Abstract

The production of grapes and wines in Rio Grande do Sul is one of the largest in Brazil and, therefore, the requirements related to quality control for both products are paramount to obtain prominence in this market. In this sense, this study aims to describe the production factors that interfere in the quality of the grapes destined to wine production. The method adopted was qualitative in nature, with a descriptive and exploratory design. At the end of the study the factors that interfere in the quality of wine production were identified, highlighting the management, climate, phytosanitary conditions, and the processing adopted. These factors can be controlled through human action together with the addition of technologies that act as facilitators. From the observations and informal interviews, it can be said that all three producers value the quality of their products. Equally, the winery shows extreme care for the production of wines, maintaining constant testing, before the production process, during the production stages, and on the final product, in order to certify the suitability of the product for human consumption. The results presented were satisfactory, presenting the description of the production factors that interfere in the quality of the grapes in the three properties studied. Furthermore, through the study, an understanding of the winemaking processes of a winery was obtained. [ABSTRACT FROM AUTHOR]
