Abstract
- Celiac disease, which requires a diet based on gluten-free bakery products, obliges consumers with the disease to consume gluten-free products (gluten-free bakery products) in their whole lives. This requirement more or less affects the food consumption behavior of families. In this context, our aim is to examine the food consumption behavior of families with individuals with chronic celiac disease. The universe of the study is the individual diagnosed with celiac disease in Turkey. Data were collected by judicial sampling, one of the non-random sampling methods. An online questionnaire was applied to families with patients diagnosed with celiac disease, and data were obtained from 694 people via the questionnaire. As a result of the analyzes, we conclude that there was a change in behavior in the majority of families within the scope of the food types purchased after celiac disease, but there was no change in consumption behavior within the scope of the food consumed. Besides, gluten-free foods have been found to be limited in availability, higher in prices than others, easier to find online, and negatively affect families. [ABSTRACT FROM AUTHOR]
