Aquatic feed industry is one of the main factors in the development of aquaculture industry, providing strong support to meet the growing demand for aquatic products. As an important raw material in aquatic feed, lipid (especially fish oil) is easily oxidized due to its rich unsaturated fatty acids, and produces various hydroperoxides, secondary oxidation products (including alcohols, ketones, aldehydes, etc.). In addition, the oxidation process also leads to changes the oil chemical characteristics. In feed in‐ dustry and aquaculture, lipid oxidation could impair growth and health of fish. This paper summarizes the research on oil oxidation by scholars at home and abroad, discusses the effect and mechanism of oil oxidation on various kinds of fish and the application effect of common antioxidants, so as to accumulate basic data for further research on the effect of oxidized oil on aquatic animals.
