Abstract

Water-insoluble dietary fiber(IDF) form prickly ashseed was prepared by using extraction conditions in ultrasonic-two enzymatic synergistic. The effects of pH, enzyme content, enzyme temperature and enzyme processing time were tested. Then, the swellng capacity, wate holding capacity, bound water capacity, fat bindng capacity, emulsifying capacity of the IDF were determined, and absorption of NO2- and sodium cholate was analyzed. The optimum extraction conditions were as followed: pH2, ratio of solid-liquid 1:25(g/mL), pepsin dosage 2%, 37°C, ultrasonic power 100 W.pepsin extraction time of 80 min;and then adjusted to pH5, dosage of glucoamylase 2%, 50°C, ultrasonic power 100 W, and glucoamylase extraction time of 40 min. Under the optimal conditions, the extraction rate of dietary fiber in prickly ashseed was 68.15%. Swelling capacity of the IDF was 3.40 mL/gNwater holding capacity was 2.76 g/g. Bound water capacity was 2.10 rnL/g. The results showed that the IDF was a good adsorption to NO2- and sodium cholate. It could provide new souces for the pro duction of IDF. [ABSTRACT FROM AUTHOR]
