Integrating empathy to design education enhances students' universal design solutions since empathic design provides a feeling and understanding of a wide range of users' needs in the designed environment or products. This study investigates how using empathic design techniques as instructional design methods influence students’ improvement in the multiple dimensions of empathy, design process and end products, and perceptions of their learning experience. The empirical research is conducted with three groups and a control group who are asked to experience different empathic design techniques (direct contact between designers and users, indirect contact between designers and users, and role-playing) obtaining in the redesign of an existing kitchen and reflecting their learning and design outcomes on an online session in virtual meetings. Qualitative data collection methods consist of behavioral observations, the researcher's logbook, interviews, and design conversation protocols obtained by video recordings of the Zoom meetings. Quantitative data collection methods include using a questionnaire and survey as instruments and assessment of end products. Thematic analysis was conducted to study data from interviews and design. Results indicated that an empathic design process positively indicated students' perceptions of their learning experience and enhanced their self-awareness and design awareness. In addition, empathic design improved students' problem-solving skills, helped them attain universal design solutions easily, and shortened the design process time. The built environment can be made more circular by gradually replacing building components with more circular components during construction, renovation, or maintenance. However, many different design options can be seen as circular. Although there is a growing number of studies about circular design options, research on what makes these options feasible or not feasible in practice is limited. This type of research requires intensive, long-term involvement with practitioners. Therefore, this article presents a longitudinal case study of an exemplary circular building component: the circular kitchen. The researchers actively engaged in a co-creation with industry partners to develop a circular kitchen design, supply chain model, and business model. All the choices made from initiative to market implementation were documented. Five lessons were drawn from an analysis of the stakeholder choices that can aid the future development of feasible circular building components: about ambition, aesthetics, design scale, participation, and focus.

This paper describes broader research undertaken for a master’s degree in product and space design at IADE, Universidade Europeia, Lisbon, Portugal. It aims to define guidelines for the development of domestic kitchen projects that contribute to reducing food waste. After this research, our goal is to further develop its outcomes through future research and the implementation of the resulting guidelines in a lifesize field experiment. We departed with the hypothesis that space design may influence users’ behaviour; therefore, it can be used as an active tool in favour of sustainability. We defined a methodology that informed a review of the literature, case studies and surveys. We analysed comprehensive themes regarding the problem, which enabled a holistic approach to the issue. We conclude this paper by showing the pertinence of our research proposal, a novel way of combining specific strategies from three primary areas of knowledge (design for behavioural change, food waste and interior design) to achieve our goals of reducing food waste in domestic kitchens and contributing in this way to a more sustainable society.

İnsanlar, ilk çağ başlangıcından günümüze kadar yaşamlarının devamını sağlayabilmek için, besin ve içecek tüketimine her zaman ihtiyaç duymuşlardır. Zamanla yaşam koşullarının gelişmesi, insanların gereksinimlerinin artmasıyla birlikte mutfak kavramı oluşarak şekillenmiş ve insanların ihtiyaçlarını karşılayacak alanı ortaya çıkarmıştır. İlkel dönemde mutfak mekân kurgusu dışarıdaki ateş ve içerideki depolamadan ibaret iken, ilerleyen süreçte bu yaklaşım ateşin ocak haline gelip mekânın içine alınması ve mekâna farklı fonksiyonlarında yüklenmesiyle gelişmiştir. Mutfak zamanla kendi sınırları içerisinde kullanıcılara çeşitli faaliyetlere olanak veren, gün içerisinde çoğu zamanlarının bu alanda geçirdikleri mekân haline dönüşmüştür. Sürekli gelişme gösteren mutfak, kullanıcıların yeme, içme ve depolama ihtiyaçlarını karşılarken, 20.yy ve 21.yy’da tasarımcılar göz zevkine hitap eden, aynı zamanda estetik, fonksiyonellik, işlevsellik ve ergonomi ile oluşan mutfakları kullanıcılara sunmaya başlamış, kullanıcılar bu sayede mutfaktan daha fazla verim almaya başlamışlardır. Zamanla teknoloji mutfakla birleşerek akıllı mutfaklar ve mutfak ekipmanları ortaya çıkmıştır. Akıllı mutfaklar kullanıcıların hayat kalitesini yükseltmek için bu mutfaklara öncelik tanımalarını sağlayacak çeşitli düzenekleri kapsamaktadır. Bu araştırmada, insan hayatının çoğu zamanının geçirdiği, yeme içme gibi başlıca gereksinimlerin karşılandığı mutfak alanının gelişim evreleri, tasarım kriterleri, mutfak ihtiyaçlarının günümüz yaşantısına gelene kadar nasıl dönüşüm gösterdiği gözlemlenmiştir. Sonrasında akıllı mutfaklarla entegre olan mutfak alanları yıl bazında incelenerek gelecek mutfakların ön görüsü ile bir akıllı mutfak tasarlanıp 3d şeklinde modellenip anlatılarak araştırma ele alınmıştır. Sonuç kısmında araştırmaya katılan mutfakların özellikleri ve gelişim süreçleri gözlemlenerek oluşturulan mutfağın genel değerlendirmesi yapılmaktadır. Teknolojinin mutfak tasarımında etkin rol oynamasının yanı sıra kullanıcı için ayrılan mekân, donatı işlevselliği ve malzemenin dayanıklılık özelliğinin de önemli olduğu çalışmayla açığa çıkmıştır., People have always needed food and beverage consumption in order to ensure the continuation of their lives from the beginning of the first century to the present. With the development of living conditions and the increase in people's needs, the concept of kitchen has been formed and shaped , revealing the area that would meet the needs of people. During the primitive times, the kitchen setup consisted of the fire outside and the storage inside. This approach developed in the following process by turning the fire into a furnace and taking it into the place and loading it into the place with different functions. The kitchen, which allows various activities, has gradually turned into a place where users spend most of their time during the day. Meeting the eating, drinking and storage needs of the users, The ever-developing kitchen has started to offer products that has both functionality and ergonomics without compromising the aesthetics in the 20th and 21st centuries. Smart kitchens include various mechanisms that enable users to prioritize these kitchens in order to improve their quality of life. In this research, it has been observed what the development stages there are in the kitchen area -which is where most of the human life is spent and the comsumption needs are fulfilled- the design criteria, and how the kitchen needs have transformed until today's life. Afterwards, the kitchen areas integrated with smart kitchens have been examined on a yearly basis, and a smart kitchen has been designed with the foresight of future kitchens. It has been modeled, explained in 3d and the research has been discussed. In the conclusion part, a general evaluation of the kitchen is made by observing the characteristics and development processes of the kitchens participating in the research in addition to the active role the technology plays in kitchen design, the space reserved for the user, the functionality of the equipment and the durability of the material are also important.

This study examines the contribution of women architects to Palomeras operation projects in the context of the Spanish transition and the Madrid housing emergency in the late 1970s and early 1980s. Works were selected according to their professional impacts, 11 projects were analyzed by redrawing and studying the main types of dwelling. The current reading interpretation&mdash, according to a gender perspective&mdash, focuses on reproduction of tasks in main spaces at home: in-depth testing of the scope of kitchen surface and glazing ratios, as well as direct lighting, views and minimum distance of housekeeping paths. Furthermore, the comparative and qualitative analysis was based on meaningful data, which yield subtle but expressive results about the consequences of gender-inclusive architect teams. Thus, it is possible to approach and discuss the role played by some women architects of the Madrid School after second-wave feminism, in a key time for gender change in architectural practice in Spain.

Arbetet syftar till att undersöka behovet av att se över köksbänkars- och överskåps standardmått. De standardmått som finns idag är baserade på forskning som genomfördes på endast kvinnor som köksbrukare år 1948 av Hemmets forskningsinstitut. För att få svar på frågeställningen har vetenskapliga artiklar och tidigare forskning undersökts samt intervjuer med sakkunniga inom ämnesområdet har utförts. I uppsatsen redovisas även utförda experiment med köksbrukare. Resultatet av dessa undersökningar visade på behovet av att måtten behöver ses över vad gäller köksbänkens höjd samt hur förhållande till överskåpet påverkas av en eventuell förändring. Slutsatsen baseras på att det finns en markant skillnad i medellängden mellan är 1948 och 2010 enligt den senaste statistiken från Statistiska Centralbyrån. Dessutom har köksanvändaren gått från att ha varit endast kvinnor till att det idag är en relativ jämn fördelning mellan kvinnor och män. Standardmåtten i köket är baserade på en medellängd på 164 centimeter och idag är medellängden 172,6 centimeter. Slutsatsen i uppsatsen är att en ny utredning bör genomföras med utgångspunkt i den utredning som genomfördes år 1948. Dessutom bör olika professioner så som kökstillverkare, myndigheter, arkitekter och ergonomer medverka i en ny utredning för att kunna uppnå optimala arbetsförutsättningar i köket. The thesis aims to investigate the need to review the standard measurements of kitchen countertops and cupboards. The standard dimensions today are based on research conducted on only women as kitchen users in 1948 by Hemmets forskningsinstitut. In order to answer the question, scientific articles and previous research were investigated in the thesis and interviews with experts in the subject area were conducted. Experiments with kitchen users are also presented in the thesis. The results of this showed that the measurements need to be reviewed with regards to the height of the kitchen counter and how the relation with the cupboard is affected by any changes. The conclusion is based on that there is a pronounced difference in the average length between 1948 and 2010 according to the latest figures from Statistics Sweden. Furthermore, the kitchen user has gone from being only women to the fact that today there is a relatively even distribution between women and men. The standard dimensions in the kitchen are based on an average height of 164 centimeters and today the average length of Swedish population is 172.6 centimeters. The conclusion of the investigation is that a new study should be realized based on the study that was conducted in 1948. However, various professionals such as kitchen manufacturers, authorities, architects and ergonomists should participate in a new study in order to achieve optimal working conditions in the kitchen.

This paper examines the kitchen as one relevant part of the home that is highly affected by frequent replacements, renovations, and a short service life. The aim is to discern circular value opportunities for the built environment by examining stakeholder activities and the value proposition associated with Swedish kitchens. The paper answers the research question &lsquo, Which aspects in stakeholders&rsquo, value proposition of kitchens might contribute to future circular housing design?&rsquo, The empirical material was collected through a workshop, interviews, and a focus group session. The data were analysed using qualitative content analysis while applying value mapping as an analytical framework. Four opportunities for circularity were identified: (1) aligning spatial and product design for a circular economy, (2) considering end-user perspectives and demands, (3) formulating regulations informed by research, and (4) developing circular products and services through collaboration. While some of these opportunities have already been emphasised in previous literature, the most distinct contribution of this paper is that it reveals the importance of spatial parameters when transitioning towards a circular housing design. The methods and results of this paper may be adapted to various building components to create a system-level circular economy in the built environment.

Bu çalışma, evrensel tasarım ilkeleri kapsamında, tekerlekli sandalye kullanan bireylerin konutlarında yer alan mutfak kullanımına ilişkin üretilmek üzere tasarım önerisi geliştirmeyi hedeflemiştir.Engelsiz tasarım kavramı ve evrensel tasarım ilkeleri; tasarımı oluşturmada yol gösterici olması için, örnekleri ile incelenmiştir. Bu sayede tasarımcı bakış açısı evrensel tasarım ilkeleri bağlamında değişmiştir. Türkiye'de ve Dünya'da engellilik tanımları ve tekerlekli sandalye kullanan bireyler incelenmiştir. Tezin ana konusunu oluşturan mutfak tasarım önerisine ilişkin çalışmalara geçilmeden önce konutta yer alan mutfak tipleri ve mutfakta yapılan eylemlerin analizleri çizimler ile anlatılmıştır. Çalışmanın ana konusunu oluşturan mutfak tasarım önerisini oluşturabilmek için ise Türkiye Omurilik Felçlileri Derneği ile çalışılmıştır. Tekerlekli sandalye kullanan bireylere ulaşılmış, yüz yüze ve yerinde görüşmeler yapılmıştır. Bunun yanı sıra tekerlekli sandalye kullanan bireyler mevcut mutfaklarında çalışırken çektikleri videoları iletmişlerdir. Bu videolarda, mevcut mutfaklarında yaptıkları değişiklikleri, hangi eylemleri nasıl yaptıklarını ve bu eylemleri yaparken yaşadıkları zorlukları aktarmışlardır. Yapılan görüşmeler ve aktarılan videolardan, tekerlekli sandalye kullanıcısının mutfakta çalışma biçimine ilişkin veriler toplanmıştır. Tekerlekli sandalye kullanan her bireyin kendi yaşam alanlarında yer alan zorlukları aşmakta güçlük çekerek, zamanla çevresindeki ürünleri kullanma biçimlerinin farklılaştığı ve bu sebeple mevcut tasarımların kullanıcının tecrübesine göre revize edildiği gözlemlenmiştir. Mutfakta kullanıcı deneyimlerinin analizlerinin yapılmasıyla birlikte evrensel tasarım ilkelerine bağlı kalarak Türkiye Omurilik Felçlileri Derneği'nin ahşap evinde bulunan mutfak için, üretilmek üzere L tipi mutfak tasarım önerisinde bulunulmuştur. Bu tasarım önerisinin bir sonucu olarak, tekerlekli sandalye kullanan bireylere yönelik L tipi mutfak tasarımı oluşturma kılavuzu önerilmiştir. This study aims to develop a design proposal regarding the use of kitchen in the dwellings of wheelchair users within the scope of universal design principles. Before creating the design, universal design principles have been examined with examples in order to be a guide in creating the design. By this way, the designer's perspective has changed in the context of universal design principles. Individuals using wheelchairs and the definitions of disability in Turkey and in the world have been examined. The main types of kitchen design and the analysis of kitchen activities in the dwelling have been explained with the drawings before proceeding to the kitchen design proposal which is the main subject of the thesis.A study has been carried out with Turkey Spinal Cord Paralysis Association in order to create the kitchen design proposal which constitutes the main subject of this study. Thus, individuals using wheelchairs have been reached and face-to-face and on-site interviews have been conducted. In addition, wheelchair users have transmitted the videos they took while working in their own kitchens. In these videos, they talked about the changes they made in their kitchens, what actions they did and how they did them, and the difficulties they experienced in doing them. Data has been collected from interviews and from videos about the way a person using a wheelchair works in the kitchen. It has been observed that each person using a wheelchair has difficulty in overcoming the difficulties in their living spaces at the beginning, that the ways of using the products around him differ and that therefore the existing designs are revised according to the user's experience.After I made the analysis of user experiences in the kitchen, an L-type kitchen design suggestion has been made to produce for the kitchen in the wooden house of Turkey Spinal Cord Paralysis Association, adhering to the principles of universal design in the kitchen. The kitchen produced in accordance with this recommendation has been installed in the designated area. As a result of this design proposal, a guide to create an L-type kitchen design for wheelchair users has been proposed. 173

Doktora Tezi, Bu çalışmada endüstriyel mutfak tasarımının temel bileşenlerinden hareketle, işlevsel bir planlama hedefleyen planlama kümesi aktörleri arasında ortak paydaşlı planlama ve tasarım sürecinin ortaya koyulması için sınırlayıcı özelliklere sahip ölçütlerin tespiti ve rolü incelenmektedir. Bu çerçevede araştırmanın temel amacı, endüstriyel mutfak planlanma sürecinde bilgi ile tecrübenin ortak faydasından yola çıkarak başta endüstriyel mutfak yöneticileri olmak üzere planlama sürecinden etkilenecek olan diğer aktörlerin fikirlerinin bir arada tartışıldığı; daha faydacı ve ortak katılımlı bir mutfak planlama süreci gerekliliğini ortaya koymaktır. Araştırma kapsamında endüstriyel mutfakların planlama sürecini incelemek için doküman incelemesi ve odak grup görüşmeleri yapılmıştır. Doküman incelemesinde endüstriyel mutfak planlama sürecinde dikkate alınması gereken faktörler incelenmiş ve profesyonel bir mutfağın kuruluşunda planlama aşamalarını içeren yönergeler, kitaplar ve ilgili araştırmalardan faydalanılmıştır. Toplam 22 katılımcının dahil olduğu 3 odak grup görüşmesi yapılmıştır. Bu görüşmelerden ilki Antalya'da 4 mutfak yöneticisi, 1 mutfak yöneticiliği yapmış otel müdürü, 1 mutfak koordinatör yardımcısı ve 1 endüstriyel mutfak proje yöneticisi ile gerçekleştirilmiştir. İkinci odak grup görüşmesi ise İstanbul'da 3 zincir yiyecek içecek işletmesi mutfak koordinatörü, 4 mutfak yöneticisi ve 1 endüstriyel mutfak proje yöneticisi ile tamamlanmıştır. Üçüncü görüşme yine Antalya'da 3 mutfak yöneticisi, 1 mutfak proje yöneticisi ve proje teknikeri ve 2 mutfak çalışanından oluşan 7 kişi ile gerçekleştirilmiştir. Odak grup görüşmesi yöntemiyle toplanan verilerin analiz edilmesinde nitel veri analizi yaklaşımlarından betimsel analiz tercih edilmiştir. Araştırma kapsamına elde edilen bulguların derinlemesine incelenmesi için "space syntax" programın "a graph" eklentisinden faydalanılarak analiz edilmiş ve endüstriyel mutfakların planlama aşamasında farklı bir bakış açısı ile yaklaşılmıştır. Araştırma sonuçlarına göre endüstriyel mutfakların planlama ve tasarım aşamalarında farklı disiplinlere ait paydaşların planlama sürecini yönetmesi farklı çözüm önerilerini dikkate alınması açısından önemlidir. Ayrıca planlama ve tasarım aşamlarının birbirinden farklı süreçleri kapsadığı, bu süreçlerde de yiyecek & içecek bölümü aktörlerinin yanı sıra yiyecek üretim sürecinde görev yapan uygulayıcıların da yer alması gerektiği sonucuna ulaşılmıştır., In this study, taking the main components of the industrial kitchen design as a reference, determination and role of the criterions with limiting features are researched for demonstrating collective plan and design process between actors in planning who are targeting an operational projection. Within this scope, the main goal of this research is to moot the ideas of other actors, who will be affected by the planning process, especially the industrial kitchen managers, based on the common benefit of knowledge and experience in the industrial kitchen planning process; to demonstrate the necessity of a more pragmatic and collaborative course. Document review and focus group interviews were conducted to investigate the planning process of industrial kitchens. In the document review, the factors that need be taken into consideration in the industrial kitchen planning process were examined. Guidelines, books and related researches including the planning stages were used in the establishment of a professional kitchen. Three groups with a total of twenty-two participants were interviewed. The first meeting was held in Antalya with five kitchen managers, one industrial kitchen project manager, and one hotel manager, who used to be a kitchen manager. The second focus group meeting was completed with three chain food and beverage business kitchen coordinators, four kitchen managers and one industrial kitchen project manager. Third meeting was held in Antalya again with seven people formed from three kitchen managers, one kitchen project manager and technician and two kitchen employees. During the analysis of the data collected with the focus group method, descriptive analysis was preferred among qualitative data analysis approaches. For the deeply examination of the researchs foundings "Space Syntax" programmes "A Graph" addition was used for the analysis and approached with a different perspective for the planing of industrial kitchens. According to research foundings, at the stage of industrial kitchen planing and design the managing of the stakeholders for planing process that belongs different disciplines are important for the consideration of different solution requests. Also it has been reached that planing and designing stages are contain different processes, this processes should contain operators that work in the process of food producing besides the actors of food&beverage department.

How a restaurant kitchen is organized directly correlates to how the guest receives an experience. The authors investigated five different kitchens to find out how their design impacted its front and back of house staff, and guests experience.

Bu çalışmanın temel sorusu, ev içinde mutfağın kullanıcıları tarafından nasıl anlamlandırıldığı ve bu anlamların kimler tarafından nasıl yaratılıp aktarıldığıdır. Ev içinde bir tüketim merkezi olarak işaret edilen mutfak, hem yeniden üretim faaliyetleri bağlamında ve hem de bunlardan bağımsız olarak çeşitli anlamların üretildiği bir üretim mekânıdır. Bu bağlamda mutfağın kullanıcıları için taşıdığı önemi ve burada yaratılan anlamları görmek için farklı ekonomik ve kültürel sermayeye sahip 30 kadınla Eylül 2013-Mart 2014 tarihleri arasında yaptığım derinlemesine görüşmelerde yarı yapılandırılmış sorularla anlamaya çalıştım. Sincan, Etimesgut, Elvankent, Fatih, Esat, Ayrancı, Ümitköy, Çayyolu, Balgat, Keçiören semtlerinde bulunan evlerin mutfaklarında gerçekleştirdiğim görüşmelerin bazılarında mutfağın asıl kullanıcısı erkekler olduğunda çiftlerle birlikte görüşme yaptım. Gazeteci, akademisyen, öğretmen, yapımcı, dış ticaret uzmanı, kapıcı, hemşire, doktor çalışan ve hiç çalışmayan, üniversite mezunu ve hiç okula gitmemiş 25- 60 yaş arası kadınlarla yaptığım görüşmelerden elde ettiğim verileri yorumlarken bizzat benim mutfakla ilişkim, mutfak deneyimim, görüşmeler sırasında yapabildiğim gözlemler katkı sundu.Bütün bunlardan sonra özellikle feminist literatürde kadınları baskı altına alan ve onların özgürlüğünü kısıtlayan bir mekân olarak eve, kadınların büyük ve derin bir bağla bağlı oldukları görülmüştür. Kadınlar için ev, aile olmak, bir düzen kurmak ve yeni bir hayat anlamına gelmektedir. Bu nedenle kendilerine ait bir ev, kadınların en büyük hayalidir. Ev içinde rutin, sıradan, sıkıcı ve ezici ev işlerinin mekânı olarak varlığı silinmeye çalışan mutfakların, kadınlar tarafından evi yuva yapan şeyin mutfak olduğu ve onsuz bir ev olamayacağı ortaya konmuştur. Mutfağın sadece ev içinde bir mekân olarak var olduğu durumlarda mutfak yaşamayan cansız bir mutfaktır, içinde hareketin olması, sıcaklığın bulunması gereken mutfaklar, sadece hane halkının değil yakın arkadaşların da biraraya geldiği bir sosyalleşme ve paylaşma mekânıdır. Her ne kadar başkalarının girilmesine izin verilse de mutfaklar, sadece sahibi kadınların hâkimiyet alanıdır ve burada kurdukları hâkimiyetin ellerinden gitmesini istememektedirler. Mecburen yaptıkları işler dolayısıyla zaman zaman onları sıkan bir mekân olsa da mutfak özellikle yemek pişirerek bir keyif mekânı haline gelebilmektedir. Yemek hem aile üyelerini beslemek ve mutlu etmek hem de diğerlerinin takdir ve beğenilerini toplamak için stratejik bir araç olarak kullanılmaktadır. Kimi zaman evdeki büyük kadının iktidarını genç kadına kaptırmamak için elinde tuttuğu kepçe kimi zaman erkeği memnun etmek ve erkeğin kadına ev içinde yaptığı yardımları yapmasına devam etmesini sağlamak için kullanılmaktadır. Kadınların çoğunlukla mecburen, görev ve ihtiyaç üzerinden kurdukları ilişkinin tersine kullanıcısı erkek olan mutfaklara erkekler büyük bir keyifle girmekte ve kadınların (eşlerinin) mutfakta çok da başarılı olmadıklarını düşünmekte bu da kadınların mutfaktaki bulunduğu zamanı ve mutfak işlerini yapma yönündeki motivasyonlarını azaltmaktadır. Bu durum kadınların bir taraftan sıkıldıkları kadar keyif aldıkları, sergiledikleri performansla kazandıkları beğeni, takdir ve ev içinde yaptıkları işin görünür olduğu bir alanı kaybetmeleri anlamına da gelmekte bu nedenle erkeklerin mutfağa girişine kontrollü olarak izin vermektedirler. The central question for this research is, how kitchen has been given a meaning by the user in the house and how and by whom these meanings are produced and circulated? Kitchen, which is constructed as a center of consumption in the house, is a space of consumption where both reproduction activities take place in addition to the meaning production. In this context, my aim with this research is to understand the importance for its user and the meaning that are produced around this importance. I conducted in-depth interview with semi-structured questions with thirty women with different economic and cultural capital during the period of September 2013- March 2014. The interviews took palce in the kitchens of the houses in the districts of Ankara, such as Sincan, Etimesgut, Elvankent, Fatih, Esat, Ayrancı, Ümitköy, Çayyolu, Balgat, Keçiören. In some of these interviews, when the primary user of the kitchen was a man, the interviews were conducted with the couple. During the analysis of the data I collected through the interviews with women with different occupations, (journalist, academic, teacher, producer, export expert, housekeeper, nurse, doctor or unemployed), education levels (university graduate or illiterate), ages (between 25-60 ages), my relation with kitchen, my experience in the kitchen and my observations during the interviews in the kitchens of these women provided me an in-depth understanding about the issue.Besides the feminist literature about home being the primary source for the subordination of women in the private sphere, women have strong relations with home and they are connected with strong bounds. For women, home means having a family, having an order and a new life. As a result, having their own house is the biggest dream for these women. Although the significance of kitchen in the house is wiped out through the emphasis on the routine, boring and subordination duties, women see kitchen as a space what makes a home and without that there would not be a home. In cases where the kitchen is just a space in the house, the kitchen is not alive. On the other hand, the kitchens where food is prepared, there is warmth physically and emotionally as the space is a gathering place for the family members as well as friends, serving as a place for sharing and socializing. Although others can access the kitchen, the dominance in the kitchen belongs to owner women and they don't want to lose the control they have in the kitchen. Although sometimes women feel oppressed with the routine in the kitchen, they can transform this space into a place of joy through cooking. In the kitchens, cooking for feeding the family and making them happy also serves as a strong means for women to gain appreciation and admiration. The scoop can be the symbol of the dominance of the elder women over the younger ones in some cases. However, in others it can be used as a symbol of dominance over the husband through the good cooking practices or a symbol of sharing the responsibilities in the cases where men are active users of the kitchen. In contrast to the legitimation of the women's existence in the kitchen through responsibility, duty and need, when the chief users of the kitchen are men, the explanation is done with a focus on the joy taken from cooking. These men reflect a common reason that their wives are not good at cooking. However, such expressions reduce the wives' interest in cooking and the other work in the kitchen. In a sense, this means losing the space for gaining admiration and appreciation for women with their performances through cooking and making their efforts in the private sphere visible through the actions in the kitchen. That's a common reason for women to give permission to men to access their kitchen. 381

Türkiye'de ticari mutfak sektörünün geçmişi Batılı ülkelerindekine nazaran çok eski değildir. Sektör, 1982 yılında kabul edilen 2634 sayılı Turizmi Teşvik Kanunu ile başlayan otel yatırımları ile ivme kazanmıştır. Bugün yılda yaklaşık 1 milyar Amerikan Doları Pazar büyüklüğüyle, son 10 yılda, yıllık ortalama %10 büyüme hızıyla, ticari mutfak sektörü ülkemizde giderek fark edilir olmaktadır. Türkiye'de sektörün önde gelen firmalarının ihracat rakamları toplam 4 milyar Amerikan Dolarını bulmaktadır. Mutfak yatırımının planlanması ve projelendirilmesi konusunda, Türk yatırımcısının bilgisi ve ilgisi oldukça sınırlıdır. Bu nedenle mutfak yatırımında, mutfağın işlevselliği, verimliliği, enerji tasarruflu olması, doğru donanım seçimi gibi önemli konular gerektiği şekilde dikkate alınmayıp, genellikle ucuz olan seçenek tercih edilmektedir. Diğer yandan bir otelin genel karlılığını ve yatırımının geri ödeme süresini doğrudan etkileyen yiyecek içecek birimlerinin titizlikle planlanması gerekmektedir. Turizm yatırımcılarının mutfak konusuna gereken önemi vermedikleri görülmektedir. Çoğu zaman mutfak, alımı sona bırakılan bir kalemdir ve yatırım bütçelerinin sıkıştığı zamana denk geldiğinden, hak ettiği finansal özveriyi görmemektedir. Bu nedenle ucuz alımlar tercih edilmekte, sahip olmanın toplam maliyeti göz ardı edilmektedir. Mutfak sektörünün kullandığı temel girdi olan paslanmaz çeliğin tamamının ithal olması, kullanılan bazı donanımların yabancı menşeili olmaları nedeniyle, bu alandaki yanlış yatırım, aynı zamanda ülke kaynaklarının zayi olması anlamına gelmektedir. Bir yatırımcının mutfak tasarımı ve mutfağın yatırım yönetimi konusunda uzman olması beklenemez fakat tasarım ekibi ile görüş alışverişinde bazı temel ilkelere hakim olması gerekli olacaktır. Bu tezde, mutfak yatırımında doğru planlama ve projelendirme ilkeleri detaylandırılmıştır. İlaveten yatırımcıya ve üçüncü kişilere, temel alınan evrensel prensipler ışığında yalın ve öz bilgiler sunulmuştur. Bu bilgiler yatırımı, mümkün ve karlı kılacak bilgilerdir. Doğru planlama ve projelendirmenin yatırımcılara sağlayacağı avantajlar finansal örneklerle duyarlılık testleri yapılarak alternatif senaryolara göre sunulmuştur. Commercial kitchen industry in Turkey does not have a long history as in western countries. This industry gained momentum with the hotel investments that had started by the Tourism Incentive Act 2634 dated 1982. Today, with the market size of 1 billion USD and with an annual growth rate of 10% over the last decade, industrial kitchen sector has become one of the increasingly prominent sectors of the country. At the moment, sector's leading manufacturers export figures total up to around 4 billion USD per year. However; Turkish investors have very limited knowledge and consideration on planning and project designing of the commercial kitchen. Consequently, they usually invest in the cheaper option, ignoring the functionality, efficiency, energy savings and appropriate equipment determination. On the other hand, food and beverage outlets that directly influence both the payback period of the investment and the overall profitability of the company, require more elaborate planning. It is observed that, tourism investors in Turkey do not show enough importance to this particular issue. Generally, the purchase of kitchen is left to the last minute where the budget already become tight and so it does not require the attention it deserves in many situations. In these cases, usually the cheaper option is taken into consideration and the total cost of ownership is often ignored. Since the main input of commercial kitchen industry, namely stainless steel is completely being imported and most of the components used in this industry are of foreign origin, wrong investments in this field mean wasting country's resources as well.Surely, an investor doesn't have to be an expert in kitchen designing and investment but he or she should be aware of the fundamental principles in this area while discussing the requirements with the design team. In this thesis, sound planning and project designing principles have been elaborated. In addition to that, in the light of universal principles, the related information has been presented to the investors and to the third parties in a plain and simple fashion. It is expected that these information and principles will make a project feasible and more profitable. Furthermore, it will be shown by financial case studies that how sound planning and project designing will make an investment more lucrative. The differences between the industrial produced kitchen and the singular house kitchen, concepts like mass production , standardization and standards, quality are defined. Studies on present and past experiences have created a resource to future kitchen. Also, regarding to the researches of the companies like IKEA, Electrolux and Siemens the examples and future estimates are pointed out.In the fourth chapter, the kitchen's changes until today in public housing is investigated.The location of the kitchen in the house, the percentage of it in the area and the development of the relationship between kitchen andthe other residential interiors, shown through various housing schemes. The kitchen plan types of today's housing, volumetric adequacy of equipment and storage areas were investigated. The satisfaction survey's results which is made with people living in public housing were included.In conclusion,at the triangle of the kitchen firms, construction companies and clients formed in this sector, inadequacies and dissatisfactions are expressed; today's plans, equipments and future kitchen related conclusions and recommendations are made. 253

Neste relatório será destacado o desenvolvimento do projecto de cozinhas, envolvendo aspectos de natureza técnica, estética, funcional e económica e os condicionamentos relativos à personalização do espaço da cozinha em função do espaço existente e preferências do cliente, apontando para soluções de compromisso que transmitam sensações de unidade, coerência e conforto. The work developed in-house Casa Peixoto was comprehensive and included the sales of appliances, furniture, decoration, coatings and design of kitchens. This report will highlight the project's development kitchens, involving aspects of technical, aesthetic, functional and economic constraints relating to the customization of the kitchen space as a function of existing space and customer preferences, pointing to compromise solutions that transmit sensations of unity, consistency and comfort.
