Almonds are one of the most produced nuts worldwide and numerous studies have shown that they have nutritional and medicinal characteristics, which gives them the possibility of being applied in various products. However, several by-products are generated during their production, which have characteristics of interest but remain underutilised, namely, the almond skins. This work aimed to study samples of waffles supplemented with almond skins. The waffles were evaluated for their total polyphenol content, antioxidant capacity, total flavonoids, ortho-diphenols, soluble sugars, starch, texture, and colour. They were also sensorially evaluated using a panel of tasters specialised in this type of evaluation and a quantitative descriptive analysis test (QDA) sensory test. The results showed that the waffles with the highest levels of phenolic compounds as well as the highest antioxidant activity (by the ABTS, DPPH, and FRAP methods) were the waffles supplemented with 10% almond skin. The total phenol contents obtained for the prepared extracts varied between 0.127 mg GAE/g and 0.415 mg GAE/g, the flavonoid contents ranged from 0.067 mg CAE/g to 0.339 mg CAE/g and the ortho-diphenol contents varied between 0.163 mg ACE /g and 0.303 mg ACE/g. Regarding the quantification of soluble sugars, the values were presented in percentage of fresh weight, and ranged from 30.148 to 38.054%; regarding the quantification of starch, the percentages varied from 14.488 to 21.982%. Sensorially, we verified that the samples were statistically different in terms of the descriptors "colour", "roasted aroma", and "dissolubility", with a higher score in these descriptors for the waffles with 10% of almond skin. This process of obtaining waffles, which can be industrialised, is interesting from both a nutritional point of view and for the possibility of creating new, differentiated, and innovative products. Waffle is the name of crispy and sweet bakery products that is not unlike biscuits and is made from eggs, sugar and fat and has a crispy texture. Flour with a high amount of protein due to higher water absorption and consequently inadequate elasticity leads to the production of low quality waffles. The protease in the saliva of the insect remained in the flour prepared from the damaged wheat, transferred to the dough and digested gluten, so reducing the protein content of the flour. The aim of this study was investigated the effect of insect wheat flour at levels (0.3% and 0.5%) with microbial protease enzyme at levels (0.03% and 0.05%) on Physicochemical, rheological and sensory properties of waffle. For this purpose, PH, viscosity, density, water activity, moisture content, texture, color index and sensory properties were evaluated. The results showed that the PH, moisture, firmness and elasticity of the waffle produced with insect wheat flour were similar to the sample containing protease enzyme. The highest density was observed in waffles containing 0.5% of insect wheat flour. The results also showed that the use of insect wheat flour and microbial protease enzyme reduced the viscosity of the dough compared to the control sample. The insect wheat flour and protease enzyme increased brightness and b * index. Sensory properties score also showed that the panelist gave the highest score to waffles containing 0.03% of protease enzyme and 0.5% of insect wheat flour. [Objectives] The processing technology of morel and banana waffles was studied with morels and bananas as raw materials-[Methods] Four variable factors of morels, bananas, pure milk and white granulated sugar were investigated with sensory evaluation as the evaluation index. The optimal fermentation conditions were determined on the basis of single-factor tests and an orthogonal test. [Results] The best addition proportions of variable factors for morel and banana waffles were 15 g of banana paste, 40 ml of pure milk, 15 g of white granulated sugar, and 1. 5 g of morel powder, and those of other factors were 20 ml of egg liquid (whole egg), 35 g of low-gluten flour, 10 g of corn starch, 1 g of baking powder and 2 g of butter. Under these conditions, the morel and banana waffles had moderate shape, delicate taste, bright color and special flavor of raw materials. This study developed active packaging films of Polylactic acid incorporated with the plant-based essential oils of Trachyspermum ammi , T. ammi and Vanilla to package waffles, where the antimicrobial property was provided by T. ammi and its odor was masked by vanilla essential oil. Compared to conventional solvent-cast films of smaller sizes requiring a huge amount of solvents, bigger-size PLA-oil films with lower solvent demand were prepared by tape casting technique with 10, 30, and 50 wt% essential oil blends. Films were studied for their morphological, chemical, mechanical, barrier, and antimicrobial properties. The presence and time-bound release of volatile oils from the films was confirmed by infrared spectroscopy, with a continuous decrease of oils from the films till day 30. The plasticizing effect of oils in films was evidenced by decreased tensile strength and crystallinity. In contrast, an increase in elongation at break and water vapor permeability of oil films were also measured. Finally, when packed in PLA films containing 50 wt% blend of both oils, waffles shelf-life extended up to 30 days compared to 2 days for the neat PLA film, where Vanilla was found effective in masking the unpleasant odor of T.ammi as confirmed by sensory analysis. The high-priority tasks of today’s confectionery industry include the development and introduction of functional-purpose confections. These products are supposed to be of high technological qualities, be effective in production to the extent possible, and have physiological functional properties due to the physiologically valuable ingredients in their composition. These ingredients include the synbiotic complex composed of probiotics (bifidobacteria, lactobacilli) and prebiotics (inulin and lactulose). This complex has been studied in this research. The paper gives reasons why waffles with fatty fillings are the ones to which the synbiotic complex should be added. It has been established what mass fraction of the ingredients at what stage of fatty filling production should be added. It has been studied how the synbiotic complex affects the structural and mechanical properties of the fatty filling: its effective viscosity, adhesive strength, and critical shear stress. It has been found that the maximum shear rate that still allows obtaining a high-quality filling is 5.4 s-1. The specific pull-off force of the fatty filling with the synbiotic added becomes lower compared to that of the control sample. This helps reduce the energy consumed in the course of moulding waffles. An innovative manufacturing technology for waffles with synbiotic supplements has been developed and proved practical. It includes the stages of preparing microencapsulated microorganisms and adding prebiotics, and provides the technological parameters of fatty filling preparation. It has been established that the synbiotic included into the composition of the new fatty filling decreases the maturation of waffle blocks by 40–45%, and allows reducing the layer of filling to 1–1.5 mm. It has been proven that the synbiotic complex as an ingredient in the fatty filling of waffles will allow developing and manufacturing confections that improve human microflora. These new specialised products will be socially significant, as they will help solve a topical and important task of the confectionery industry: prevent gastrointestinal diseases.

The problems considered in the paper are the incidence of dysbiosis in the Ukrainian people, the reasons for it, and the methods of improving the diet of those suffering from microfloral disorders. Useful properties and effects of the microorganisms Bifidobacterium and Lactobacillus, and of inulin and lactulose have been studied as well as the ways in which they help to restore a person’s normobiocoenosis. After a research in vitro, with the conditions imitating the human gastrointestinal tract, the survival rate of encapsulated cells of bifidobacteria and lactobacilli in an unfavourable environment has been determined. It has been grounded how necessary microencapsulated forms of microorganisms are in the production of confectionery – firstly, to ‘protect’ them against physiological and technological factors, and secondly, to help them reach the lower regions of the small intestine where their capsules are destroyed and the bacteria are released. The reasons have been given why fatty filling for waffles, as an object to be enriched with useful ingredients, should be preferred when developing healthy and wholesome confectionery. It has been shown how promising probiotics and prebiotics are if used in confectionery technology. The two synbiotic complexes SC 1 and SC 2 have been developed, and such parameters have been determined as the optimum weight fractions of inulin and lactulose in the formulation of the filling, and the number of probiotic microorganisms. It has been established that lactulose can reduce sugar in the formulation of the filling, and using inulin results in replacement of an equivalent amount of fat. To prove how practical it is to add synbiotics to waffles, and to determine the product’s consumer appeal, a tasting assessment of the new types of waffle products has been made. It has been proved that adding synbiotic complexes to the formulations of waffles will result in the consistent high quality of the products, and in their better sensory characteristics. Besides, it can contribute to making the people of Ukraine healthier and fitter for work.

The appearance of food provides certain expectations regarding the harmonization of taste, delicacy, and overall quality, which subsequently affects not only the intake itself but also many other features of the behavior of customers of catering facilities. The main goal of this article is to find out what effect the visual design of food (waffles) prepared from the same ingredients and served in three different ways—a stone plate, street food style, and a white classic plate—has on the consumer’s preferences. In addition to the classic tablet assistance personal interview (TAPI) tools, biometric methods such as eye tracking and face reading were used in order to obtain unconscious feedback. During testing, air quality in the room by means of the Extech device and the influence of the visual design of food on the perception of its smell were checked. At the end of the paper, we point out the importance of using classical feedback collection techniques (TAPI) and their extension in measuring subconscious reactions based on monitoring the eye movements and facial expressions of the respondents, which provides a whole new perspective on the perception of visual design and serving food as well as more effective targeting and use of corporate resources.

Introduction. The research was carried out to determine the impact of different varieties of gluten-free flour on semifinished and finished wafer sheets. Materials and methods. Materials: rice, corn, buckwheat flour, waffle batter and waffle sheets. Sedimentation of the dough was determined by measuring the column of the liquid; bound and free moisture - by the derivatization method, strength - by determining the force required for breaking the wafer sheet. Results and discussion. Rational moisture content of dough with rice flour is 63, buckwheat - 80, corn - 65%. The highest density has a dough with buckwheat flour - 1,113, corn - 1,083, rice - 1,065 g/cm³, the least with wheat - 1,053 g/cm³. This can be explained by different water absorption capacity of flour. Sedimentation is maximal for dough with rice flour - 25.2, corn - 15.1, wheat - 10%. Dough with buckwheat flour is not subject to sedimentation. This is due to the presence of cellulose and pentosans. The dough of buckwheat flour has a maximum viscosity (25.3 Pa·s), minimum - with rice (4.97 Pa·s). Viscosity of the dough with wheat flour-corn 7.97 Pa·s. It is substantiated by different chemical composition and different dispersion of wheat and gluten free types of flour, and is consistent with the content of free and bound moisture - for a test with buckwheat flour 56.04%, with rice - 35.97. The highest strength - wafer sheets with corn and wheat flour (4.9 n and 4.1 respectively). The highest sedimentation - wheat and buckwheat flour (119.4 and 115.4% respectively), it is explained by different nutrient composition of all types of flour. Calculations of the nutritional value showed that wafer sheet with buckwheat flour has bigger amount of proteins than the wafer sheets with rice and corn flour. Energy value of wafer sheets for different types of flour do not have much difference. Conclusions. Gluten-free flour changes physico-chemical parameters of semi-finished and waffle sheets. Background of this study was to understand the factors that contribute to sticking of fresh egg waffles on baking plates. The aim of this study was to investigate the sticking (adhesion) behavior of waffles on 4 different baking plate materials (ductile iron, grey iron, low alloyed steel, and steel with titanium nitrite coating) at different baking parameters (temperature and time) and application of 3 different release agents (different fat compositions). Baking plates from ductile and grey iron showed lower release properties of waffles than the 2 steel baking plates. Baking parameters had to be high enough to allow rapid product crust formation but prevent burning, which again increases sticking behavior. Release agents based on short-chain fatty acids with higher degree of saturation provided better release behavior of waffles than those based on long-chain fatty acids or on emulsifier-acid combinations. Baking plates with increased hardness, good heat storage capacity, and smooth surface seemed to be best suitable. Further research on appropriate coating material might be promising for future. The purpose of this research is to analise the action of protease, an exogenous enzyme used in different dosages on the waffle dough. Proteases hydrolyze the peptide bond which are found in the protein molecules, preferable at the level of positive aminoacids, which explaines their reduced action on the wheat flour proteins where the bazic aminoacids are in low proportion. In dough, this leads to weakening of the gluten chains. To avoid weakening the gluten structure, which result in an uneven texture of the dough structure, protease has to be added to the dough in the mixing phase. In these conditions, it will not reduce mixing time because the enzyme has not enough time to hydrolyze more gluten. The waffle doughs contain small amounts of water and fat, which makes them dense and therefore difficult to laminate layers. The addition of proteolytic enzymes allows adjustment of the rheological characteristics of dough according to the needs of the technological process. The consistograph method used in this study shows the rheological characteristics of the waffle dough presenting the effects caused by protease in: a low dosage, a correct dose and an overdose. The dough sample that has a low dose of protease does not have a significant improvement on the quality of the dough. On the other hand to much protease influences the dough handling during the technological process due to a wet and sticky content of the dough which leads to a low porosity, high humidity and a higher water activity. The study aimed to enrich waffle products with grape seed flour, but without affecting their sensory properties. The grape seed flour was obtained from grape pomace, and as an ingredient rich in bioactive compounds such as fiber, polyphenols and minerals, it was used to fortify waffles in concentrations of 1, 3, 5 and 10%. The results for the total polyphenolic content, ferric ion reducing antioxidant power (FRAP) and 2,2-diphenyl-1-picryl-hydrazyl (DPPH) inhibition, showed the highest effect with 10% grape seed flour fortification, including 1.25 mg of gallic acid equivalent/g, 5.62 µmol Trolox/g and 26.65% DPPH inhibition, respectively. Texture analysis revealed an increase in hardness of the waffles along with the increase of grape seed flour percentage, while there was no evident change in moisture in any of the tested samples. Sensory evaluation showed no significant differences regarding overall impression or the estimated price value for all samples, even though evident changes were noted by the panelists in their color, consistency and sweetness. It may be concluded that fortification was successfully carried out, and that there is a great potential for utilizing grape seed flour as a by-product in the enrichment of products such as waffles.
