Abstract

None of the food classes is to be neglected, as each presents nutritional specificities, in terms of vitamins, oligo elements, minerals, essential amino-acids, omege-3 and 6 polyunsaturated fatty acids. Milk and milk products occupy a specific place. In terms of a diversified diet, their presence ensure a better health, because the reduction of number of pathologies. Since nay years, milk suffer many attacks, most of them not justified, intuitive or pseudo-scientific. Thus, milk products and milk detractors, are using, globally, two line of arguments. One is using false or abusive scientific and medical data. The other presents arguments not at all based on scientific arguments, possibly qualified as fantasist.
