Abstract

The research was developed at the Amazonian State University, located in the canton and province of Pastaza, and had the objective of: Evaluating the influence of extraction time to obtain polyphenols from Morete (Mauritia flexuosa L.f.) seeds, quantifying total polyphenols, and determine the antioxidant activity of the extracts obtained. Response surface methodology and ultrasound-assisted extraction were used. The UV/vis spectrophotometry method and the Folin Ciocalteu colorimetric reaction were used to quantify the total polyphenols present in the seeds of the species. Additionally, the antioxidant activity was evaluated using the Fe3+ reduction assay (FRAP). The Box-Behnken experimental design allowed evaluating the effect of time on the extraction of this type of metabolite in the selected raw material. It was found that there is a directly proportional relationship between time and the presence of polyphenols in the extracts and that the antioxidant activity increases in the same relationship.
