The year 2020 celebrated the tenth anniversary of the recognition of the Mediterranean Diet as Intangible Cultural Heritage of Humanity by the UNESCO Intergovernmental Committee. This event represented a milestone in the history of nutrition, as the Mediterranean diet was the first traditional food practice to receive such award. Since then, a lot has been discussed not only on the beneficial aspects of the Mediterranean diet, but also on its complex role as a lifestyle model that includes a set of skills, knowledge and intercultural dialogue. This process ended up with the recognition in 2019 of Mediterranean diet as a possibly universal model of healthy diet from the EAT-Lancet Commission. These concepts were widely debated at the 2019 "Ancel Keys" International Seminar, held in Ascea (Italy) (for more information see: www.mediterraneandietseminar.org) with the aim to stimulate interest and awareness of a young group of participants on the current problems inherent to the effective implementation of the Mediterranean diet. The present article collects the contributions of several lecturers at the Seminar on key issues such as methodological and experimental approach, sustainability, molecular aspects in disease prevention, future exploitation, without neglecting a historical view of the Seven Countries Study. From the Seminar conclusions emerged a still vibrant and modern role of Mediterranean diet. The years to come will see national and international efforts to reduce the barriers that limit adherence to Mediterranean diet in order to plan for multi-factorial and targeted interventions that would guide our populations to a sustainable healthy living. Целью исследования является рассмотрение этнографических зарисовок как способа пищевой идентификации представителей данных народов, одного из маркеров «инаковости» «чужих» в текстах византийский авторов. При работе с византийскими полемическими, историографическими и эпистолографическими сочинениями византийских интеллектуалов учитывались жанровая специфика произведений, ориентация авторов на использование традиционных риторических моделей, стремление подражать языку и стилю древнегреческих и римских авторов, а также использование аллюзий на тексты Священного Писания. В работе рассматриваются примеры неоднозначного отношения византийских авторов к совместным трапезам с турками. Показано, что оценочные суждения одного и того же автора, касающиеся совместного принятия пищи с турками, могли кардинально отличаться. На оценки автора в конкретном случае могли оказать влияние как личное отношение к участникам трапезы, так и сиюминутное настроение, самоощущение, а также его вкусовые предпочтения. Различия в пищевых пристрастиях монголов, турок, латинян, упомянутые в сочинениях поздневизантийских авторов, нередко использовались для описания представителей иной культуры в негативном свете и имели мало общего с историческими реалиями, поскольку являлись своеобразной инверсией византийских представлений о нормальной, «культурной» еде, которую должно употреблять в пищу. Установлено, что эти описания нередко воспроизводили стереотипы относительно особенностей питания «варваров», а также кочевых народов, бытовавшие в обществе и письменной традиции со времен Античности. This article presents the analysis of the accounts of the Late Byzantine writers about the food traditions and preferences of the Turks, Mongols, and Latins according to the works of Manuel II Palaiologos, George Pachymeres, Constantine Stilbes, and Demetrios Kydones. The aim of the investigation is to consider ethnographic accounts at Byzantine written sources as a way of food identification of the peoples and a marker of the “otherness” of “strangers” in the texts. The analysis of historical evidence of polemical, historiographical, and epistolographic works of the Byzantine intellectuals is complicated due to the nature of the kinds of Byzantine written sources. It is taken into account that the Byzantine authors often used traditional rhetorical models, imitated the language and style of ancient Greek and Roman authors and regularly used the allusions to the texts of the Holy Scriptures in their written works. The examples of the Byzantine authors’ ambiguous attitudes to joint meals with the Turks are considered in the paper. It has been shown that the judgments regarding joint meals with the Turks made by the same writer sometimes significantly vary. In some cases, the author’s estimation could be influenced by the personal attitude towards the participants in the meal, and his mood, self-awareness, as well as his taste preferences. The differences in the food habits of the Mongols, Turks, and Latins mentioned in the writings of Late Byzantine authors were often used to describe representatives of a different culture in a negative light and had little to do with historical realities, since they were a kind of inversion of Byzantine ideas about normal, “cultural” food, which should be eaten. It has been determined that these accounts often reproduced the stereotypes regarding the eating habits of the “barbarians” and nomadic peoples, which existed in Byzantine society and written tradition from the Antiquity on. Summary. Objective is to analyze the adaptation of European food traditions in Ukraine on the example of the historical development of the confectionery industry. Methodology of the research ‒ the principle of historicism, which allowed us to reveal the ways of transfer and transformation of food traditions. The scientific novelty is to find out the type of conversions, the quality and nature of borrowings, examples of local adaptation, and their historical background. Conclusions. 1. An industrial revolution that needed mass consumption and, accordingly, could provide cheap counterparts to traditional sweets played a significant role in adaptation. 2. The raw material basis for the development of the industry was formed only during the nineteenth century. 3. The location of Ukraine at the crossroads of geopolitical interests has shaped different spheres of influence, and, accordingly, the variety of regional sweets, which is later preserved in the factories range. Thus, the Ottoman rule in the Northern Black Sea, despite the recolonization of the region after the Russo-Turkish wars, has preserved the traditions of Eastern sweets in the culture of the Ukrainian South. 4. Based on the analysis of archival documents and periodicals, an analysis of the assortment of confectionery factories of Ukraine was made, which made it possible to compare them with the corresponding assortment of European factories and to trace the interweaving of the local food tradition and its combination with the European traditions (for example, Ukrainian adaptation of biscuits and local traditions in forming a recipe of Ukrainian gingerbread compared to Polish and English analogues of this product). 5. Spreadingof chocolate technologies was a multilayered process: those technologies were transported from Vienna to Poland and Ukraine actually at the same time. Thus, we got a blossoming industry of chocolate making in Lviv. On the other hand, the transition from the craft to the factory stage of the development of the industry was far more difficult in Western Ukraine, due to position of this region as an agrarian in the common structure of the Austro-Hungarian Empire., Анотація. Мета дослідження – проаналізувати адаптацію європейських харчових традицій в Україні на прикладі історичного розвитку кондитерської галузі. Методологія дослідження – принцип історизму, який допоміг нам послідовно розкрити шляхи передачі та трансформацію харчових традицій. Наукова новизна полягає у з’ясуванні типу перетворень, якості та характеру запозичень, прикладів місцевої адаптації та їх історичного підґрунтя. Висновки. 1. Визначну роль в адаптації відіграв промисловий переворот, котрий потребував масового споживача та, зрозуміло, міг забезпечити дешевими аналогами традиційних солодощів. 2. Сировинне підґрунтя для розвитку галузі сформувалося лише у ході ХІХ ст. 3. Розташування України на перехресті геополітичних інтересів сформувало різні сфери впливу, і, відповідно, розмаїття регіональних солодощів, що пізніше збереглося і у фабричному асортименті. Так, панування Османської імперії у Північному Причорномор’ї попри реколонізацію цього регіону після російсько-турецьких війн зберегло традиції східних солодощів у культурі українського Півдня. 4. На основі аналізу архівних документів та періодичних видань охарактеризовано асортимент кондитерських фабрик України що дало підставу порівняти їх із відповідним асортиментом фабрик європейських, прослідкувати сплетіння місцевої харчової традиції та її поєднання із загальноєвропейськими традиціями, як, наприклад, українська адаптація бісквіту та традиції вживання вторинних злаків при формуванні рецептури пряника українського в порівнянні із польськими та англійськими аналогами цього виробу. 5. Проведено аналіз запровадження і розповсюдження інновацій на прикладі технології шоколаду, що одночасно набув поширення у Західній Україні та Польщі, просуваючись від Відня як тогочасного центру кондитерських інновацій. Водночас перехід від фабрично-мануфактурної, до фабричної стадії розвитку галузі проходив у Західній Україні значно важче, позаяк зумовлювався аграрно-сировинним спрямуванням цього регіону у структурі Австро-Угорської імперії.

Food traditions all over the world are different. It differs according to religion, specific culture, climate for which different spices and certain crops are produced only in a specific place. Since India and Ukraine both differ in season, climate, crops and mainly the different methods of cuisine. The aim of the article is to give the comparison between food traditions in India and Ukraine. So as to thoroughly compare the food traditions between the two countries, each comparison will be taken at each step.

Another one that we do we learned from my Grandma Williams and we make cinnamon roll dough and make them into a triangle and cover them in cinnamon and sugar then fold them up, cut the edges, twist them into a Christmas tree and we decorate them with candy and icing and then we’ll take them out to neighbors. And it's the best because its super tasty cause we usually keep some for ourselves and its super warm cause we’re inside and everyone is usually super happy unless we’re fighting over whose tree is best and then there are arguments and people steal other peoples candy. And a lot of times we’ll listen to Christmas music while we do it.

In the last decade, the local food movement has achieved a growing popularity in the Italian food system. Nevertheless, the Italian food market still lacks a shared definition and labels indicating the local origin of the food products. In this study, we explore the meaning of “local food” in the Italian market using a qualitative approach. Results from twenty-three individual semi-structured interviews show that the meaning of “local” should be explained more in terms of connection between a community traditions and a geographical area than in terms of food miles.

The extensive distribution of the distinctive pottery associated with the Early Transcaucasian ‘ phenomenon’ (known also as the ETC, Kura-Araxes, Yanik, Karaz and Khirbet Kerak cultures) has long posed a complex puzzle for archaeologists. The problem has attracted various explanations based on three main themes— migration, nomadism or metallurgy— as each generation updated the precise scenario to fi t current paradigms. This paper considers the macro-scale ‘ systemic-structural’ relationship of the ETC to its neighbours, especially the Uruk phenomenon, by comparative examination of food traditions, idiosyncratic modes of craft and exchange, and the management of space. The results emphasize those aspects that make the ETC phenomenon distinct, and allow us to put forward a tentative scenario, which may account for its longevity and intriguing phases of expansion and contraction., La diffusion très étendue de la poterie caractéristique associée au phénomène de l’Early Transcaucasian Culture (connue sous les noms de cultures ETC, Kura-Araxe, Yanik, Karaz et Khirbet Kerak) a longtemps constitué une énigme complexe pour les archéologues. Ce problème a suscité des explications variées, fondées sur trois thèmes principaux – migration, nomadisme ou métallurgie –, chaque génération mettant au point un scénario précis qui corresponde aux paradigmes en cours. Любое издание подобного рода должно анализироваться в единстве двух аспектов — синхронического и диахронического, поскольку важно не только понять, как изначально была сформирована структура текста, но и проследить, какие изменения происходили от издания к изданию. Цель данного исследования — проанализировать трансформации советской идеологии и их опосредованное воплощение в тексте «Книги о вкусной и здоровой пище». Важной особенностью исследования выступает идея о том, что идеологический посыл содержится не только в прямых сентенциях вводных статей, но и «считывается» в рекомендациях, данных в «Заметках на полях» и вводных статьях, предваряющих рецептурные разделы. Важной задачей выступает выявление в структуре текста модели нового общества и способов ее закрепления в гастрономических практиках советского человека. The article is devoted to the cult of Soviet-era edition of “The Book of Delicious and Healthy Food”. Any publication of this kind must be analysed in the unity of the two aspects –synchronical and diachronic, because it is important not only to understand, how the structure of the text was originally formed, but also to see what changes have occurred from edition to edition. The objective of this study is to analyze the transformation of Soviet ideology and its indirect expression in “The Book of Delicious and Healthy Food”. An important feature of the study supported the idea that the ideological message is contained not only in direct introductory articles, but also “read” in the recommendations in the “Notes on the margins”, introductory articles, recipe sections. An important task is to identify in the text structure a model for a new society and the ways it was imposed through gastronomic practices of the Soviet citizen.

Culinary Diplomacy (also known as Gastrodiplomacy) is a peace tool of soft international influence on society and business (��soft power��), effective tools of modern foreign policy and economic diplomacy. In fact, it is a science about the art of negotiating during official dinners. In the world of politics note that ��... the way to a consensus and to achieve the goal goes through an delicious meal�� (diplomatic gourmandise). Food actually helps also to the emergence of the right time for toasts and speeches, certain words helps to ��digest�� the conditions of the final document, memorandum, agreement, deal or contract to be signed. The claim that the cuisine is the hallmark of any state is a stable constant, which does not require additional arguments in favor, but requires study and generalization of the experience.

To understand the meaning that nutritionist has of the folk knowledge about feeding. Methods: This is a qualitative study with a group of 34 nutritionists from the Metropolitan Area of the Valle del Aburrá (Medellin-Colombia), belonging to governmental and not governmental entities, who work in educational programs of health promotion. Conclusions: this study found that Nutritionist-Dieticians receive influence from the biomedical western medicine model in their professional training. Although nutritionists appreciate folk knowledge; they feel that it is a barrier for their professional practice, and for this reason they prefer to work under the traditional biomedical model, which does not allow establishing real communication between them and the people who they are working with. RESUMEN: comprender el significado que tiene para el nutricionista dietista el saber popular en alimentación. El enfoque investigativo utilizado fue el cualitativo y se abordó con una aproximación metodológica que permitió la co-construcción del tema en forma grupal para encontrar el sentido que tiene el saber popular en alimentación para dichos profesionales. Método: investigación cualitativa, con un grupo de 34 nutricionistas dietistas del Area Metropolitana del Valle del Aburrá (Medellín-Colombia), pertenecientes a entidades gubernamentales y no gubernamentales, que laboran en programas educativos de promoción de la salud. Conclusiones: la gran influencia del modelo biomédico entre estos profesionales, el cual se constituye como un subuniverso de significados a través del cual interpretan y normatizan el mundo de las personas en términos de alimentación y nutrición. El nutricionista dietista en su definición valora el saber popular, pero al confrontarlo con el modelo biomédico, lo subvalora y desdeña y lo siente estorboso en su quehacer.

The most obvious way to study food traditions by the means of social philosophy: ���if we share a meal with Other, then we join the being of Another���. Not less evident, but more promising is the analysis of food traditions in connection with a concept ���metaphysics of place���. As ���we are the same we eat��� (F. Brodel), the only way is to understand the country���s culture only taking into account its food traditions.

This thesis focuses on the Márkomeannu festival’s contribution to the revitalization of food traditions. The study was conducted on the Márkomeannu festival in Skånland in Troms County, specifically in the Markasami areas in the rural hills of Skånland. The festival was chosen because it is an important arena for expression of indigeneity and culture. Many areas within the Sami community have suffered from assimilation and have afterwards gone through a process of revitalization. The process of revitalization of the culture, language, politics and history has been thoroughly studied and written about, but the revitalization of Sami traditional food has not been studied in detail. Food is an important cultural marker which works as building stones of each cultural foundation. Food can be both symbolic and be a purely practical necessity for a culture. The thesis establishes that some traditional dishes are adopted and adapted from international dishes. The results shows that traditional dishes are used to articulate the Sami culture, and that traditions can be adapted to a modern outlook, and also adapted to fit a Sami cultural profile. Márkomeannu as a cultural arena contributes to revitalization of food by creating a platform for cultural expression which can lead to a stronger Sami identity and a feeling of safety in expressing culture.

Food traditions form part of humanity’s patrimony. They have contributed to the identities of people, to their food security and to an intimate relationship with the natural environment. The loss of these food traditions threaten with eroding human well-being. This article explores the principal causes of these losses and proposals for their conservation. Las tradiciones alimentarias son parte del patrimonio de la humanidad, pues han contribuido con las identidades de los pueblos, a su seguridad alimentaria y a una relación íntima con el ambiente natural. La pérdida de estas tradiciones alimentarias amenaza con erosionar el bienestar humano. Este artículo explora las principales causas de esta pérdida y propuestas para su conservación.

This paper is focusing on the framework, the challenges and the specific content of this special issue about Nordic Food Culture(s). The three co-editors first indicate how this issue is based on two exploratory workshops, held in 2012 and initiated by the Joint Committee for the Nordic Research Council for Humanities and Social Sciences (NOS-HS). After providing a short overview of the construction of national identities in the Nordic region, the authors deal with the role of food and its cultural meaning in Nordic cultures. This leads to deeper insight into the central concepts of Nordic culture and food culture, questioning the possible meanings, roles and significances of “Nordic food culture(s)” in an academic context. This paper eventually presents the contents of this issue, in the form of a “menu”, which includes starters, main courses (peer-reviewed articles) and desserts. Cet article discute le contexte, les défis, le cadre scientifique ainsi que les textes présentés dans ce numéro spécial sur la/ les culture(s) de l’alimentation nordique(s). Les trois co-rédacteurs rappellent tout d’abord que ce numéro spécial d’AoFood est issu d’une série de séminaires, tenus en 2010 et initiés par le Conseil de la Recherche Nordique en Sciences Humaines et Sociales (NOS-HS). Après un rapide aperçu concernant la construction des identités nationales dans la région nordique, les auteurs examinent le rôle de l’alimentation et sa valeur culturelle dans les cultures nordiques. Cela conduit à une réflexion sur les concepts, fondamentaux dans ce numéro, de culture nordique et particulièrement de culture de l’alimentation, stimulant le lecteur quant aux sens, à l’importance et aux significations de la/les « culture(s) de l’alimentation nordique(s) » dans le cadre de la recherche scientifique. Cet article s’achève sur une présentation détaillée du contenu du numéro, sous la forme d’un « menu », constitué d’entrées, de plats de résistance (articles scientifiques évalués par des relecteurs) et de desserts.

This article draws on data from a study undertaken many years ago on Dogon food sources, cooking practices and classification of foods. Comparison with recent observations confirms that little has changed since the fifties. These data, complemented by a study of the words used to refer to eating, drinking and distinguishing between tastes, are correlated with the great cultural preoccupations of the Dogon (the person, speech, fecundity) in order to shed light on the symbolic role played by natural substances in food traditions. This symbolic role is faithfully reflected in Dogon folktales referring to food, from which examples are selected., Cet article rappelle les principales données d'une enquête déjà ancienne sur l'alimentation dogon (ressources alimentaires, cuisine, classification des aliments) en les comparant avec quelques observations récentes qui prouvent que les choses ont peu changé depuis les années cinquante.
