Abstract

Chitosan is a partly deacetylated acetyl glucosamine polymer produced by alkaline chitin's deacetylation, produced from oysters and eggs of fish, after that distinguished by FTIR and diluted acetic acid solubility (1 percent). The degree of de acetylation was established by FTIR, and compared with the chitosan derived from shrimp (de acetylation DA 75%). The three types of extracted chitosan from oyster, fish shell and shrimp were applied as antioxidants. [ABSTRACT FROM AUTHOR]
