The paper analyzes modern methods for studying the staling process of flour confectionery products, namely, X-ray diffraction analysis, X-ray diffraction, and differential scanning colorimetry. Since the crystalline structure of finished flour confectionery products is formed directly by starch, sugar and other carbohydrates, and the processes associated with the moisture content in them affect their storage. To conduct research on staling processes, the X-ray phase analysis method is used on a DRON-UM-1 diffractometer (Russia), and it revealed the degree and types of deformation of the crystal structure of substances. Diffraction maxima of starch are studied at reflection angles in the range of 10–30°. The objects of research are the «Bdzhilka» and «Imbyrni Pikantni» author’s gingerbreads, and the «Pivnichni» gingerbreads are chosen as the base sample for comparison. The gingerbread recipes contain the following raw materials: – «Bdzhilka» – peeled rye flour, fermented rye malt, artificial honey, sunflower oil, skimmed milk powder, apple butter, bee pollen, creeping thyme inflorescence powder; – «Imbyrni Pikantni» – peeled rye flour, rye malt extract, invert syrup, dried cheese whey, ginger root powder, elderberry inflorescence powder. As a result of X-ray phase analysis, the destruction degree of the starch crystal lattice in the pulp structure of the developed gingerbread is studied. The interaction of starch with other carbohydrates and their influence on the formation of the final crystalline structure of finished products and changes in the crystal structure during storage are analyzed. The processes of staling up of fresh gingerbread, after 2 and 4 months of storage, which are affected by the processes of self-association, hydrotreatment of mono- and disaccharides, degradation and retrograde of starch, are studied. The features of the staling process after 2 and 4 months of storage using the analysis of diffraction peak peaks are revealed. The retrogradation process of starch in finished products based on the obtained diffractograms is analyzed and the ability of the used natural additives in gingerbreads to extend their shelf life is proved. The results of these studies can be implemented in the confectionery industry in order to produce products with a long shelf life.

The research topics are the hardening process of flour confectionery during storage, accompanied by a complex of complex physical, chemical, colloidal and biochemical processes associated with starch and proteins. It is revealed that scientists use non-traditional herbal supplements in cupcakes, in particular, medicinal plants, seeds, fruits and leaves of nuts, vegetables, fruits, wild berries. In the work, the objects of research were developed according to the author’s recipes: «Sesame», «Moriachok», «Mitsnyi Gorishok», «Osinnii Aromat», «Chornychnyi», «Medok», «Elitnyi» cupcakes, base samples for comparison – premium flour and "Stoluchnyi" cupcake. In the recipe for these cupcakes, part of the wheat flour is replaced with non-traditional raw materials: –«Sesame» (rye flour, powders of blackberry leaves, blueberry, black currant, chamomile flowers, whey, sesame oil); –«Moriachok» (oatmeal, powders of leaves of frangipani, raspberries, ordinary mother, thallus kelp, oil of pumpkin seeds); –«Mitsnyi Gorishok» (buckwheat flour, peppermint, walnut leaf powder, whey, butter and walnut kernels); –«Osinnii Aromat» (cornmeal, powders of St. John’s wort, perforated, linden blossoms, Echinacea purpurea, skimmed milk powder, candied apple and cherry); –«Osinnii Aromat» (buckwheat flour, chicory root powders, tricolor violet flowers, skimmed milk powder, dried blueberries); –«Medok» (corn flour, powders of linden flowers, heart pollen, flower pollen, skimmed milk powder, pumpkin seed oil, natural honey with pollen); –«Elitnyi» (oatmeal, peppermint leaves, beans, propolis, whey, natural honey with propolis). In the course of the study, the X-ray phase analysis method was used on a DRON-UM-1 diffractometer (Russia), and it revealed the degree and types of deformation of the crystal structure of substances. The range of values is determined at reflection angles in the range of 10–30° – diffraction maxima of starch. The retrograde process based on the obtained diffractograms is analyzed and the ability of the used natural additives in cupcakes to extend their shelf life is confirmed. As a result of baking, the destruction of the crystalline structure of starch in the developed cupcake samples was much more intensive compared with the control sample of the «Stolychnyi» cupcake

Використання нетрадиційної та, у тому числі, дикорослої сировини для введення у ресторанні страви є актуальним, тому що удосконалюється біологічна дія страв на організм людини, покращуються смакові, ароматичні та інші властивості. На сьогодні недостатньо вивченою залишається дія біологічно активних речовин рослинного походження для створення страв. Метою даної роботи є проведення пошуку нетрадиційної сировини із значним вмістом біологічно активних речовин серед рослин Карпатського регіону та розробка технології введення їх у ресторанні страви. У роботі наведено аналіз внесення нетрадиційної сировини у страви та запропоновано інноваційні підходи щодо вдосконалення технології створення страв профілактичного спрямування із додаванням дикорослої сировини Карпатського регіону. Розглянуто властивості нетрадиційної сировини місцевого походження та запропоновано пріоритетні напрямки її використання в розробці страв з оздоровчими властивостями для закладів ресторанного господарства. Проведено додаткове обґрунтування внесення у ресторанні страви нетрадиційної сировини, внесено зміни у технології виготовлення ресторанних страв із застосуванням сучасного ресторанного обладнання. У статті пропонується використання технології виготовлення багатокомпонентної суміші із дикорослої сировини у вигляді пюре для введення у ресторанні страви. Введення рослинних сумішей з метою профілактики хвороб, створення імунітету споживачів, привертання уваги до оновленого асортименту страв, набуття стравами нових оригінальних смаків є актуальною задачею для сучасних рестораторів. Саме тому показано приклад розроблення типових страв із збірника рецептур для оновлення їх асортименту з оздоровчо-профілактичним ефектом. The use of non-traditional and including wild raw materials for introduction into restaurant dishes is relevant because it improves the biological effect of dishes on the human body, improves taste, aroma and other properties. Nowadays the effect of biologically active substances of plant origin for the creation of dishes remains insufficiently studied. The purpose of this work is to search for non-traditional raw materials with a significant content of biologically active substances among the plants of the Carpathian region and to develop the technology of their introduction into restaurant dishes. The paper presents an analysis of the introduction of non-traditional raw materials into dishes and proposes innovative approaches to improve the technology of creating preventive dishes with the addition of wild raw materials of the Carpathian region. The properties of non-traditional raw materials of local origin are considered and the priority directions of its use in the development of dishes with health-improving properties for restaurants are proposed. Additional substantiation of introduction of non-traditional raw materials into restaurant dishes is carried out; changes in technology of production of restaurant dishes with use of the modern restaurant equipment are offered. The article proposes the use of technology for making a multi-component mixture of wild raw materials in the form of puree for introduction into restaurant dishes. The introduction of plant mixtures to prevent disease, create consumer immunity, draw attention to the updated range of dishes, the acquisition of new original flavors of dishes is an urgent task for modern restaurateurs. That is why an example of developing typical dishes from the collection of recipes for updating their range with health and preventive effect is shown.

This work presents the results of many years of research on the production of bitumen-polymer materials based on gossypol resin, intended for waterproofing various building structures, isolating underground steel pipelines in order to protect them from aggressive environments, as well as for roofing and asphalt concrete coatings.

Поскольку кристаллическую структуру готовых мучных кондитерских изделий формируют непосредственно крахмал, сахар и другие углеводы, а процессы, связанные с содержанием в них влаги, влияют на их хранение. Для проведения исследования процессов черствения использован метод ренгенофазного анализа на дифрактометре ДРОН-УМ-1 (Россия), выявляющий степень и типы деформации кристаллической структуры веществ. Дифракционные максимумы крахмала исследовано при значениях углов отражения в пределах 10–30°. Объектами исследования были авторские пряники «Пчелка» и «Имбирные пикантные», а за базовый образец к сравнению избраны пряники «Северные».В рецептуру предложенных пряников вносили следующее сырье:– «Пчелка» – мука ржаная обдирная, солод ржаной ферментированный, мед искусственный, масло подсолнечное, молоко сухое обезжиренное, повидло яблочное, пчелиная пыльца, порошок соцветий тимьяна ползучего;– «Имбирные пикантные» – мука ржаная обдирная, ржаной солодовый экстракт, инвертный сироп, сухая подсырная сыворотка, порошок корня имбиря, порошок соцветий бузины.В результате проведения рентгенофазового анализа исследована степень разрушения кристаллической решетки крахмала в структуре мякоти разработанных пряников. Проанализировано взаимодействие крахмала с другими углеводами и их влияние на формирование окончательной кристаллической структуры готовых изделий и изменение кристаллической структуры в течение хранения. Изучены процессы черствения пряников свежих, после 2 и 4 месяцев хранения, на которые влияют процессы самоассоциации, гидратообразование моно- и дисахаридов, деградации и ретроградации крахмала.Выявлены особенности процесса черствения после 2 и 4 месяцев хранения с помощью анализа пиков дифрактограмм. Проанализирован процесс ретроградации крахмала в готовых изделиях на основе полученных дифрактограмм и доказана способность использованных натуральных добавок в пряниках продлевать срок их хранения. Результаты данных исследований можно внедрять в кондитерской промышленности с целью производства продукции с длительным сроком хранения., В роботі проведено аналіз сучасних методів дослідження процесу черствіння борошняних кондитерських виробів, а саме ренгенофазного аналізу, дифракції рентгенівських променів, диференціальної скануючої колориметрії. Оскільки кристалічну структуру готових борошняних кондитерських виробів формують безпосередньо крохмаль, цукор та інші вуглеводи, а процеси, пов’язані з утриманням в них вологи, впливають на їх зберігання. Для проведення дослідження процесів черствіння використано метод ренгенофазного аналізу на дифрактометрі ДРОН-УМ-1 (Росія), що виявляє ступінь та типи деформації кристалічної структури речовин. Дифракційні максимуми крохмалю досліджено при значеннях кутів відбиття в межах 10–30°. Об’єктами дослідження були авторські пряники «Бджілка» та «Імбирні пікантні», а за базовий зразок до порівняння обрано пряники «Північні». До рецептури запропонованих пряників вносили наступну сировину:– «Бджілка» – борошно житнє обдирне, солод житній ферментований, мед штучний, олія соняшникова, молоко сухе знежирене, повидло яблучне, пилок бджолиний, порошок суцвіть тим’яну повзкого;– «Імбирні пікантні» – борошно житнє обдирне, житній солодовий екстракт, інвертний сироп, суха підсирна сироватка, порошок кореня імбиру, порошок суцвіть бузини.В результаті проведення ренгенофазного аналізу досліджено ступінь руйнування кристалічної решітки крохмалю в структурі м’якуша розроблених пряників. Проаналізовано взаємодію крохмалю з іншими вуглеводами та їх вплив на формування остаточної кристалічної структури готових виробів та зміни кристалічної структури впродовж зберігання. Вивчено процеси черствіння пряників свіжих, після 2 і 4 місяців зберігання, на які впливають процеси самоасоціації, гідроутворення моно- та дицукридів, деградації та ретроградації крохмалю. Виявлено особливості процесу черствіння після 2 і 4 місяців зберігання за допомогою аналізу піків дифрактограм. Проаналізовано процес ретроградації крохмалю у готових виробах на основі отриманих дифрактограм та доведено здатність використаних натуральних добавок у пряниках подовжувати термін їх зберігання. Результати даних досліджень можна впроваджувати у кондитерській промисловості з метою виробництва продукції з подовженим терміном зберігання.

The aim of research is studying the effect of unconventional raw materials (buckwheat, oatmeal, rye, corn, milk whey, skimmed milk powder, propolis, flower pollen, bean powder, sesame oil, pumpkin seed oil, walnut oil, walnut kernels, candied fruit mixes (apple-cherry fruits of bilberries, natural honey with floral pollen, natural honey with propolis) for the quality and safety of new muffins. The article analyzes the results of the study of the quality and safety indicators of muffins of improved composition, manufactured using non-traditional raw materials. For the preparation of new types of muffins, part of the wheat flour was replaced with buckwheat, corn, oat, milk whey, skimmed milk powder and additives of vegetable origin. Margarine has been replaced by vegetable oils. It has been established that flour confectionery products have high organoleptic properties. From the physico-chemical parameters, the mass fraction of total sugar was determined, which ranged from 28.17 % to 33.07 %, the mass fraction of fat – 16.2–20.66 %, the mass fraction of moisture – 18.0–22.0, mass fraction of ash – 0.03–1.3 %, alkalinity – 0.03–1.8°, the content of toxic elements (copper, zinc, lead, cadmium, arsenic, mercury) and microbiological indicators were also determined. Based on the data obtained as a research result, the expediency of using non-traditional raw materials to expand the range of flour confectionery products, in particular muffins is substantiated.

Проведено исследование и обоснование целесообразности разработки мучных изделий из дрожжевого теста с использованием гречневой муки. Проведен анализ сырья для производства мучных изделий, усовершенствована технология булочек, путем добавления гречневой муки. Произведен технологический расчет мучного цеха, а также подобрано оборудование с необходимыми параметрами. Разработана оптимальная организационная структура и система безопасности деятельности предприятия. В настоящее время предприятия безалкогольной отрасли все чаще используют различные растения и плоды, обладающие естественными целебными свойствами, содержащие полезные для здоровья человека биологически активные вещества и поливитаминные комплексы. Рынок безалкогольных напитков все больше расширяется за счет разработки нового вида продукции функциональных напитков. Особенностью функциональных напитков является их высокая пищевая и вкусовая ценность, благодаря содержанию в них легко усвояемых углеводов, минеральных соединений, органических кислот и биологически активных веществ. В основу наших исследований положена традиционная технология, используемая на предприятиях республики для производства функциональных напитков «Шиповник» и «Боярышник» и один из наиболее перспективных способов интенсификации экстрагирования помощью УЗ воздействия. В ходе эксперимента были изучены схемы экстракции из сухого плодовоягодного сырья и дана оценка возможности их использования в качестве ресурсосберегающей технологии при производстве напитков из сушеных плодов шиповника и боярышника. Методы исследования: определение БАВ осуществляли методом капиллярного электрофореза с использованием системы Капель 105 «М», содержание экстрактивных веществ определяли с помощью рефрактометра марки ИРФ-454Б2М, для определения pH использовали ионометр марки «Эксперт-001». Определение микробиологических показателей исследуемых образцов проводилось по ГОСТ Р 50474-93 и ГОСТ 10444.12-88. Полученные данные соответствовали показателям нормы по количественному и качественному составу микрофлоры для экстрактов. Была проведена и дегустационная оценка экстрактов. Экспериментальные данные показали целесообразность проведения УЗэкстракции позволяющей максимально извлекать биологически активные вещества для функциональных напитков из нетрадиционного растительного сырья РА, а также повысить микробиологическую стойкость готовой продукции тем самым продлевая срок реализации функционального напитка., At present non-alcoholic industry enterprises are increasingly using various plants and fruits with natural healing properties, containing biologically active substances and multivitamin complexes that are useful for human health. The market of soft drinks is expanding due to the development of a new type of product-functional drinks. Functional drinks are characterized by high nutritional and taste value due to the content of easily digestible carbohydrates, mineral compounds, organic acids and biologically active substances. The research is based on the traditional technology used at the enterprises of the Republic for the production of “Shipovnik” and “Boyaryshnik” functional drinks and one of the most promising ways to intensify extraction using ultrasonic treatment. During the experiment extraction schemes from dry fruit raw materials have been studied and the possibility of their use as resource-saving technologies in the production of drinks from dried rosehips and hawthorn have been evaluated. The research methods used: determination of biologically active substances using capillary electrophoresis using Capel 105 “M” system, determination of the content of extractives using an IRF-454B2M refrac tome ter, and an Expert-001 ionometer has been used to determine the pH. Microbiological parameters of the studied samples have been determined according to GOSTR 50474-93 and GOST 10444.12-88. The data obtained correspond to norm indicators on the quantitative and qualitative composition of microflora for extracts. A tasting evaluation of the extracts has been carried out. The experimental data have shown the feasibility of ultrasonic extraction which allows the maximum extraction of biologically active substances for functional drinks from non-traditional vegetable raw materials of the RA, as well as to increase microbiological stability of a finished product, thereby extending the implementation period of the functional drink.
