Abstract

The article begins with a promising method of obtaining liquid extracts using electromagnetic radiation. The main advantages over traditional method of extraction are highlighted. Usage of oak wood in industry is listed briefly. The article also defines the main medical properties of oak wood components, promising usage of liquid oak wood extracts in winemaking industry is provided. The trend in extraction technologies has been determined which consists in the transition to intensive and promising methods, and their main principles are also indicated. The main factors determining the transition to new extraction methods have been identified. The article identifies the main problems of the production of cognacs during aging, which affect the price of the final product. The authors indicated the key components of oak wood, which form a taste and aroma in cognacs and brandy. The scientific and technical contradictions of the extraction and aging processes were formulated, and a hypothesis for their solution was proposed. The experimental stands on which the research was conducted are presented. All parameters at which the experiments were performed are specified. The thermograms of the processes are presented and it is determined that the lowest temperature is observed in the circulating MW extractor. From the analysis of the data on the concentration of dry matter, it was determined that the best indicators belong to the circulating MW extractor, where a water-alcohol solution with a higher concentration of alcohol was used as the extractant. The data on the rate of extraction of dry matter confirm the high efficiency of the circulating extractor. The data analysis also confirms that better effect of mechanodiffusion was detected in the circulating MW extractor.
