in active substances such as inulin, flavonoids, chlorogenic acid and amino acids. Jerusalem artichoke has the functions of improving the intestinal ecological environment of livestock and poultry, relieving constipation, promoting mineral absorption, regulating blood glucose and blood lipids. Jerusalem artichoke can reduce livestock mortality, improve slaughter rate, meat quality, production performance and immune organ index, and has the potential to be used as a functional feed additive. In this paper, the physicochemical properties, physiological functions and applications of Jerusalem artichoke inulin, chlorogenic acid, flavonoids and amino acids in animal production were reviewed, to provide a reference for promotion and application of Jerusalem artichoke as a functional feed additive in livestock production.
