Calcium tartrate instability in wines has been a neglected topic for many years. However, it seems that this problem is gaining prominence, and the industry welcomes inputs to address this issue. Among the alternatives that winemakers use for tartrate salt stabilization, the addition of authorized protective colloids is one of the best choices because they are easy to apply and have a low energetic cost. In the present study, the same red wine was treated with five different commercially available protective colloids in triplicate. The effectiveness of such colloids on calcium tartrate potential instability was estimated, in addition to their side effects on the phenolic composition of the treated wines and their astringency perception, as assessed by sensory analyses of the treated wine. The results show that, under these trial conditions, carboxymethylcellulose is the best choice for reducing the risk of calcium tartrate precipitation in wine. Moreover, the application of protective colloids to the wines had little effect on their color, phenolic composition, or evolution during one year of bottle storage. Finally, the addition of protective colloids did not impact the astringency intensity, but it influenced the dynamic perception of astringency according to the temporal dominance of sensation analysis. The instability of calcium tartrate (CaT) in wines occurs when the effective concentration of ions surpasses the solubility product, leading to the formation of CaT crystals. Unlike potassium hydrogen tartrate (KHT), temperature has little effect on the rate of CaT precipitation, making cold stabilization ineffective. Additives like metatartaric acid and carboxymethylcellulose (CMC) have been used to mitigate this problem, but metatartaric acid's effectiveness is limited due to hydrolysis. Additionally, potassium polyaspartate (KPA), commonly used as a KHT stabilizer, has been reported to reduce wine stability regarding CaT instability. Therefore, exploring alternative stabilization methods is crucial. Alginic acid, permitted as a processing aid in winemaking, can be an alternative to CMC and metatartaric acid due to its strong negative charge and ability to bind calcium ions. This study aimed to assess alginic acid's efficacy as a CaT stabilizer compared to CMC and investigate the impact of KPA on CaT instability. The results showed that KPA did not increase CaT instability and even improved its stability in some wines. Alginic acid outperformed both CMC and KPA in mitigating CaT instability, possibly due to its higher zeta potential and calcium ion complexation ability. Aim: The stabilising efficacy against tartaric precipitations of polyaspartates-based products (PAs), in particular potassium polyaspartate (KPA), was tested with six different wines (three white and three red). Some side effects on wine characteristics (white wine colour stability, wine turbidity and filterability) were also studied. Results and conclusions: All PAs showed good stabilising efficacy against tartaric precipitations according to the cold test. With the same test, the PAs were stable in wine for 1 year of storage, which was the total duration of the study. The dose of 100 mg/L was sufficient to stabilise the tested wines. No differences in filterability were observed in comparison with MTA (metatartaric acid). The hypothesised protective effect against colour browning in white wines was not observed. Significance and impact of the study: The international wine trade requires stable wines. This paper provides information to support wineries in managing the use of KPA, as little information is available to date in the literature on this stabilising additive.

The tartaric stabilization of wines before bottling to avoid the precipitation of tartaric acid salts is an important and common step during wine production. The presence of precipitated salt crystals in bottled wines is detrimental to their quality and can even be a legal issue in some countries. Different methodologies are used in wineries to substitute the classical low-temperature stabilization process, which is an effective but costly process. This study comprises two years of experiments with red wines at an industrial scale. In the first year of the experiment, two subtractive methods (ionic exchange resins and electrodialysis) were tested, whereas two additive methods (potassium polyaspartate and carboxymethyl cellulose, both of them containing gum Arabic) were tested the second year. The tartaric stability of the wines, together with the oenological, chromatic and sensory characteristics, were followed during one year in the bottle. The results indicate that carboxymethyl cellulose and potassium polyaspartate (both combined with gum Arabic) were best at maintaining the sensory and chromatic characteristics during storage, with potassium polyaspartate providing a good tartaric stability to the treated wine and this wine being, in general, preferred in a sensory analysis test.

Abstract Potassium polyaspartate (A‐5D K/SD) is proposed for use as a stabiliser in wine, with a maximum use level of 300 mg/L and typical levels in the range of 100–200 mg/L. The data provided in support of the current application were in accordance with the Tier 1 requirement of the Guidance for submission for food additive evaluations issued by the ANS Panel in 2012. In the in vitro tests provided by the applicant, potassium polyaspartate (A‐5D K/SD) showed minimal proteolytic digestion and no absorption of the intact compound. Potassium polyaspartate (A‐5D K/SD) tested negative in a bacterial reverse mutation assay performed in accordance with OECD TG 471 and in an in vitro mammalian cell micronucleus test performed in accordance with OECD TG 487. From a 90‐day oral toxicity study in rats performed in accordance with OECD TG 408, a no observed adverse effect level (NOAEL) was set at 1,000 mg/kg bw per day, the highest dose tested. The Panel considered these data as fulfilling the requirements for the evaluation of the new food additive and did not request additional testing for chronic toxicity and carcinogenicity, nor for reprotoxicity and developmental toxicity. Exposure estimates to potassium polyaspartate (A‐5D K/SD) from its proposed use were calculated for both typical and maximum use levels. In the worst case scenario of high‐level intakes of potassium polyaspartate (A‐5D K/SD) when used at the maximum proposed use level of 300 mg/L, the maximum estimated intake would be 1.8 mg/kg bw per day in the elderly and 1.4 mg/kg bw per day in adults, resulting in a margin of safety of approximately 550. The Panel concluded that there was no safety concern from the proposed use and use levels of potassium polyaspartate (A‐5D K/SD).

The tartaric instability of wines continues to be a source of concern to winemakers. Potassium Polyaspartate is a biopolymer whose authorization to use has been published in Regulation (EU) 2017/1399. The present work studied the efficacy of the potassium polyaspartate on the tartaric stability and the synergistic effect of the potassium polyaspartate with one or more oenological compounds. Therefore, the products tested were potassium polyaspartate, an oenological product consisting of potassium polyaspartate, carboxymethylcellulose and gum arabic, and an oenological product consisting of potassium polyaspartate and mannoprotein (this product is not marketed in Portugal yet). The tests were performed at a laboratory scale, using a white wine from the region of Vinhos Verdes, very unstable, and the tartaric stability was evaluated 24h and 2 months after the treatment. All the oenological products tested showed good results for the tartaric stabilization of the wine, the physical-chemical constitution did not suffer alterations, nor were the sensorial characteristics influenced. The synergistic effect of two or more compounds may be a very interesting enological solution for tartaric stabilization. Additive techniques involve lower energy costs, lower water consumption than cold stabilization, and contribute to environmental sustainability. [ABSTRACT FROM AUTHOR]
