Abstract

Oxidative stability of high oleic sunflower oil was investigated at four temperatures (6, 25, 50 and 80o C). The order of the reaction was determined as first order. The rate constants were determined at all temperatures and after that the shelf life was predicted using the Arrhenius equation. Classical temperature dependence was found between natural logarithm of constant and reciprocal values of temperature. Activation energy was calculated at 26.379 kJ mol-1. Pre-exponential factor, Q10 factor and z-factor were also determined. The thermodynamic parameters, i.e. activation enthalpy, activation entropy and Gibbs free energy of activation were calculated.
