Abstract

The characterization of plant powder extract during the processing is presented in this research. Under industrial scale spray drier conditions; the effect of drying on the C.caudatus powder extract was studied. The physicochemical attributes to the powder including the flavonoid constituents, particle size, size distribution, colour measurement and its bioactive compounds were discussed. C.caudatus retained significant amount of quercitrin 0.72%w/w and quercetin content (0.36%w/w) respectively. The particles size achieved in this study was 277 µm by volume mean diameter (D4,3) and 203 µm by surface mean diameter (D3,2) respectively. The results indicate that spray drying method is suitable to produce extract with good physical and chemical quality. The result of this study may promote the potential of C.caudatus powder extract as food ingredient and nutraceutical product. [ABSTRACT FROM AUTHOR]
