3. Food waste reduction and its environmental consequences: a quasi-experimental study in a campus canteen

Abstract Background Food waste is the third-largest contributor to greenhouse gas emissions, which has severe environmental and economic effects. This study presents a two-level intervention to estimate the quantity and environmental consequences of food waste at a campus canteen, offering innovative solutions to reduce food waste and its environmental footprint. Methodology This study involved 300 students and consisted of three main stages: initial food waste assessment, environmental and economic impact evaluation, and qualitative exploration of the causes of food waste through interviews with students. The assessment included direct measures and weighing of leftover food, and the environmental and economic impact was calculated. A two-level intervention was implemented for students and staff, and a re-assessment of food waste was conducted to evaluate the intervention’s impact. Statistical analysis was performed using SPSS. Results The study monitored 26 meals, finding that the total amount of food waste in the university canteens was (mean = 60.65 g/person), and the intervention reduced food waste by 16.35% per meal (50.73 g/person). Moreover, after the intervention, the amount of food waste costs and total water waste were reduced by 30.14% and 16.66%, respectively. Grey water was reduced significantly by 12.5% (p = 0.033). Interviews with students identified low-quality meals, unpleasant taste, large portions, and a limited menu as the main causes of food waste. Conclusions It is possible to tackle food waste effectively with educational intervention, decreasing portion size, and improving the quality and variety of food.

4. Dietary Intake, Body Composition, and Nutritional Knowledge of Elite Handball Players.

- Abstract
Nutrition affects both body composition and, consequently, athletic performance. Only a few studies have assessed the nutritional behavior and knowledge of elite players. The present study aimed to assess the dietary intake, body composition, and nutritional knowledge of elite handball players. Thirty-nine handball players (age: 23.2 ± 2.7 years, weight: 88.2 ± 10.1 kg, height: 1.87 ± 0.07 m, and years of training: 13 ± 2) participated in the study. The athletes completed a set of anthropometric measurements, a 24 h food recall, and a translated edition of Abridged Nutrition for Sport Knowledge Questionnaire (A-NSKQ). The average body fat percentage was 16.7 ± 3.8%, while the average fat free mass was 73.9 ± 8.5 kg. The athletes' average daily energy intake was 2606.6 ± 756 kcal, while the average daily intake for carbohydrates, proteins, and fats was 243.85 ± 107.79 g [2.8 ± 1.3 g/kg BW/d—37.2 ± 10.5% of Total Energy Intake (TEI)], 131.59 ± 53.28 g (1.51 ± 0.7 g/kg BW/d—20.3 ± 6.9% of TEI), and 117.65 ± 40.52 g (40.9 ± 9.9% of TEI), respectively. For iron, calcium, and vitamin D, the average daily intakes were 19.33 ± 10.22 mg, 1287.7 ± 676.42 mg, and 3.22 ± 3.57 mcg respectively. The average success rate on the A-NSKQ was only 38.5 ± 10.7% out of 100. Elite handball players exhibit inadequate dietary intake and sports nutrition knowledge. 7. Factors affecting the nutritional behaviour of healthy pregnant women having out of standard weight gain pattern referring to urban and rural health centers in Sanandaj

Background and Aim: Adequate and optimal nutrition during pregnancy is important for both pregnant women and their fetuses. The current study was conducted to identify the factors that influence the nutritional behavior of the pregnant women with an inappropriate pattern of weight gain during pregnancy. Materials and Methods: This descriptive-analytical study included 423 pregnant women seeking prenatal care in urban and rural comprehensive health service centers in Sanandaj. These women had prenatal care records and exhibited weight gain patterns that deviated from the standard scale during pregnancy.Sampling was performed randomly. Data were collected using questionnaires to investigate the nutritional behavior of the pregnant women and health literacy. Using SPSS version 16 software, data were analyzed by descriptive and inferential statistical tests. Results: The results revealed that among the pregnant mothers examined, 233 (56.7%) consumed three to four portions of fruits daily, while 106 (25.8%) consumed four to five portions of vegetables. 160 women (38.9%) consumed three portions of meat and legumes, 204 (49.6%) consumed seven to eleven portions of bread and grain group, and 135 (32.8%) consumed three to four portions of milk and dairy products. There was a significant relationship between the nutrition pattern of the pregnant mothers and mother's education (p=0.012), husband's education (p=0.045) and health literacy (p=0.0001). Conclusion: The results of this study showed that less than 50% of the women had optimal food consumption in regard to the four main food groups, namely vegetables, meat and beans, bread and cereals, and milk and dairy products, and 56.7% of the women had optimal fruit intake which is indicatve of a relatively unfavorable condition.

9. The Impact of Education Level on Individual Lifestyle Behaviors among Dietetics Students and Professionals.

Lifestyle and habits are acquired in the family environment and then shaped by the potential influence of the environment and received education. In recent years, there has been growing interest in understanding the relationship between sleep and dietary behaviors in various health professionals, including medical and dietetics professionals and students, as well as their self-perceived knowledge and attitudes. Despite the importance of this topic, there is a lack of research on the assessment of individual behaviors in dietetics students and professionals. The aim of this study was to assess the impact of education level on individual behaviors regarding nutrition, sleep, and physical activity in dietetics students and professionals. 71 dietetics students and professionals were enrolled in this study. Their overall knowledge, sleep, and nutritional behavior were assessed with a validated Questionnaire of Eating Behaviors at the beginning of their dietetics university education and then prospectively after a year. It was also compared to dieticians who already graduated. The analysis showed that the educational level did not correlate with sleep length or the physical activity level. However, the educational level was correlated with dietary knowledge and properly self-assessed by the participants. Significant differences were observed in both the prospective and comparative analyses. The educational level and knowledge were not correlated with eating behaviors. The self-assessment of nutritional behaviors also did not correlate with the objective assessment. Sleep length did not correlate with BMI, but it was inversely correlated with overall and healthy diet scores and knowledge levels. On the other hand, physical activity levels were positively correlated with healthy diet scores. Dietary education results in better nutritional knowledge; however, it does not significantly impact individual nutritional behaviors among dietetics students and professionals. Moreover, the inverse relationship between sleep length and nutritional knowledge and behaviors, as well as the positive relationship between physical activity level and dietary behaviors, shows that nutritional aspects of lifestyle are probably prioritized among dietetic students and professionals, with an acknowledgment of the role of physical activity and a neglect of sleep hygiene importance. Dietetics students should be advised to use their theoretical knowledge not only to guide their patients but also to implement it in their own lives. [ABSTRACT FROM AUTHOR]

10. Turkish version of a short nutrition literacy scale for young adults: cultural adaptation and validation

BackgroundRecent changes in nutrition trends may lead to health issues. In particular, the unhealthy eating habits of young adults suggest that future generations may be at risk. Therefore, the importance and necessity of nutrition literacy is becoming increasingly apparent.PurposeThe purpose of this study was to create a Turkish version of a short nutrition literacy (S-NutLit-Tr) scale for young adults developed by Vrinten et al (2023).MethodsThis research involved 115 young adults from Istanbul Gelişim University, who were selected through convenience sampling, a non-probability sampling method. After the original S-NutLit scale was translated into Turkish, the validity and reliability of the determined factor structure were tested on 115 young adults. Internal consistency was examined with the Cronbach Alpha coefficient. Confirmatory factor analysis was employed to validate the two sub-scale structures. Finally, measurement invariance was tested concerning participants’ gender, aiming to ascertain whether the scale captured equivalent characteristics across different groups.ResultsAs a result of the reliability analysis conducted with the scale of S-NutLit-Tr, the Cronbach Alpha coefficient was obtained as 0.86 for the scale of S-NutLit-Tr. Additionally, it was found to be 0.84 and 0.77 for the “information skills” and “expert skills” sub-scales, respectively. Accordingly, the scale of S-NutLit-Tr was found to be reliable. To examine the two sub-scale factor structures of the S-NutLit-Tr scale, fit indices were examined: χ2/df (1.246), GFI (0.923), IFI (0.975), TLI (0.967), CFI (0.974), RMSEA (0.046), and SRMR (0.055) and it was observed that the indices were within acceptable limits. In the analysis results obtained through the multi-group confirmatory factor analysis for measurement invariance, it was observed that the ∆CFI and ∆TLI values across all indices were less than or equal to 0.01. Consequently, it was observed that the item-factor structure, factor loadings, variances, covariances, and error variances of the scale were equivalent for both male and female young adults.ConclusionThe study found that the scale of S-NutLit-Tr for young adults was a valid and reliable measurement tool in Turkish culture.

The ketogenic diet (KD) has been established as a treatment for epilepsy, but more recently it has been explored as an alternative or add-on therapy for many other diseases ranging from weight loss to neurological disorders. Animal models are widely used in studies investigating the therapeutic effects of the KD as well as underlying mechanisms. Especially in the context of neurological, psychiatric, and neurodevelopmental disorders essential endpoints are assessed by behavioral and motor tests. Here we summarized research evaluating the influence of the KD on cognition, depressive and anxiety-related behaviors, and social and nutritional behaviors of laboratory rodents. Each section contains a brief description of commonly used behavioral tests highlighting their limitations. Ninety original research articles, written in English, performed on mice or rats, providing measurement of blood beta-hydroxybutyrate (BHB) levels and behavioral evaluation were selected for the review. The majority of research performed in various disease models shows that the KD positively impacts cognition. Almost an equal number of studies report a reduction or no effect of the KD on depressive-related behaviors. For anxiety-related behaviors, the majority of studies show no effect. Despite the increasing use of the KD in weight loss and its appetite-reducing properties the behavioral evaluation of appetite regulation has not been addressed in preclinical studies. This review provides an overview of the behavioral effects of nutritional ketosis addressed to a broad audience of scientists interested in the KD field but not necessarily specializing in behavioral tests.

15. Impact of a Food Rebalancing Program Associated with Plant-Derived Food Supplements on the Biometric, Behavioral, and Biological Parameters of Obese Subjects.

Between 2021 and 2023, the Scientific Council of Dietplus
® , a group specialized in overweight and obesity management, conducted a clinical study on 170 volunteer subjects with a BMI > 29 Kg/m2 consecutively recruited. The Dietplus® program comprises nutritional education, intensive, personalized coaching, and consuming food supplements rich in plant derivatives. The aim of this study was to assess the effect of the Dietplus® program on biometric, behavioral, and biological parameters. A control group of 30 obese patients was followed for a similar 12-week period. Mean weight loss reached 9 ± 2.1 kg in the Dietplus® test group versus a 1 ± 0.1 kg weight gain in the control group. Excess weight loss reached 33 ± 13%, and fat mass loss was 7.6% (p < 0.001); waist circumference was reduced by 30%. Quality of Life, Nutriscore, and Prochaska di Clemente scale significantly improved (p < 0.001). Biological parameters showed substantial improvements in the carbohydrate profile and insulin resistance (HOMA index) and in the lipid profile with lower plasma triglyceride (p < 0.01) and VLDL (p < 0.01) concentrations. Inflammatory parameters (orosomucoid, ultrasensitive C-reactive protein, and PINI indices) were also substantially reduced. Challenges for the food/non-food applications of starch mostly arise from its low stability against severe processing conditions (i.e. elevated temperatures, pH variations, intense shear forces), inordinate retrogradability, as well as restricted applicability. These drawbacks have been addressed through the modification of starch. The escalating awareness of individuals toward the presumptive side effects of chemical modification approaches has engrossed the attention of scientists to the development of physical modification procedures. In this regard, starch treatment via ionizing (i.e. gamma, electron beam, and X-rays) and non-ionizing (microwave, radiofrequency, infrared, ultraviolet) radiations has been introduced as a potent physical strategy offering new outstanding attributes to the modified product. Ionizing radiations, through dose-dependent pathways, are able to provoke depolymerization or cross-linking/grafting reactions to the starch medium. While non-ionizing radiations could modify the starch attributes by changing the morphology/architecture of granules and inducing reorientation/rearrangement in the molecular order of starch amorphous/crystalline fractions.

Methods: This experimental study was conducted on 120 primary school students aged 10-12 years in Sabzevar, Iran, in 2019. The participants were selected through multi-stage random sampling and divided into experimental (EG, n=60) and control (CG, n=60) groups. The data collection tool was a researcher-made questionnaire consisting of three sections (demographic characteristics, nutritional knowledge section, and nutritional behavior section). The validity and reliability of the questionnaire were checked and confirmed. The educational program, including educational poems, a "road to health" game, and problem-solving skills, was designed. The EG received a self-directed educational program. Both groups completed the questionnaires before and one month after the intervention. Results: After the intervention, the mean scores of nutritional knowledge and nutritional behaviors significantly improved in the EG compared to the CG (P < 0.05). Moreover, after the intervention, the mean score of nutritional behavior in the EG significantly improved compared to before the intervention (P < 0.05). The highest percentage in mean scores in the food pyramid groups was related to the consumption of vegetables (27%), consumption of milk and dairy products (26%), non-consumption of low-value snacks (13%), and non-consumption of sugar and candy (11%), respectively. Conclusion: The educational program based on poetry, game, and problem-solving skills can be practical, attractive, and cost-effective for promoting nutritional knowledge and behavior in adolescents.

(1) Background: A major challenge for post-discharged gastric cancer patients following gastrectomy is the impact of the anatomy change on decreased oral intake, nutritional status, and, ultimately, quality of life. The purpose of this study is to examine the feasibility and preliminary effects of an individualized mHealth nutrition (iNutrition) intervention in post-discharged gastric cancer patients following gastrectomy. (2) Methods: A mixed-method feasibility study with a parallel randomized controlled design was conducted. Patients were randomly assigned to either the iNutrition intervention group (n = 12) or the control group (n = 12). Participants completed measures at baseline (T0), four (T1), and twelve weeks (T2) post-randomization. (3) Results: Recruitment (33%) and retention (87.5%) rates along with high adherence and acceptability supported the feasibility of the iNutrition intervention for post-discharged gastric cancer patients following gastrectomy, echoed by the qualitative findings. The iNutrition intervention significantly improved participants' nutritional behavior (p = 0.005), energy intake (p = 0.038), compliance with energy requirements (p = 0.006), and compliance with protein requirements (p = 0.008). (4) Conclusions: The iNutrition intervention is feasible and potentially benefits post-discharged gastric cancer patients following gastrectomy. 23. Dietary patterns, social determinants, and emotions during COVID‐19 confinement in Panama: An online survey.

Aim: We aimed to evaluate health and nutrition behaviors among the Panamanian population during the confinement period corresponding to the first wave of the COVID‐19 pandemic. Methods: We conducted a cross‐sectional study using an online survey for data collection with a total of 2475 participants over the age of 18 using an online survey. We also completed 64 face‐to‐face interviews. After data validation, 1561 surveys were included in the study. Most respondents were women (74.2%) between 18 and 49 years old. Among the respondents, 83.3% had a university education level, and 49.9% reported a monthly family income of fewer than 1000 USD. In addition, more than 50% self‐reported as overweight or obese. Results: We identified three dietary patterns: a healthy, a non‐healthy, and a mixed dietary pattern. The respondents with healthy and nonhealthy dietary patterns reported better socioeconomic conditions than participants from the mixed dietary pattern. Individuals with mixed dietary patterns had lower incomes, less education, and higher unemployment rates. Regarding emotions, we found that women experienced more negative emotions, such as fear, worry, and anxiety, during the lockdown period. Conclusions: Taken together, these results indicate that the mobility restriction measures imposed during the COVID‐19 pandemic could have affected dietary patterns by exacerbating existing inequalities. Directing resources toward promoting healthy nutrition strategies with the most significant positive impacts on public health is a priority, especially in critical situations such as the COVID‐19 pandemic. Introduction: Polycystic ovary syndrome is the most common endocrine disorder in women of childbearing age. Prevalence of this syndrome in adolescent girls has increased in recent years and unhealthy nutritional behaviors play an important role in the progression and complications of this syndrome. The present study was conducted aimed to explore individual components of nutritional behaviors in adolescent girls with this syndrome. Methods: This qualitative study was conducted with a content analysis approach in 2016-2017. Thirty-nine participants were selected through purposeful sampling method in gynecological clinics as well as offices of gynecologists and midwives in Shiraz. Data were gathered using individual in-depth interviews, focus group discussions and field notes. Data were analyzed using conventional qualitative content analysis. Results: In this study, 22 sub-categories and 8 main categories were obtained including: “having self-efficacy”, “impact of changes resulting from puberty and adolescence”, “prioritize academic success and promotion”, “experiences related to diet”, “awareness and attitude about the disease and related nutritional behaviors”, “have the knowledge to adopt healthy nutritional behaviors”, “emotional cravings for food”, and “amount of time available”. Conclusion: Different individual components affect the nutritional behaviors of adolescent girls with polycystic ovary syndrome. By identifying these components, policy makers and planners in the field of adolescent health can design various interventions in order to adopt healthy nutritional behaviors in these girls.

Purpose: The present study examines nutritional behavior as a risky health factor for adolescents from different ethnic groups in the Municipality of Plovdiv, Bulgaria. Material and methods: This cross-sectional study was carried out with three different ethnic groups (Bulgarian, Turks, and Roma) in Plovdiv Region in Bulgaria. The study was conducted with a total of 185 middle or high school students. For the purposes of the study original semi-structured questionnaire was developed. Statistical analyses were performed using SPSS Statistics v. 26 software (IBM Corp. Released 2019. Armonk, USA). Results: The daily consumption of meat and fish is highest among boys of Bulgarian origin 10 (19.23%). In the consumption of meat and fish 2-3 times a week, the leading place is occupied by the children of Roma origin. The results of the weekly consumption of milk and dairy products show that 74 (40%) of all respondents consume them every day. Approximately 1/4 of all respondents always add salt to food, and the same share are those who never do that. Conclusion: The results obtained by us do not show large deviations in terms of recommendations for the consumption of meat and fish among the studied groups. Unfortunately, the recommendation made by experts for daily consumption of milk and dairy products is valid for less than half of the studied adolescents, which carries some risk because eating habits and eating behaviors formed in childhood and adolescence are preserved in the future in adulthood.

Background: One of the key issues for women’s health is pregnancy. Healthy nutrition during pregnancy is a reliable guarantee for proper pregnancy and childbirth. This study sought to determine the impact of an educational intervention based on social cognitive theory on the nutritional behavior of pregnant women in Iran Methods: This randomized controlled trial study was carried out in women of reproductive age in Iran, from February to April 2020. The samples were divided into experimental (n = 150) and control (n = 150) groups. The questionnaire included demographic questions, questions related to the structures of social cognitive theory and nutritional behavior questionnaire. The data were analyzed through the SPSS20 and AMOS23 software. Results: The mean age of the women was 28.11 ± 6.54 and 28.83 ± 6.62 years in the intervention and control groups, respectively. The results of the Structural Equation Model showed that direct effect of self-efficacy, self-regulation, and mutual determinants on behavior were significant. After the educational intervention, nutritional behavior in the experimental group was increased significantly. Also, there was a significant difference between two groups in structures such as outcome expectations, outcome value, self-efficacy and knowledge. But there was no significant increase in the self-regulation and social support after educational intervention. Conclusion: Social cognitive theory as a theoretical framework is able to predict healthy eating behavior during pregnancy. Also educational intervention based on the structures of social cognitive theory, improved the behavior of pregnant mothers. Educational intervention based on social cognitive theory and providing simple and understandable training packages for pregnant women is recommended. [ABSTRACT FROM AUTHOR]

29. Impact of a Food Rebalancing Program Associated with Plant-Derived Food Supplements on the Biometric, Behavioral, and Biological Parameters of Obese Subjects

Between 2021 and 2023, the Scientific Council of Dietplus®, a group specialized in overweight and obesity management, conducted a clinical study on 170 volunteer subjects with a BMI > 29 Kg/m2 consecutively recruited. The Dietplus® program comprises nutritional education, intensive, personalized coaching, and consuming food supplements rich in plant derivatives. The aim of this study was to assess the effect of the Dietplus® program on biometric, behavioral, and biological parameters. A control group of 30 obese patients was followed for a similar 12-week period. Mean weight loss reached 9 ± 2.1 kg in the Dietplus® test group versus a 1 ± 0.1 kg weight gain in the control group. Excess weight loss reached 33 ± 13%, and fat mass loss was 7.6% (p < 0.001); waist circumference was reduced by 30%. Quality of Life, Nutriscore, and Prochaska di Clemente scale significantly improved (p < 0.001). Biological parameters showed substantial improvements in the carbohydrate profile and insulin resistance (HOMA index) and in the lipid profile with lower plasma triglyceride (p < 0.01) and VLDL (p < 0.01) concentrations. Inflammatory parameters (orosomucoid, ultrasensitive C-reactive protein, and PINI indices) were also substantially reduced. These results indicate a substantial benefit in subjects who followed the Dietplus® program. (Dietplus® 116 Rue Robert Bunsen, 57460 Behren-lès-Forbach, France is active in France Belgium and Spain. Plant Derived Food Supplements are produced in France). Indeed, improvements were observed in all biometric, behavioral, and metabolic parameters.

30. Factors Influencing Consumption Speed of Forages Given in Two Portions in Primiparous Dairy Cows

The study was carried out on 6 Romanian Black and White cows in their first one hundred days of lactation. The aim was to assess the consumption speed (g/min), as well as the required time for consumption of 1 kg of raw forage for alfalfa-hay, herbs silage, beet and concentrates), administered in two portions (P1, P2,) per day, in 2 equal feedings (F1, F2) per portion. The administration order of forages (fibrous-succulents and succulents-fibrous), the number of feedings and the average consumption speed among the two portions were the experimental variants. Data was computed by ANOVA/MANOVA. The average consumption speed determined was 198.5 g/min for concentrates, 48.28 g/min for alfalfa hay, 203.19 g/min for silage and 235.32 g/min for beets. The required time for 1 kg of raw forage consumption (minutes and seconds) was 5.02 for concentrates, 20.43 for alfalfa hay, 4.35 for herbs silage and 4.15 for beets.

32. Clinical Status, Nutritional Behavior, and Lifestyle, and Determinants of Community Well-Being of Patients from the Perspective of Physicians: A Cross-Sectional Study of Young Older Adults, Nonagenarians, and Centenarians in Salerno and Province, Italy.

Longevity is rightly considered one of the greatest achievements of modern society. Biomedical research has shown that aging is the major risk factor for many diseases, so to find the right answers to aging it is necessary to identify factors that can positively influence longevity. This study investigated the clinical status, nutritional behavior, lifestyle, and social and community determinants of the well-being of young older adults and nonagenarians/centenarians in Salerno and province through the judgment of their physicians. Data were collected through an online survey. Multivariate Poisson and logistic regression models were used to calculate significant predictors of the outcomes of interest. The interesting finding was that cardiovascular disease was a risk factor for young older adults, while it was a protective factor for nonagenarians/centenarians, meaning that as age increased, heart problems tended to decrease. Certain foods were found to be a significant protective factor for both young older adult and nonagenarian–centenarian patients. In addition, psychosomatic disorders were found to be determinant for the young older adults, while depression was a risk factor for the nonagenarians/centenarians because they were not always gratified by their long lives and often felt like a burden on the family. The protective significant variable among the determinants of community well-being for both young older adults and nonagenarians/centenarians was the retention of honorary achievement. Based on our results, we are able to support the hypothesis of a difference between the young older adults and the nonagenarians/centenarians in clinical status, nutritional behaviors, lifestyle, and determinants of community well-being. However, societies need more social and educational programs that are able to build "a new idea of old age" by improving and supporting the young older adults and the nonagenarians/centenarians, with the goal of intergenerational solidarity, well-being, and social inclusion, as well as preventive interventions on lifestyles and nutrition, which will allow us to provide a new key to understanding aging. 33. The Effect of Group Counseling Based on Health Belief Model on Nutritional Behavior of Pregnant Women with Overweight: a Randomized Controlled Trial

Introduction: Overweight and obesity are a significant challenge in pregnancy care. This study was conducted to investigate the effect of group counseling based on health belief model on nutritional behavior of overweight pregnant women referred to Kermanshah health centers. Methods: This clinical trial was performed in 2018 on 90 pregnant women in Kermanshah. Among the comprehensive health centers, 4 centers were randomly selected for intervention and 4 centers for the control group. Then 4 sessions of group counseling program prepared for the intervention groups were performed for one month. The content of the counseling included nutrition counseling and familiarity with the food pyramid and principles of proper nutrition, increasing sensitivity to obesity and its complications, understanding the severity of the obesity problem, understanding the obstacles and benefits of following a proper diet and increasing self-efficacy and ultimately achieving healthy eating behavior. The data collection tool was a researcher-made questionnaire including demographic and midwifery information, health belief model constructs, knowledge and nutritional behavior questionnaire. Data were analyzed using SPSS 16. Significance level was considered less than 0.05. Findings: The mean age of participants in the intervention group was 24.91(6.19) and in the control group was 27.53(5.60). After controlling the effect of pre-test scores on the constructs of knowledge, perceived susceptibility, perceived severity, perceived benefits, perceived barriers, self-efficacy and nutritional behavior, the results showed a significant increase after the intervention, in the mean scores of the intervention group (P=0.001). Conclusion: The findings of this study showed the effectiveness of counseling based on the health belief model in promoting the nutritional behavior of pregnant women with high body mass index. Researchers in this study recommend counseling interventions based on this model. Therefore, the implementation of counseling intervention based on the structures of the health belief model can play an effective role in improving the nutritional behavior patterns of pregnant women.

Introduction: Diabetes is one of the most common non-communicable diseases that can be prevented and controlled by following a healthy lifestyle. This study aimed to apply the theory of planned behavior in determining the predictors of nutritional behavior in women with prediabetes referred to the comprehensive health service centers of Mashhad University of Medical Sciences. Methods: This descriptive-analytical study was conducted in 2020. A total of 196 pre-diabetic women referred to Mashhad Comprehensive Health Service Center (Iran) were selected by multi-stage random sampling. To collect the data, a researcher-made questionnaire including demographic information based on the theoretical structures of planned behavior [attitude, subjective norms, behavioral control, and intention to follow a healthy diet] was used. Data were analyzed in SPSS-25 software at a significance level of 0.05. Results: The mean of total scores obtained in Attitude constructs 4.1 ± 0.50, subjective norms 3.67 ± 1.06, perceived behavioral control 4.13 ± 0.55 and behavioral intention 4.00 ± 0.39 and healthy eating behavior 3.00 ± 0.65 was reported. The construct of the subjective norm (ß = 0.254) was a strong predictor in the structure of intention and intention (ß = 0.419) and perceived behavioral control (ß = 0.240) was a strong predictor of nutritional behavior (p <0.001). Planned behavior theory was able to predict 40.5% of eating behavior in women with prediabetes. Conclusion: It seems that by applying the planned theory in the design of educational programs, it is possible to improve the observance of a healthy diet in women with prediabetes. Background and Aim: Physical activity and nutrition are important topics in adolescent health. This study aimed to determine the predictors of nutritional knowledge, behaviors, and physical activity in fifth-grade elementary school female students Materials and Methods: This cross-sectional descriptive-analytical study was performed on 480 female students in the fifth grade of the elementary school in Gods city in 2020-2021 by cluster random sampling. Data were collected using a researcher-made questionnaire two-part questionnaire of contextual questions and questions about knowledge, nutritional and physical activity, virtual in the Shad messenger. The content validity ratio and content validity index was used to determine validity, and the intra-cluster correlation index to determine the reliability, of the questionnaire. In data analysis, descriptive statistical tests, Pearson correlation coefficient, and multiple regression analysis were performed using SPSS 27. Results: The results of multiple regression analysis showed the effect of nutritional knowledge variables on nutritional behavior (p <0.001, β = 0.159) and physical activity knowledge on nutritional behavior (p = 0.008, β = 0.120) if the Physical activity knowledge variable was not effective on physical activity behavior and also nutritional knowledge variable had no effect on physical activity behavior. Conclusion: Increasing knowledge of nutrition and physical activity improves students' nutritional behavior, but this increase in knowledge does not affect physical activity behavior. The sedentary lifestyle and the presence of the Covid-19 pandemic appear to have significantly reduced physical activity. Introduction: The COVID-19 pandemic had enforced several restrictions which were necessary to abate the spread of the virus, however, the blow of these limitations on health behaviors and lifestyles remains vague. Therefore, this study was carried out to assess the behavioral and lifestyle consequences of complete lockdown during the pandemic. Materials and Methods: The Lockdown and its Impact on Food and Exercise study was a pilot study conducted in the form of a questionnaire which was handed out to the public and circulated electronically. The questions regarding exercise were adapted from the International physical activity questionnaire and those regarding food habits were taken from the Public Library of Science and the Self-regulation of Eating Behavior Questionnaire. This survey was conducted from March 28 to April 14, 2020, during which a complete lockdown prevailed. Results: The COVID-19 complete lockdown had a negative impact on all intensity exercise levels, vigorous exercise (64.34% vs. 41.20%, P ≤ 0.00001), moderate exercise (95.67% vs. 84.57%, P ≤ 0.00001), and walking (55.42% vs. 42.89%, P = 0.0003). Food consumption and meal patterns (58.55% vs. 47.95%, P = 0.0022) were also more unhealthy (78.60% vs. 87.94%, P = 0.0096) during complete lockdown with only the consumption of late night snack decreasing significantly. Conclusion: The results of this analysis indicate that physical activity had decreased significantly and eating behaviors were unhealthy. Hence, our survey will help to develop interventions which would potentially alleviate these negative lifestyle and nutrition behaviors.

The objective of the study was to emphasize the consumers’ attitude regarding the salt intake in Republic of Moldova. The Government of the Republic of Moldova has committed itself to reducing salt consumption at the national level among the population by 2020 to less than 8 g per day (a 30% reduction). This objective is provided in the National Action Plan for 2016-2020 and the National Program in the field of Food and Nutrition 2014 - 2020. The actions are part of the National Strategy for the Prevention and Control of Noncommunicable Diseases. Data collection was conducted in the period January 2020 and June 2020 through a questionnaire concerning this issue. The main objectives of the study were to identify foods that lead to high sodium intake in the adult population and to analyze practices, attitudes, behaviour and knowledge about salt consumption. It has been found that citizens consume excessive amounts of salt. About 90% of respondents are aware that excess intake of salt is associated with the incidence of adverse health conditions, more than 54% indicated they were trying to reduce their current intake of salt, and only 26% of respondents claimed to know the existence of a recommended maximum value of salt or sodium intake. The high salt intake is mostly caused by the consumption of highly processed food as meat, cheese, bread or preserved vegetables. Additional effort by providing information is required to increase consumers’ knowledge about the effect of salt on health status, about products with a high salt content, and about the limit for salt intake.

The adaptation stress activates the hypothalamic-pituitary-adrenal axis, which can lead to the modification of some behavioral manifestations. This paper highlights the adaptation stress effect on nutritional behavior, in direct correlation with plasma cortisol levels’ changes as main physiological parameter involved in stress and adaptation mechanisms. The study was carried out on a group of 10 clinically healthy cats, housed in identical environmental conditions, each individual’s behavior being studied performing ethograms on days 1, 5, 9 and 10 of accommodation, simultaneously with the evaluation of the serum cortisol levels. On the first day, significant changes in nutritional behavior were observed, resulting in the absence of watering in all individuals and the absence of feeding in 50%. Towards the end of the study (days 5 and 9) no significant variations of the nutritional behavior were observed anymore, data associated with the accommodation to the new living environment. The serological levels of cortisol variations were in accordance with the behavioral changes, registering significantly increased values (p<0.05) in 50% of the studied individuals, values that gradually decreased towards the end of the study period. Objectives: Health literacy is one of the most important social determinants of elderly health. This study aimed to determine the effectiveness of the educational intervention on knowledge, attitude, and nutritional behaviors of the elderly with adequate health literacy and inadequate health literacy. Methods & Materials: An experimental study was conducted with 192 people 60 years and older in Ilam Province, Iran, from May to September 2016. The elderly were assigned into four groups (48 subjects in each group), including two intervention groups with adequate and inadequate health literacy and two control groups with sufficient and insufficient health literacy. The elderly nutrition education program consisted of four lecture sessions with questions and answers, along with an elderly nutrition manual for the intervention group. The level of health literacy among the elderly was assessed using functional health literacy in adults. The level of knowledge, attitude, and nutritional behaviors was assessed using a researcher-made questionnaire in two stages before and two months after the educational intervention. The SPSS V. 21 was used for data analysis. Descriptive statistics and the Chi-square, paired t test, and Fisher exact test were used for data analysis. Results: The Mean±SD age of the men was 61.24±2.38 years, and the mean±SD age of women was 61.35±2.45 years. The majority of men with adequate health literacy were men (84.37%), while the proportion of men and women in those with inadequate health literacy was almost the same. All participants with adequate health literacy and 89.58% of those with inadequate health literacy were married. After the educational intervention, the mean scores of knowledge, attitude, and behavior in the intervention group with adequate health literacy increased significantly (P≤0.013, P≤0.015, and P0.05). Conclusion: According to the study Results, the effectiveness of the educational intervention in relation to nutrition of the elderly is significantly influenced by the level of health literacy.

42. Theoretically designed interventions for colorectal cancer prevention: a case of the health belief model

Abstract Background According to the WHO, most chronic diseases, including cancer, can be prevented by identifying their risk factors such as unhealthy diet, smoking and physical inactivity. This research examined the effectiveness of a theory-based educational intervention on colorectal cancer-related preventive nutritional behaviors among a sample of organizational staff. Methods In this interventional study, 110 employees of Shahid Beheshti University of Medical Sciences were randomly divided into two groups (intervention and control) with cluster sampling. The data gathering tool was a researcher-made questionnaire containing two parts of 10-dimensional information and health belief model constructs. The educational intervention was conducted for 1 month and in four sessions in the form of classroom lecture, pamphlet, educational text messages via mobile phones and educational pamphlets through the office automation system. Two groups were evaluated in two stages, pre-test and post-test. Data were analyzed using SPSS-18 software, analysis of Covariance (ANCOVA) and independent t-test (intergroup comparisons). Results Two groups were evaluated for variables such as age, sex, education level and family history of colorectal cancer, and there was no significant difference between the two groups (P 0.05). Conclusion Implementation of educational intervention based on health belief model was effective for the personnel, and can enhance the preventative nutritional behaviors related to colorectal cancer.

43. Food Intake Regulation in Birds: the Role of Neurotransmitters and Hormones

BACKGROUND: Neurotransmitters (NTS) are endogenous chemicals secreted from neural terminals into the synaptic cleft of the chemical neurons in order to affect their receptors. NTS play vital physiological role as stimulatory, inhibitory or modulatory compounds. OBJECTIVES: This review was aimed to summarize the roles of the most important NTS which regulate food intake in the avian species. RESULTS: Over 40 neurotransmitters are known as regulatory agents that control ingestion behavior in mammals and birds. Acetylcholine (Ach), epinephrine (EP), norepinephrine (NEP), histamine, gamma amino butyric acid (GABA), glycine, serotonin and glutamate have been identified as the mediatory agents about regulation of feeding behavior in birds. Based on the molecular weight and the type of efficacy, NTS have been categorized into the two main groups including “the small molecular weight fast-effective NTS and the large molecular wieght slow-effective neuropeptides. Various physiological functions have been presented for NTS and it seems many other unknown effects and even possible interactions among them are still questionable. Appetite control, mediatory role of ingestion behavior and regulation of food intake have recently been highlighted among various roles of NTS in chicken. CONCLUSIONS: Food intake regulation is a complex physiologic process that is under the control of the central and environmental signals. Considering of the involvement of feeding behavior in other major physiological processes such as the growth, immunity and production, it is necessary to realize the role of different mediators which are affecting and modulating food intake in avian species.

Aim of the study: Assessment of knowledge of the principles of healthy nutrition among women from the Rzeszow administrative district, taking into account their level of education. Material and methods: The study involving the method of diagnostic survey covered 300 women aged 30–40 years, residents of Rzeszow administrative district. The percentage shares of respondents’ answers to individual survey questions were calculated. The collected research results were analyzed with the use of Chi-square (χ2). Results: Respondents largely correctly answered most of the questions in the survey. The answers to the question about the proportion of vegetable consumption in relation to fruit varied widely. The Chi-square test showed statistically significant differences in the frequency of obtaining information from training (p = 0.012) and specialist literature/magazines (p = 0.046). Conclusions: Knowledge of the principles of healthy nutrition among women from the Rzeszow administrative district is sufficient, although the respondents have a problem with determining the proportion of vegetable consumption in relation to fruit. Mostly women get knowledge about proper nutrition from a doctor and the Internet. The frequency of obtaining information from training and science piblications depends on the level of education. These sources are most often used by women with higher education, and least often by people with basic education.

Background: Medical nutrition therapy is essential for all people with diabetes, of any type or severity. Compliance with the recommended nutrition is an integral part of the treatment of type 1 diabetes (T1D). It remains unclear to what extent the dietary intake of patients with type 1 diabetes adheres to the recommendations for healthy eating.Objective: The primary aim of our study is to collect and analyze published articles on the nutrition of T1D patients in comparison with the general population and recommendations.Research Strategy and Methods: A literature search for articles, published between January 2006 and July 2021 was conducted, using electronic databases (PubMed and Google Scholar) for all available publications in English and Bulgarian. The process of study selection, identification, screening, eligibility and inclusion followed the PRISMA (Preferred Reporting Items for Systematic Reviews and Meta-Analyses) recommendations for a flowchart. Based on the keywords search, 425 titles were retrieved, of which 27 were selected based on title and abstract. All papers were crosschecked and reviewed for selection by 3 independent reviewers. As a result, 19 titles were eligible and met inclusion criteria for a full review.Results: Energy intake tends to be lower in T1D patients or comparable to controls and in most cases within the general recommendations. The percentage of calories from protein is within the recommendations for children, adolescents and adults. 46. Turkish version of a short nutrition literacy scale for young adults: cultural adaptation and validation.

Background: Recent changes in nutrition trends may lead to health issues. In particular, the unhealthy eating habits of young adults suggest that future generations may be at risk. Therefore, the importance and necessity of nutrition literacy is becoming increasingly apparent., Purpose: The purpose of this study was to create a Turkish version of a short nutrition literacy (S-NutLit-Tr) scale for young adults developed by Vrinten et al (2023)., Methods: This research involved 115 young adults from Istanbul Gelişim University, who were selected through convenience sampling, a non-probability sampling method. After the original S-NutLit scale was translated into Turkish, the validity and reliability of the determined factor structure were tested on 115 young adults. Internal consistency was examined with the Cronbach Alpha coefficient. Confirmatory factor analysis was employed to validate the two sub-scale structures. Finally, measurement invariance was tested concerning participants' gender, aiming to ascertain whether the scale captured equivalent characteristics across different groups., Results: As a result of the reliability analysis conducted with the scale of S-NutLit-Tr, the Cronbach Alpha coefficient was obtained as 0.86 for the scale of S-NutLit-Tr. Additionally, it was found to be 0.84 and 0.77 for the "information skills" and "expert skills" sub-scales, respectively. Accordingly, the scale of S-NutLit-Tr was found to be reliable. To examine the two sub-scale factor structures of the S-NutLit-Tr scale, fit indices were examined: χ
2 /df (1.246), GFI (0.923), IFI (0.975), TLI (0.967), CFI (0.974), RMSEA (0.046), and SRMR (0.055) and it was observed that the indices were within acceptable limits. In the analysis results obtained through the multi-group confirmatory factor analysis for measurement invariance, it was observed that the ∆CFI and ∆TLI values across all indices were less than or equal to 0.01. Longevity is rightly considered one of the greatest achievements of modern society. Biomedical research has shown that aging is the major risk factor for many diseases, so to find the right answers to aging it is necessary to identify factors that can positively influence longevity. This study investigated the clinical status, nutritional behavior, lifestyle, and social and community determinants of the well-being of young older adults and nonagenarians/centenarians in Salerno and province through the judgment of their physicians. Data were collected through an online survey. Multivariate Poisson and logistic regression models were used to calculate significant predictors of the outcomes of interest. The interesting finding was that cardiovascular disease was a risk factor for young older adults, while it was a protective factor for nonagenarians/centenarians, meaning that as age increased, heart problems tended to decrease. Certain foods were found to be a significant protective factor for both young older adult and nonagenarian–centenarian patients. In addition, psychosomatic disorders were found to be determinant for the young older adults, while depression was a risk factor for the nonagenarians/centenarians because they were not always gratified by their long lives and often felt like a burden on the family. The protective significant variable among the determinants of community well-being for both young older adults and nonagenarians/centenarians was the retention of honorary achievement. Based on our results, we are able to support the hypothesis of a difference between the young older adults and the nonagenarians/centenarians in clinical status, nutritional behaviors, lifestyle, and determinants of community well-being. However, societies need more social and educational programs that are able to build “a new idea of old age” by improving and supporting the young older adults and the nonagenarians/centenarians, with the goal of intergenerational solidarity, well-being, and social inclusion, as well as preventive interventions on lifestyles and nutrition, which will allow us to provide a new key to understanding aging.

Background: Myocardial infarction is a start for many heart problems that can make a patient refer to treatment centers long after discharge the objective of this study was to investigate the effect of nutritional counseling on nutritional behavior. Materials and Methods: 120 patients who were admitted to cardiac intensive care units of selected after stroke were selected and were randomly assigned into two groups. If the total MEDFICS score in each group is higher than or equal to 70, nutritional behavior will need to be modified, if it is less than 40, the diet will be TLC, and if it is between 40-70, it will be heart-healthy diet. Subjects whose score was above 70 were referred to nutrition counseling classes. Results: After two months, the mean MEDFICS score in the experimental group (62.4 ± 07.6) was significantly lower than that of the control group (4.22 ± 3.65). The results of the independent t-test after the intervention showed a significant difference between the experimental and control groups (P <0.001). It showed an improvement in nutritional behavior in the experimental group after the intervention. Conclusion: the research hypothesis that states the nutritional behavior of patients improves after implementation of the nutritional counseling program is accepted with a 95% confidence interval.
