Abstract

Fusarium mycotoxins, predominately zearalenone, deoxynivalenol, fumonisins and T-2 toxin, are common contaminants of food and feed, mainly cereals and their products. Fusarium mycotoxin contamination of food can cause a number of acute and chronic toxic effects in humans and animals. The level of pollution authority-is on many factors, starting another on the field and it is possible at all stages of food production “from farm to fork”, including storage, and this varies according to geographical area and climatic conditions. To some extent, the presence of small quantities of Fusarium mycotoxins in cereals and related food products is inevitable and it is of great importance for the protection of the public health establishment of guidelines and provisions of the legislation and risk assessment at the level of each country. In order to prevent pollution and negative effects on human and animal health, as well as economic losses in the food and livestock industry, appropriate preventive measures are of high significance. In case of significant pollution, there is a need for application of effective methods in their reduction and decontamination, with systematic control of levels of fusarium mycotoxins and use of modern analytical methods in their detection.
