Mexico is characterized by having a great variety of drinks and foods, pulque is an elixir of pre-Hispanic origin, whose preparation has been the livelihood of many families. The objective of this document is to analyze the variables that affect the production and commercialization of pulque in the municipality of Tarímbaro Michoacán.
