Abstract: In the present paper it has been studied a horizontal mixer with a revolutionary kneading arm which is not treated in its domain. The purpose of this paper is to determine a mathematical model for the energetic kneading process of the studied mixer and the specific medium kneading resistance Km, for multiple types of flour mixed with different quantities of water.
