Proizvodnja konzumnih jaja je grana koja se kontinuirano razvija i raste, kako u svijetu, tako i kod nas. Tijekom 2013. i 2014. godine u Republici Hrvatskoj nakratko je došlo do stagniranja u proizvodnji jaja, zbog smanjenja smještajnih kapaciteta, jer su proizvođači bili primorani svoju proizvodnju prilagoditi direktivi EU, ali već 2015. godine proizvodnja je stabilizirana. U ovome završnom radu prikazana je proizvodnja konzumnih jaja na farmi Petričević d.o.o., iz Starih Mikanovaca, koja je jedna od većih proizvođača konzumnih jaja u Hrvatskoj. Kapaciteta su 42 120 nesilica, koriste najnovije tehnologije u uzgoju te kontinuirano ulažu u proizvodnju prateći zahtjeve tržišta., The productionof table eggs is a branch that is constantly evolving and growing, both in the world and in our country. During 2013 and 2014, stagnation in egg production in the Republic of Croatia briefly occurred due to a decrease in capacity, as producers were forced to adapt their production to the EU directive, but already in 2015 production was stabilized. This final paper presents the production of table eggs on the farm Petričević d.o.o., from Stari Mkanovci, which is one of the largest producers of table eggs in Croatia. The capacities are 42 120 laying hens, using the latest technologies in cultivation and continuously investing in production following market demands.

Peradarstvo u Republici Hrvatskoj karakterizira visok stupanj industrijalizacije. U peradarstvo se uvode linijski hibridi zbog svojih poboljšanih reproduktivnih svojstava. Farma „Peradarnik“ smještena je u Gunji i na svojoj farmi se bavi proizvodnjom konzumnih jaja. U proizvodnji koriste kokoši nesilice pasmine Lohmann Brown. Farma je kapaciteta 5 500 tisuća komada kokoši koje dnevno snesu od 4 500 do 5000 jaja. Da bih se postigla visoka nesivost i dobri rezultati potrebno je osigurati optimalne uvijete boravka i pravilnu hranidbu. Na ovoj farmi hranidba se fokusira na starost kokoši i prema tome se sastavljaju obroci. Pa tako ova farma ima četiri vrste smjesa za hranidbu. Prva smjesa je za kokoši nesilice koje su tek ušle u proizvodnju tj. za kokoši koje su tek počele nesti. Druga smjesa je za kokoši nesilice od 29. tjedna do 45. tjedna. Treća je nakon 45. tjedna i četvrta nakon 65. tjedna. Kokši nesilice u proizvodnji budu godinu dana., Poultry farming in the Republic of Croatia is characterized by a high degree of industrialization. In order to achieve high results it is necessary to ensure the optimal conditions and proper feeding. At this farm, the feeding focuses on the hen's age and the meals are made according to it. And bearing that in mind this farm has four feeding mixtures. The first mixture is for hens that are just starting to produce, i.e. for those that have just begun to lay eggs. The second mixture is for hens that are 29 to 45 weeks old. The third is for those who have are more than 45 weeks old and the fourth for those more than 65 weeks old. Hens stay in production for a year.

Dissertação de Mestrado em Engenharia Zootécnica/Produção Animal As galinhas poedeiras podem ser criadas em quatro modos de produção, gaiolas, ar livre, no solo e biológico que diferem principalmente quanto ao tipo de alojamento e à alimentação fornecida. Além destes modos de produção, existem ainda ovos provenientes de animais alojados em gaiolas mas enriquecidos com ALA e ovos de galinhas poedeiras de raças portuguesas criadas em modo de produção biológico. Neste estudo, 144 ovos com origem nesses 6 diferentes modos de produção foram comparados. Os ovos foram analisados para o peso, cor da casca e da gema, pH, viscosidade, manchas de carne e de sangue, unidades Haugh, proteína da clara e perfil de ácidos gordos. Pelos resultados obtidos, relativamente a qualidade da clara medida pelas unidades Haugh, verificou-se que os ovos provenientes de animais em modo de produção biológico foram aqueles que apresentaram melhor qualidade. Os ovos de galinhas poedeiras criadas no solo, ao ar livre e biológico foram os que apresentaram menor percentagem de proteína na clara quando comparados com os ovos dos restantes tratamentos. Os ovos enriquecidos com ALA foram os que apresentaram o maior valor de ácidos gordos totais e n3-PUFA e menor valor de SFA em relação aos restantes tratamentos. ABSTRACT - Physical and chemical characteristics of eggs from differents production systems - There are four different laying hen production systems, cage, barn, free range and organic, which differ mainly on the housing type and also feed provided. In addition, there are also ALA enriched eggs from a cage system and an organic system which use only Portuguese breeds. In the current study, 144 eggs from these 6 different origins were compared. Eggs were analyzed for weight, shell and yolk color, pH, viscosity, blood and meat spots, Haugh units, albumen protein and yolk fatty acid profile. Our results found that organic systems eggs with the best albumen quality in terms of Haugh units. Eggs from hens in a free range, barn and organic production system presented lower albumen protein in comparison to the remaining treatments. Eggs that were enriched with ALA had higher total fatty acids and n3-PUFA and lower SFA than the other treatments.
