The home food environment (HFE), the availability and accessibility of foods and food products within the home, has a strong influence on healthy eating behaviors. Studies assessing the HFE commonly utilize a home food inventory (HFI) for data collection. However, this approach tends to be burdensome for participants. This study validated a low-burden digital photo method for assessing the home food environment and confirmed that this method is preferred by participants. Study participants completed an HFI, submitted photos of household foods, then identified preference for the HFI or photo reporting method. Researchers completed an HFI based on each participant’s photo submissions. Researcher-to-participant and researcher-to-researcher comparisons were made through ANOVA and randomized block analyses to determine concurrent validity and inter-rater reliability. Method preference was assessed using the Z-test. The participant group (N = 53) was predominantly female (68%), young adult (90.5%), and Hispanic or Latino (71.7%). Concurrent validity was initially moderate (ĸ = 0.54); adjustments yielded substantial agreement (ĸ = 0.61). The inter-rater reliability (p = 0.98) demonstrated significant consistency among reviewers. The photo-documentation method was found to be valid and preferred (p = 0.01) for reporting on the HFE. The photo method can be used advantageously to collect quality data.

Snacking occasions have increased in frequency and energy density in recent decades, with considerable implications for diet. Studies have linked presence of foods in the home with intake of those foods. This study examines home snack food inventories among a large sample of U.S. adults using latent class analysis findings to present latent classes of home snack food inventories and multinomial regression to model classes as correlates of percent of calories from fat. Participants (n = 4,896) completed an online household food environment survey including presence of 23 snack foods in the home and demographics. Less healthy snack foods were more commonly reported than healthier snack foods (M = 4.3 vs. M = 3.5). Among White and Latinx participants, high-income households reported greater numbers of both healthier and less healthy snack foods than lower income households, with larger income-based differences in inventory sizes for healthier snack foods. Latent class analysis revealed three classes by inventory size (Small, Medium, and Large) and three classes by inventory content (Healthy Snacks, Standard American, and Limited Standard American). Compared with the Small Inventory class, the Healthy Snacks class had lower caloric intake from fat (p =.002), the Large and Medium Inventory classes had much higher caloric intake from fat (p <.0001), and Standard American and Limited Standard American class members had somewhat higher caloric intake from fat (p <.0001, and p =.0001, respectively). Future research should explore the role of snacks in Americans' diets, their impact on diet quality and health, and how interventions can support healthy home food and snack food environments to foster healthy eating. To evaluate whether food planning behaviors mediate the relationship between a reported weight loss attempt and the home food environment (HFE). Secondary data analysis of 4 home visits, included collecting an objective home food inventory of the HFE and self-reported food planning behaviors. There were 196 participants (mean age, 44.4 years; 83.7% female). The percentage of obesogenic foods and fruits and vegetables (FV). Four regression analyses to test mediation. Meal planning and grocery list use did not explain the relationship between a weight loss attempt and obesogenic foods or FV in the home (P > 0.05). Post hoc analyses that examined participants with a body mass index of >25, >28, and >30 found that a weight loss attempt was associated with fewer obesogenic foods. In contrast, mediation analyses with planning behaviors and associations with FV in the home were nonsignificant (P > 0.05). Obesity was more indicative of the HFE than making a weight loss attempt. A weight loss attempt was not associated with food planning behaviors, which may be used for multiple reasons, including organization and time management. Future studies should evaluate individual differences in strategies to create a healthy HFE in the context of a weight loss attempt. [ABSTRACT FROM AUTHOR]

This project evaluated the capacity of the Home Inventory to Describe Eating and Activity, version 2 (Home-IDEA2) to capture HFE quality by measuring the presence or absence of household foods. Validity was tested using a modified application of the Healthy Eating Index-2010 (HEI). Comparative data were drawn from the National Food Acquisition and Purchase Survey (FoodAPS) Food-at-Home Public Use File. HEI scores were calculated for 4202 households in FoodAPS using Home-IDEA2 inventories and full reported inventories. Paired t-tests compared: (1) estimated vs. total edible grams (EEG; TEG); (2) limited vs. all reported foods; and (3) EEG + limited foods vs. TEG + all reported foods. Sensitivity and range of scores were compared. Mean HEI scores for Home-IDEA2 were higher (p < 0.003) than FoodAPS: (1) 51.6 ± 16.1 vs. 49.6 ± 18.1 (food amounts); (2) 53.5 ± 15.8 vs. 49.8 ± 15.4 (food items); (3) 55.5 ± 15.7 vs. 49.8 ± 15.4 (full instrument); differences were small. Scores demonstrated comparable sensitivity and range. The study found that the Home-IDEA2 can capture HFE quality adequately with low data collection burden.

Abstract: Purpose: Rural residents are significantly more likely to be overweight and obese than are urban residents. However, few data have compared weight control program responses in these population groups. Therefore, the primary aim of this study was to evaluate the weight loss outcomes of participants in a multisite, online behavioral intervention by residential location (rural vs urban) and, second, assess any possible differences in adherence to treatment goals. Methods: A total of 492 adult participants (mean BMI = 35.7 kg/m2; 90% female; 24% minority) were categorized based on their home ZIP code and the 2010 US Census Urban and Rural Classification criteria (58.3% rural; 41.7% urban). Weight (kg) was measured in‐person at baseline and 6 months after participating in a behavioral weight control intervention. Adherence to physical activity and calorie and fat intake goals was assessed based on weekly self‐monitoring journals. Weekly online chat attendance and completion of weekly online self‐monitoring journals were recorded. Presence of obesogenic foods in the home was self‐reported at baseline and 6 months. Findings: There were no statistically significant differences in weight loss between rural and urban participants (‐6.1 kg vs ‐5.3 kg, P = .16), nor were there differences in chat attendance, self‐monitoring journals, self‐reported physical activity, calorie intake, or obesogenic foods reported in the household. Conclusions: Overall, there was no difference in weight loss and adherence to treatment goals for rural and urban participants. Further research on rural and urban residents is necessary to explore the factors responsible for the disparity in obesity prevalence. [ABSTRACT FROM AUTHOR]

Summary: Objective: The objective of this study was to determine whether there is an association between under‐reporting of body weight and social desirability as is found with self‐reports of energy intake. Methods: Twenty‐seven lean individuals (mean body mass index ± standard deviation = 21.6 ± 2.0 kg m−2) and 26 individuals with obesity (mean body mass index = 35.4 ± 4.8 kg m−2) were e‐mailed a questionnaire on which they had to state their body weight and conduct a home food inventory. The next day, research team members went to their homes to weigh the participants, conduct their own food inventory and administer the Marlowe–Crowne scale for social desirability. Results: Among individuals with obesity, lower social desirability scores were associated with a greater degree of under‐reporting body weight (r = +0.48, p < 0.02). Among lean individuals, the correlation was negative but statistically non‐significant (p = −0.22, p > 0.10). Nine individuals with obesity were extreme under‐reporters (2.27 kg or more), and eight of these had social desirability scores in the bottom half of the Marlowe–Crowne scale (p < 0.01). Six under‐reported on the home food inventory by three or more items. Conclusions: Individuals with obesity and low social desirability scores are more likely than others to be extreme under‐reporters of body weight, possibly due to a lack of awareness of their own weight. Objective: To determine the extent to which the presence and accessibility of healthful and less healthful foods in children's homes vary with level of food security. Methods: A total of 41 parents or primary caregivers who had at least 1 child ages 2-13 and resided in a low-income area with limited food access completed a home food inventory and a validated measure assessing household food security. Results: Compared with food-secure participants, marginal or low/very low food-secure caregivers reported significantly more obesity-promoting foods in the home, more microwavable or quick-cook frozen foods, and greater access to less healthful foods in the kitchen (all Ps < .05). Conclusions and Implications: Given the greater presence and accessibility of less healthful foods, targeting home food environment may improve diet quality and health status in children of low-income, food insecure households. ObjectiveTo refine and validate an existing home food inventory (HFI) for low-income Somali- and Spanish-speaking families.DesignFormative assessment was conducted using two focus groups, followed by revisions of the HFI, translation of written materials and instrument validation in participants’ homes.SettingTwin Cities Metropolitan Area, Minnesota, USA.SubjectsThirty low-income families with children of pre-school age (fifteen Spanish-speaking; fifteen Somali-speaking) completed the HFI simultaneously with, but independently of, a trained staff member. Analysis consisted of calculation of both item-specific and average food group kappa coefficients, specificity, sensitivity and Spearman's correlation between participants’ and staff scores as a means of assessing criterion validity of individual items, food categories and the obesogenic score.ResultsThe formative assessment revealed the need for few changes/additions for food items typically found in Spanish-speaking households. Somali-speaking participants requested few additions, but many deletions, including frozen processed food items, non-perishable produce and many sweets as they were not typical food items kept in the home. Generally, all validity indices were within an acceptable range, with the exception of values associated with items such as ‘whole wheat bread’ (κ = 0·16). The obesogenic score (presence of high-fat, high-energy foods) had high criterion validity with κ = 0·57, sensitivity = 91·8 %, specificity = 70·6 % and Spearman correlation = 0·78.ConclusionsThe revised HFI is a valid assessment tool for use among Spanish and Somali households. Abstract: Home food inventories of Oaxacan Mexican-American and African-American families of low-socioeconomic status living in an urban area in New Jersey with at least one child under the age of 12 were conducted using Universal Product Code scanning. The African-American and Oaxacan household food supplies were compared with a sample of White households, also with at least one child under the age of 12, not of low-socioeconomic status. Nutrient Adequacy Ratios for total fat, saturated fat, cholesterol, sodium, total carbohydrate, sugar, dietary fiber, protein, vitamin A, vitamin C, calcium, and iron were used to quantify the adequacy of household food supplies per 2000cal. The food supplies of the White households had significantly more calcium, vitamin A, and sugar and less total fat than the other two samples. The home food supplies of African-American households contained significantly less vitamin C than White and Oaxacan households. Compared to both other samples, Oaxacan household food supplies were lower in protein, sodium, and iron. Per 2000cal, African-American households had the lowest supply of nutrients recommended to be maximized (i.e., vitamin A, vitamin C, calcium, iron, protein, and dietary fiber) and highest supply of nutrients to be minimized (i.e., total fat, cholesterol, sodium, and sugar). Overall household food quality scores were lowest for the African-American sample with no differences between Oaxacan and White household food supply quality scores. [Copyright &y& Elsevier]

Both the physical and social home food environment (HFE) are believed to influence dietary intake and diet quality, but few studies have examined both aspects together. The purpose of this study was to examine the relationships among the physical and social HFE, dietary intake, and diet quality in mothers and children. This was a cross-sectional substudy of a larger study. The study included 24 mothers (aged ≥30 years) with a biological child aged 6 to 12 years living in the Newark, DE, area between June and November 2018. The outcome measures of interest included the physical HFE (ie, home food availability); aspects of the social HFE (ie, parenting styles, family meal frequency, and policies); maternal and child intake of fruits, vegetables, sugar-sweetened beverages, and snacks; and diet quality using the 2015 Healthy Eating Index total score. Pearson correlations were used to examine the relationship between physical HFE and dietary intake as well as social HFE and dietary intake in both mothers and children. The relationships were further examined through exploratory regression analyses. In mothers, fruit availability in the physical HFE was correlated with fruit intake (r = 0.50; P = 0.02). Fruit and vegetable availability in the physical HFE were correlated with 2015 Healthy Eating Index total score in both the mother and child. Family meals participation was correlated with dietary intake (vegetable intake in children, r = 0.44; P = 0.04; and snack intake in mothers, r = –0.74; P <.001). Exploratory regression analysis showed vegetables in the HFE was associated with vegetable intake and 2015 Healthy Eating Index total score in mothers, and fruits and vegetables in the HFE were associated with child 2015 Healthy Eating Index total score. Family meals participation was negatively associated with maternal snack intake and child sugar-sweetened beverages intake. Authoritative parenting was negatively associated with child snack intake and permissive parenting was negatively associated with mother's fruit intake. Both the physical and social HFE are associated with maternal and child dietary intake, but only the physical HFE was associated with dietary quality. Although preliminary, these data indicate the importance of future studies that include measures to assess both the physical and social HFE to better elucidate the influences of the HFE on dietary intake.
