Abstract

The article deals with the use of damaged cocoa beans in the cosmetics industry. The "Damaged Beans" project by Fraunhofer IVV and its Brazilian partner UNICAMP aims to identify new value creation potentials for damaged cocoa beans. Due to their lower costs and the additional active ingredients of the plant, damaged cocoa beans can be an advantage for cosmetic products. The project focuses on the effects of fermentation, drying, roasting, and pressing on the yield and properties of cocoa butter, proteins, and secondary plant substances. The goal is to develop a more efficient and cost-effective processing chain for damaged cocoa beans. [Extracted from the article]
