The dossier brings together original research that explores the paths and trajectories of agricultural and agro-industrial innovation in different rural areas of Latin America, covering a broad historical period and diverse regions of the continent. The role of producers in the generation of knowledge and the innovative adaptation of technologies in the field of animal production in North and South America is analyzed, as well as the circulation of knowledge, technologies, and experts in the American continent and the Atlantic world.
