- Abstract
One of the most basic needs of human beings in order to survive is nutrition. sesame, which is rich in protein, fiber, minerals, and vitamins, has a very high nutritional value. The oil obtained from sesame took its place among the oils used in ancient Mesopotamia to facilitate the cooking of meals and to increase their flavor. Sesame, which is of vital importance for ensuring daily energy requirements and maintaining a healthy lifestyle, was considered a sacred plant in Ancient Mesopotamian societies and was widely used in religious rituals. This situation shows that sesame was considered not only as a food source but also as a religious symbol. From a medical point of view, the health benefits of sesame cannot be ignored either. It is known that sesame has been used for various medicinal purposes since ancient times. In traditional medicine practices, sesame oil has been used for skin care, massage, and the treatment of certain diseases. In addition, it is known that sesame has antioxidant properties and some components it contains have positive effects on health. Therefore, it can be said that throughout history, sesame has both contributed to people's physical health and had a very important position from a cultural point of view. In the article, based on cuneiform sources, the use of sesame, one of the main food sources of Mesopotamian societies, in various fields such as nutrition, religion, food culture, and medicine is discussed. The purpose of this study is to examine the usage areas of sesame in Ancient Mesopotamia, which have made important contributions to the formation of the world's cultural heritage.
