Chicory acid, an important polyphenolic compound, which is mainly found in ferns. Chicory acid has various biological activities such as antioxidant, anti-inflammatory, and immune enhancement, which also has the potential to intervene in metabolic diseases such as obesity. The paper reviews the structure, physicochemical properties, bioactivity and application of chicory acid in animal production under low oxygen conditions, to provide a reference for further research and development of chicory acid as a new feed additive with antioxidant potential in animal production.
