Abstract

Brazil has a high production of oranges, having the same technological potential of use, especially in the application in juices. The beverage industries are betting on the diversification of their product line, and orange nectar is a beverage option, attractive to consumers because of the high nutrient content. However, nectar differs greatly from other orange drinks, so it is necessary to know its nutritional composition and physical and chemical characteristics. The objective of the study was to analyze an orange-based industrialized nectar, evaluating physical and chemical properties and their nutritional composition. For this purpose, the levels of moisture, acidity, pH, water activity, soluble solids, carbohydrates, starch, proteins, lipids, fixed mineral residue, vitamin C and energy were determined. The results were presented by the mean and standard deviation of three replicates. The results obtained showed that orange nectar presents a good amount of nutrients and vitamins; in addition, its physical and chemical characteristics are similar to other studies, indicating that the present analyzed nectar is in compliance and suitable for consumption.
