Abstract

The extraction of inulin from Jerusalem artichoke was carried out by hydrothermal method. Through designing single factor experiment, three main factors affecting the extraction temperature, time and phosphoric acid concentration were determined. Using response surface method for optimal analysis of the extraction process of inulin, using the Design-Expert software to design three factors and three levels of experiments, obtained the best extraction conditions of inulin; water bath temperature 87 °C, extraction time 82 min,phosphate concentration 0.7 g/L,under this condition,the extraction rate of inulin reached 22.44%. The results are consistent with the predicted values, which proves that the prediction model is effective and can be used to optimize the extraction process of inulin. This study provides theoretical basis and data support for the further development and utilization of Jerusalem artichoke in plateau area. [ABSTRACT FROM AUTHOR]
