Abstract

The article discusses the impact of COVID-19 on meat and poultry supply chain and the relative wholesale prices of beef cuts in the U.S. Topics include how the changes in the relative value of different cuts within a beef carcass impact the profitability of that carcass for beef packers, distributors, retailers and food service and how consumers face retail prices of different beef items including filet Mignon and the relative spread among those prices may influence their beef buying decisions.
