Dietary components and the development of metabolic dysfunction-associated liver disease (MASLD) are closely linked, but large-scale studies on dietary patterns and MASLD are scarce, most previous studies having focused on individual nutrients or foods rather than overall dietary patterns. Therefore, we aimed to investigate the association between dietary patterns and MASLD in Koreans. A total of 6,052 participants from the Korean Genome and Epidemiology Study. Dietary intake was assessed using a validated Korean semiquantitative food frequency questionnaire comprising 106 food items. Principal component analysis was used to determine the major dietary patterns. Cox proportional hazard regression analysis was performed to assess the association between the incidence of MASLD and dietary patterns. Four major dietary patterns, namely carnivore, plant-based, dairy-rich, and starch-rich diet patterns, were identified. The carnivore, plant-based, and starch-rich diet patterns showed no significant association with incident MASLD, while the dairy-rich diet pattern was associated with a lower risk of MASLD, also showing significantly lower cumulative incidence of MASLD in the higher adherence to dairy-rich diet pattern. The dairy-rich diet pattern was significantly associated with a lower risk of MASLD in Koreans. Appropriate dietary guidance based on dietary patterns is crucial for preventing MASLD. Objective: To astablish a strong popularity, high sensitivity of six human milk oligosaccharides in dairy product by precolumn derivatization high performance liquid chromatography-fluorescence method. Methods: Aquatic product sample was precipitated with glacial acetic acid, filtration by using the filter paper. It was derived by 2-aminobenzamide solution. The extracts were centrifuged and filtered by using the organic filter membrane and analyzed by using a AdvanceBio Glycan Map column to be separated and detected，employing acetonitrile-50 mmol/L ammonium formate solution （pH 4.4） as the mobile phase for gradient elution. Results: Under the experimental conditions, six human milk oligosaccharides in dairy product were linear in the range of 1.00～400.0 mg/L, and the correlation coefficients were all over 0.999. The detection limit of the method was 4.1～10.9 mg/kg, the limits of quantification were 12.3～32.7 mg/kg, the mean recoveries rate was ranged from 71.3% to 90.2% with the intra-day precisions （n=6） in the range of 1.0%～6.3% and inter-day precisions （n=6） less than 10.0%. Conclusion: This method can meet the requirements of the daily detection of six human milk oligosaccharides due to its simplicity and sensitives.

Abstract Dairy products may affect hypertension (HTN) risk. The aim of this study was to examine the association between fermented and nonfermented dairy foods and HTN in a sample of premature coronary artery disease (PCAD) subjects. This cross‐sectional study was performed on 1854 PCAD patients. A 110‐item food frequency questionnaire was used to assess dietary intakes. HTN was considered if systolic blood pressure was 140 mmHg and higher and/or diastolic blood pressure was 90 mmHg and higher. The odds ratio of HTN across the quartiles of different types of dairy products was evaluated by binary logistic regression. The mean (SD) of dairy products consumption was 339.8 (223.5) g/day, of which 285.4 g/day was fermented dairy products. In the crude model, participants in the fourth quartile of fermented dairy products had lesser risk of HTN compared to the bottom quartile (OR = 0.70, 95% CI: 0.52, 0.96; p for trend = .058). However, after considering the possible confounders, the significance disappeared. Abstract Milk is a nutritious food that plays a great role in the diets of a society largely dependent on livestock production. On the other hand, contaminants can enter milk naturally or intentionally, causing a negative impact on the health of consumers. Milk adulteration is a wide concern in the dairy industry in many countries, including Ethiopia, with a subsequent negative impact on its nutritive value and potentially affecting the health of consumers. This study was designed to assess the perceptions of rural and urban residents in Borana pastoral and agro-pastoral areas in Ethiopia related to milk adulteration. It was also aimed at identifying the potential reasons for milk adulteration in the area. A semi-structured questionnaire and focus group discussions (FGDs) were used to collect quantitative and qualitative data, respectively, focusing on the types of substances added to milk and the reasons for the addition of the substances. In rural and urban areas, 73.1% and 91.7% of respondents reported suspicion of the addition of nonmilk substances or milk of other animal species to cow’s milk before selling, respectively. According to the qualitative data, most reported adulterants were water and ‘pasta or rice water’ (a murky fluid left after boiling rice or pasta). Respondents mentioned that they identify adulterated milk by observation or tasting. Economic gain was the primary perceived reason to adulterate the milk according to the study participants. The respondents had concerns about the quality and safety of milk associated with adulteration in the area. The weak enforcement of regulations related to milk quality and marketing as well as the inadequacy of capacity for the detection of adulteration were mentioned as gaps toward mitigating the problems. Awareness creation about the negative impacts of milk adulteration among the community supported by strategies for regulation, such as improving regular testing of milk and taking actions on adulterated milk, is recommended to tackle consumer concerns around milk adulteration in the area.

Background: Today, antibiotics are widely used for treatment and feed additives to enhance livestock growth. Antibiotic residues may be found in food of animal origin for various reasons, including ignoring the withdrawal period after treatment, overuse for animals, and contamination of feed with treated animals in animal products. Among animal products, dairy products have a special place in the human diet, and antibiotic residues in them have caused a great deal of concern among consumers. Objective: This systematic review and meta-analysis aimed to evaluate and compare studies conducted in Iran on antibiotic residues in dairy products during 2000–2022. Methods: In this review, 52 eligible studies were collected by searching the Scientific Information Database (SID), Magiran, Google Scholar, Science-Direct, Scopus, and PubMed using the English or Persian keywords such as an antibiotic or antimicrobial residue, Beta-lactam residue, Tetracycline residue, Sulfonamide residue, Chloramphenicol residue, Aminoglycosides residue, Macrolide residue, Quinolones residue, Milk, Raw milk, Pasteurized milk, UHT milk, Powder milk, Cheese, Yogurt, Butter, Cream, Doogh, Kashk, Ice cream, and Iran. Results: According to the reviewed studies, the total prevalence of antibiotic residues in dairy products was 29% (95% CI: 15–43%). Among the seven evaluated antibiotic groups, most studies have been conducted on tetracycline, beta-lactam, and sulfonamide groups, with 16, 10, and 7 respectively, and the highest level of contamination with 663 ± 1540 μg/l is related to tetracycline. Most studies on antibiotic dairy product residues in Iran with 12, 11, and 8 studies are associated with East Azarbaijan province, then Tehran and Khorasan Razavi respectively, and no study has been conducted in 11 provinces of the country. According to the studies, Gilan, Qazvin and Razavi Khorasan provinces had the highest amount of antibiotic residue in milk with an average value of 56.415 ± 33.354, 45.955 ± 4.179 and 45.928 ± 33.027, respectively. Most of the methods used in the studies to measure antibiotic residues in milk were the Copan test kit and the HPLC method, which were used in 19 and 14 studies, respectively. Conclusions: Studies have shown that the prevalence of antibiotic residue in dairy products in Iran is high, so applying an effective strategy and developing the necessary standards in this field to control milk quality is a public health necessity. The findings of this study show that further evaluation of fermented dairy products, especially non-fermented ones such as butter and cream, is needed to prevent adverse health reactions. Simple Summary: Selenium and iodine are two microelements necessary for a normal thyroid hormone metabolism, and their deficiency in human diets can result in a significant health problem. Milk is a good vehicle for mineral enrichment and an available food for the general population. Thus, the main objective of this study was to evaluate the combined dietary intake of iodine and two chemical forms of selenium in dairy cows, at the maximum levels permitted in the European Union, in order to obtain milk, cheese, and yogurt naturally enriched in these microminerals. As a result, animal performance and the overall health status of cows were not negatively affected by the diets. However, selenium and iodine were successfully transferred to milk, increasing the level of both minerals in cheese and increasing the iodine level in yogurt, without harming the quality or acceptance. Therefore, the value-added products obtained could contribute in a realistic way to improve the current supply in the market to enhance the intake of selenium and iodine in the human population. This study evaluated the effects of dietary supplementation in dairy cows with two Se forms (organic and inorganic) and I at the maximum levels permitted in the European Union, with the aim to obtain naturally enriched milk and derived products. A total of 20 Holstein Friesian cows in lactation were fed 2 diets for 64 days: a control diet with a supply of 0.57 mg of inorganic Se and 0.57 mg of I per kg of ration in dry matter (DM), and an experimental diet (SeI) with a supply of 0.34 mg of inorganic Se, 0.23 mg of organic Se, and 5.68 mg of I per kg of ration in DM. The SeI diet did not modify the performance or, in general, the metabolic profile of cows. Se and I levels in milk were affected by diet type and time of measurement (p < 0.01). Thus, a marked increase of both microminerals was evident between the beginning and the end of the test, when the SeI diet was administered. For Se, this increase ranged from 1.95 to 3.29 μg/100 g of milk; and for I, from 19.69 to 110.06 μg/100 g of milk. The SeI diet increased (p < 0.01) the Se and I content in the cheese, reaching levels of 16.4 μg/100 g for Se and 269.7 μg/100 g for I. An increase in I was observed in yogurt from the SeI diet (p < 0.001). The supplementation of two forms of Se and I in the cows' ration, at the levels evaluated, produced milk and dairy products enriched in these microelements without altering their quality parameters. Background: Non-alcoholic fatty liver disease (NAFLD) is a growing public health concern. Modifiable factors such as diet and lifestyle are of research interest in preventing or reversing the disease. The relationship between dairy products and NAFLD remains unclear. Methods: In this cohort study, 36,122 participants aged 20–74 were enrolled by multi-stage, stratified, randomized cluster sampling from 2016 to 2017. A total of 25,085 participants finished at least one follow-up visit from 2019 to 2023. Dairy intake was collected by food frequency questionnaire at baseline. NAFLD was defined as fatty liver diagnosed by ultrasonography with excessive alcohol drink excluded. Logistic regression and Cox proportional hazard models were used to analyze the association between dairy intake and NAFLD. Results: A total of 34,040 participants were included in the baseline analysis. The prevalence of NAFLD was inversely associated with dairy intake (OR>7vs 0 servings/week = 0.91, 95% CI 0.84–0.98; ORper serving/day increase = 0.95, 95% CI 0.92–0.99). 20,460 participants entered the follow-up analysis. Among 12,204 without NAFLD at baseline, 4,470 developed NAFLD after a median time of 4.3 years. The incidence of NAFLD was inversely associated with dairy intake (HR>7 vs 0 servings/week = 0.89, 95% CI 0.81–0.98; HRper serving/day increase = 0.94, 95% CI 0.89–0.99). Among 8256 with NAFLD at baseline, 3,885 recovered after 4.2-year follow-up. Total dairy intake did not show significant associations with recovery of NAFLD, and the HRs (95% CI) were 0.96 (0.87–1.06) for > 7 servings/week and 0.98 (0.93–1.03) for per serving/day increase. Conclusion: Dairy product intake of more than one serving per day was associated with a lower prevalence and incidence of NAFLD in Chinese population. The food waste of the fruit processing industry is rich in many bio-active components such as polysaccharides, polyphenols, peptides, etc. that own multifaceted health benefits. The valorization of this waste is an intriguing optimization method for various dairy products. Meanwhile, LC-MS-based foodomics has been an emerging approach for the quantitative and qualitative analysis of dairy foods. Untargeted metabolomics has been done of the optimized functional yogurt that contains different levels of unripened papaya peel powder (UPPP) using high-resolution mass spectroscopy for analysis of added bio-active components in the matrix. UPPP comprises a high content of phytochemicals which could give functionality and therapeutic effect to the Greek yogurt. A total of 36 functional metabolites have been identified which have various health-beneficial attributes. Kaempferol, ostruthin, putative carpaine derivatives, etc. are some of the metabolites of high importance with a wide area coverage in the metabolome. This work highlights the bioactivity of the UPPP and its prebiotic properties added to the functional yogurt as an independent ingredient. The incorporated plant-based ingredients like UPPP can effectively enhance the functional attributes of Greek yogurt, which is a potential synbiotic food.

Abstract The growing interest in valorizing industrial by-products has led researchers to focus on exploring different sources and optimizing collagen extraction conditions over the past decade. While bovine hide, cattle bones, pork, and pig skins remain the most abundant collagen sources, there is a growing trend in the industrial utilization of collagen from non-mammalian species. This review explores alternative marine collagen sources and summarizes emerging trends in collagen recovery from marine sources, with a particular focus on environmentally friendly methods. Additionally, this review covers the colloidal structure-forming properties of marine collagens, including foam, film, gel, and emulsion formation. It also highlights the potential and important applications of marine collagen in various food products. Based on the currently reported marine sources, collagens extracted from fish, jellyfish, and sea cucumbers were found to have the highest yield and mostly comprised type-I collagen, while crustaceans and mollusks yielded lower percentages of collagen. Traditional extraction techniques isolate collagen based on acetic acid and pepsin treatment, but they come with drawbacks such as being time-consuming, causing sample destruction, and using solvents. Conversely, marine collagen extracted using conventional methods assisted with ultrasonication resulted in higher yields and strengthened the triple-stranded helical structures. Recently, an increasing number of new applications have been found in the food industry for marine collagens, such as biodegradable film-forming materials, colloid stabilizers, foaming agents, and micro-encapsulating agents. Furthermore, collagen is a modern foodstuff and is extensively used in the beverage, dairy, and meat industries to increase the stability, consistency, and elasticity of products. Graphical abstract

AbstractThis paper investigates the impact of dairy product marketing on household food security in Jimma Zone Ethiopia. A quasi-experimental research design was applied through the use of a cross-sectional data type. In order to identify the study kebeles and 266 respondents, a multi-stage sampling procedure was conducted, and the data was gathered through interview schedules. Descriptive statistics, Binary logit, and Propensity Score Matching (PSM) models were used to analyze the data. From the randomly selected households about 54.9% were participated in milk marketing. The study discovered that family size, livestock size, off-farm engagement, access to dairy input, ownership of crossbreed cows, and cooperative membership significantly and positively influenced dairy product market participation. Conversely, age, education level, and market distance had a negative effect. The results of PSM indicated that dairy product market participation had a positive impact on the household food consumption score and dietary diversity, increasing them by 16.38% and 15.42%, respectively. All in all, the research found that milk market participation has a meaningful effect on household food security, and so measures like Innovations to increase dairy production and productivity, and cooperative membership should be promoted to strengthen the participation of smallholder dairy farmers in the area. The study can offer empirical evidence on the contribution of dairy product market participation to household food security.

Xanthan gum (XG) is an important industrial microbial exopolysaccharide. It has found applications in various industries, such as pharmaceuticals, cosmetics, paints and coatings, and wastewater treatment, but especially in the food industry. The thickening and stabilizing properties of XG make it a valuable ingredient in many food products. This review presents a comprehensive overview of the various potential applications of this versatile ingredient in the food industry. Especially in the plant-based food industries due to current interest of consumers in cheaper protein sources and health purposes. However, challenges and opportunities also exist, and this review aims to identify and explore these issues in greater detail. Simple Summary: Breast cancer is the most prevalent cancer among women. Extensive research has been conducted on eating patterns, and increasing evidence suggests that diet significantly influences the development, progression, and prevention of breast cancer. However, besides the well-known role of alcohol and red and processed meat, the impact of other dietary components remains a subject of debate. Specifically, the potential connection between sugar, dairy components, and soy with breast cancer risk raises questions. Focusing on the studies conducted in the last decade, our literature review shows a negative association between breast cancer incidence and both dairy product and soy consumption, while complex data emerged about sugar intake by itself. However, high heterogeneity across studies' findings was observed, thus highlighting the need for comprehensive investigations considering both patient- and cancer-related factors to develop preventive strategies that should be incorporated into international guidelines. Breast cancer (BC) constitutes a prevalent health condition among women. Recent years have witnessed the identification of dietary proto-oncogenic factors that deserve attention. Besides the well-known role of alcohol and red and processed meat in BC development, the impact of other dietary components remains unclear. Our narrative review aims to explore the diet-BC relationship, focusing on sugar, dairy, and soy consumption. We conducted a PubMed literature search covering the last decade (2013–2023) and included 35 papers. We found limited evidence on the association between high sugar intake and BC incidence. On the other hand, dairy and soy consumption displayed a protective effect in the majority of the analyzed papers. However, a significant degree of heterogeneity was reported among the results. Menopausal status and the specific BC molecular subtypes were the main factors influencing the interpretation of the results. Exploring dietary factors and BC revealed inconsistencies: high glycemic index post-menopause may be a risk factor, while sugar-sweetened drinks and artificial sweeteners yielded conflicting results; fermented dairy showed potential benefits, non-fermented dairy presented inconsistent findings; soy impact on BC varied according to molecular subtype, with some studies suggesting a positive association in luminal-like BC. Euterpe edulis is a plant native of Brazil and popularly known as juçara. The aim of this study was to develop and validate an analytical method using high‐performance liquid chromatography (HPLC) of juçara crude extracts (JCEs) and to evaluate dairy products containing free and microencapsulated extracts. The validated analytical method for JCE was performed using cyanidin‐3‐O‐rutinoside (C3R – isolated and identified as major component from JCE) as a reference: linearity was obtained using ten concentrations between 25 and 250 μg mL−1 (R2 = 0.994); limits of detection and quantification were 19.04 μg mL−1 and 57.7 μg mL−1 respectively; accuracy (relative standard deviation) was <5%; recovery was 104.85 μg mL−1; and the method is robust. Physicochemical analyses of the dairy products were evaluated using colour, pH, and concentration of anthocyanins using HPLC calculated as C3R over 21 days of storage. The pH remained stable until the end of the test. The colour and the concentration of anthocyanins remained stable for 9 days. Objective: To investigate the association of vitamin D level and moderate to severe acne as a primary outcome, and its association with BMI, dairy products, and chocolate consumption. Methods: A case-control study was conducted in a dermatology outpatient clinic. Patients, diagnosed with moderate to severe acne vulgaris that warrant treatment with oral antibiotics, and had global acne grading system (GAGS) score of >=19 were eligible to be selected as cases. Aged matched, with no or mild cases of acne were eligible to be selected as controls. The participant height, weight, BMI, and serum circulating 25-hydroxyvitamin D level were measured. A modified food frequency questionnaire was used for dietary history. Results: Comparing Cases (N = 101) and Control (N = 134), the mean of vitamin D level in cases were lower than that in the controls, however no statistically significant difference is observed. There were statistically insignificant differences between the studied groups regarding milk (whole, low fat, skimmed and any type of milk), cheese, yogurt, other dairy products, and chocolate consumption. However, a statistically significant disparity in weight is noted, but not in BMI. Conclusion: The results did not reveal any statistically significant associations between vitamin D level, BMI, dairy and chocolate consumption, and moderate to severe acne. A method was established for the simultaneous determination of 3-methoxytyramine and adrenaline in dairy products by high performance liquid chromatography-tandem mass spectrometry (HPLC-MS/MS) compled with isotope dilution. Sample was extracted by perchloric acid solution, cleaned by weak cationic solid phase extraction column. The analyte was separated by ACQUITY UPLC BEH C18 (100 mm×2.1 mm, 1.7 μm) column and agradient elution of mobile phase with 0.1% formic acid aqueous solution-methanol. The detection was achieved by HPLC-MS/MS with electrospray ion source and positive ion scanning mode as well as multiple reaction monitoring (MRM) mode. The quantification was accomplished by the internal standard method. It was demonstrated that the linear relationships of 3-methoxytyramine and adrenaline were good in the range of 0.5~12.0 ng/mL and 50~1200 ng/mL (r>0.99), respectively. The detection limits and the limit of quantification of 3-methoxytyramine were 0.2 and 0.5 μg/kg, respectively. At the concentrations of 0.5, 1.0 and 3.0 μg/kg, the recoveries of the 3-methoxytyramine ranged from 76.97% to 119.20%, with the corresponding precision (n=6) of 1.53%~9.61%. While the recoveries of adrenaline at 50, 100 and 300 μg/kg were 90.65%~108.55% and the relative standard deviations were in the range of 1.29%~3.95%. The method would be accurate in results and good in repeatability, and it can be an important measure to monitor 3-methoxytyramine and adrenaline in dairy products.

The objective of this study was to develop fresh and matured cheeses with different bovine colostrum levels, aiming to promote the consumption of dairy products with the addition of colostrum. Four different cheese formulations were produced with a mixture of 0:100, 15:85, 20:80, and 25:75, bovine colostrum:milk (v:v), and aged for 0, 10, 20, and 40 days. Milk, colostrum, and fresh and matured cheeses were submitted to physicochemical characterization. Moreover, microbiological quality, yield, texture profile, color, and sensory acceptance of cheese samples were evaluated. Colostrum supplementation favored low acidity, high moisture, a pH range of 5.0–6.2, and water activity of 0.94–99. Sensory attributes and overall evaluation of all cheese formulations achieved an Acceptability Index above 70, indicating good acceptability. Since cheese with colostrum presented the potential to be used as human food, assessing the presence of colostrum bioactive components in those dairy products is a promising goal for further research. There has been a growing interest in functional foods that contain probiotics and bioactive substance due to the increasing awareness of the link between nutrition and health. In this context, the current study aimed to develop a kefir-based probiotic dairy product enriched with Opuntia dillenii fruit powder (ODFP). The phenolics profile, chemical composition and functional properties of ODFP was studied. Then, the microorganisms' growth, physico-chemical, sensory, color and antioxidant properties of the fermented dairy product were studied during cold storage for 21 days. LC-ESI-MS analysis resulted in the identification of 13 compounds in ODFP ethanolic extract, of which quinic acid (37.73 mg/g extract) was the main one. The ODFP extract also showed relatively important antioxidant potential in the DPPH• (IC50 = 0.7 ± 0.02 mg/mL) scavenging activity and (Fe3+) reducing power (EC0.5 = 0.25 ± 0.01 mg/mL). The dairy product was fermented using both yogurt starter culture and kefir in the presence of ODFP (0.1, 0.2 and 0.3 g/100 g). The ODFP enrichment increased titratable acidity and reduced the pH. The product enriched with 0.3% ODFP showed an exudate loss of 46.38% against 68.19% for the control product. The red color (a*) significantly increased in ODFP-fortified products. The biotransformation of ODFP by fermentation process increased the microorganisms' growth, phenolics content and antioxidant activity. The kefir-based dairy product enriched with 0.2% ODFP showed the highest score of overall acceptability. Although veterinary antibiotics are essential in preventing and treating clinical diseases in cattle, the frequent use of antibiotics leads to antibiotic residues in milk and dairy products, consequently threatening human health. The massive milk consumption makes it necessary to assess antibiotic pollution and health impact comprehensively. Hence, we conducted a systematic review to evaluate antibiotics in milk and dairy products and their potential health risk. We searched four databases using multiple keyword combinations to retrieve 1582 pieces of literature and finally included eighteen articles to analyze antibiotic residues in milk and dairy products. These studies detected seven antibiotics in different regions of China. Quinolones and β-lactam antibiotics exceeded the MRL for raw and commercial milk. The maximum levels of sulfonamides and tetracyclines were detected in the same raw milk sample, exceeding the MRL. The estimated THQ and HI values in milk and dairy products are less than 1 for adults, indicating negligible noncarcinogenic health risk of antibiotics through consuming milk and dairy products. Children face higher health risks than adults, with the HI and THQ of quinolones exceeding 1. It is worth noting that quinolones accounted for nearly 89% of health risks associated with all antibiotics. Finally, we put forward possible research directions in the future, such as specific health effects of total dietary exposure to low levels of antibiotics. In addition, policymakers should effectively improve this problem from the perspectives of antibiotic use supervision, antibiotic residue analysis in food, and continuous environmental monitoring and control. This systematic study deals with the amount of bisphenol A (BPA) in milk and dairy products, its analytical methods, and risk assessment. Milk is one of the drinks that has a high consumption. Bisphenol A can be present both in raw milk and its amount undergoes changes during the pasteurization process. This review was conducted by searching for the keywords Bisphenol A, BPA milk, dairy product, cheese, cream, butter, yogurt, measurement, detection, and analysis in different databases. The search was done in three databases, Scopus, PubMed and Science Direct. The largest number of studies on the determination of bisphenol A belonged to Asian and European countries. The amount of bisphenol A in milks was observed in the range from ND to 640 ng/mL. Furthermore, the amount of BPA in the tested cheese samples was observed in the ND range up to 6.1 ng/g and in the yogurt samples in the ND range up to 4.4 ng/g. The most used analytical method was based on liquid chromatography. The most used solvent for extraction was methanol or acetonitrile. HQ (Hazard Quotient) was also calculated in some studies. There was no risk in terms of milk consumption due to BPA contamination in extracted data.

This study evaluated the effects of dietary supplementation in dairy cows with two Se forms (organic and inorganic) and I at the maximum levels permitted in the European Union, with the aim to obtain naturally enriched milk and derived products. A total of 20 Holstein Friesian cows in lactation were fed 2 diets for 64 days: a control diet with a supply of 0.57 mg of inorganic Se and 0.57 mg of I per kg of ration in dry matter (DM), and an experimental diet (SeI) with a supply of 0.34 mg of inorganic Se, 0.23 mg of organic Se, and 5.68 mg of I per kg of ration in DM. The SeI diet did not modify the performance or, in general, the metabolic profile of cows. Se and I levels in milk were affected by diet type and time of measurement (p < 0.01). Thus, a marked increase of both microminerals was evident between the beginning and the end of the test, when the SeI diet was administered. For Se, this increase ranged from 1.95 to 3.29 μg/100 g of milk; and for I, from 19.69 to 110.06 μg/100 g of milk. The SeI diet increased (p < 0.01) the Se and I content in the cheese, reaching levels of 16.4 μg/100 g for Se and 269.7 μg/100 g for I. An increase in I was observed in yogurt from the SeI diet (p < 0.001). The supplementation of two forms of Se and I in the cows’ ration, at the levels evaluated, produced milk and dairy products enriched in these microelements without altering their quality parameters. However, a responsible intake of these products is necessary to avoid risks of deficiencies or excesses that could negatively affect the health of consumers.

Listeria monocytogenes is an opportunistic pathogen that affects specific groups of individuals, with a high mortality rate. The control of L. monocytogenes in dairy industries presents particular challenges, as this bacterium is capable of adhering and forming biofilms, as well as thriving at refrigerated temperatures, which enables it to persist in harsh environments. The consumption of dairy products has been linked to sporadic cases and outbreaks of listeriosis, and L. monocytogenes is frequently detected in these products in retail stores. Moreover, the bacterium has been shown to persist in dairy-processing environments. In this work, we review the main characteristics of L. monocytogenes and listeriosis, and highlight the factors that support its persistence in processing environments and dairy products. We also discuss the main dairy products involved in outbreaks of listeriosis since the early 1980s, and present control measures that can help to prevent the occurrence of this pathogen in foods and food-processing environments.

Dairy cows are one of the strategic livestock in Indonesia. However, increased dairy demand, which exceeds domestic dairy production, increases dairy import quantity. As dairy import increases, import tariff as an import restriction policy can be used to protect the sustainability of domestic dairy production. This study aimed to investigate the impact of import tariff policy on dairy supply and demand in Indonesia. This study used secondary data obtained from various official institutions. Factors determining dairy supply and demand were estimated using two-stage least squares (2SLS), and the impact of import tariff policy was estimated using a simultaneous equation system model. The empirical results indicate that the import tariff policy has a positive impact on dairy supply and a negative impact on dairy demand. Import tariffs were a factor determining the positive impact on dairy production, dairy cow population, and domestic dairy prices. The import tariff policy also had a negative impact on decreasing the quantity of dairy imports. It is concluded that import tariffs could be an important dairy import restriction policy to protect domestic dairy production and dairy producers in Indonesia. [ABSTRACT FROM AUTHOR]

Background: Some studies have investigated the relation between dairy products and mortality, but with inconsistent results. Objective: We examined the association between the consumption of dairy products and the risk of all-cause, cancer-related, and cardiovascular disease (CVD)-related mortality. Methods: From the Japan Public Health Center-based Prospective (JPHC) study, 43,117 males and 50,193 females with no history of cancer or CVD finished the food frequency questionnaire (FFQ) and were included in the study. Intake of dairy products was assessed using the FFQ and adjusted for total energy by using the residual method. We used multivariate Cox proportional hazard models to calculate hazard ratios (HRs) and 95% confidence intervals (95% CIs) for mortality risk in males and females. Results: 14,211 deaths in males and 9547 deaths in females from all causes were identified during an average follow-up of 19.3 years. For males, total dairy consumption was nonlinearly and significantly associated with lower risk of mortality from all causes [the third quartile, HR = 0.87 (0.83, 0.91), the fourth quartile, HR = 0.89 (0.85, 0.94), P for nonlinearity < 0.001] and CVD [the third quartile, HR = 0.77 (0.70, 0.85), the fourth quartile, HR = 0.78 (0.70, 0.86), P for nonlinearity < 0.001]. Milk and fermented milk intake were inversely associated with all-cause and CVD-related mortality in males. Cheese consumption was inversely associated with CVD-related mortality among males. There was no association between total dairy intake and mortality risk among females. Conclusion: For Japanese people, consumption of dairy products was associated with a decreased risk of mortality from all-cause and cardiovascular diseases among males. [ABSTRACT FROM AUTHOR]

Milk and dairy products are an important part of the human diet for numerous reasons. Goat milk is higher in the content of elements such as K and Ca. Nowadays, consumption of goat milk and goat dairy products increases because of better digestion and therapeutic value. However, goat milk can contain heavy metals and trace elements as well which can harm human health. The content of 22 elements in sixty-nine samples of goat milk, whey, three types of cheese, and yogurt from the ecological farm in region Orava and conventional farm in region Stredné Považie in Slovakia was measured in this study. The highest concentration of four elements Ca, K, Mg, and Na in samples of goat products was found. In our study, significant statistical differences (P < 0.05) were found only in levels of K, Ca, Li and Na when comparing milk samples from organic and conventional farm. Concentrations of K (1260.50 mg/kg), Li (0.02 mg/kg) and Na (293.46 mg/kg) were higher in samples from ecological farm, while concentration of Ca (1344.65 mg/kg) was higher in samples from conventional farm. Toxic elements were present in trace amounts or under the limit of detection. The consumption of goat milk and goat dairy products from monitored farms can be considered as safe and beneficial for human health regardless of the way of farming. According to the highest level of strontium in hard ripening cheese, frequent regular consumption should be considered for children as a preventive measure for development of bone health.

Abstract Background Chinese residents generally had insufficient intake of dairy products. The correct mastery of dairy related knowledge helps to develop a good habit of dairy intake. Dairy intake and purchasing behavior were related to multiple factors. As an attempt to lay a scientific basis for guiding the rational intake of dairy by Chinese residents, we launched a survey to discover Chinese residents’ knowledge about dairy product, intake and purchasing behavior of dairy and its influencing factors. Methods An online survey was conducted from May to June 2021, and 2500 Chinese residents aged 16–65 were selected using the convenient sampling method. A self-designed questionnaire was adopted. Analysis of the demographic and sociological factors influencing Chinese residents' knowledge about dairy products, behavior towards dairy intake and purchasing were measured. Results The average score of knowledge about dairy product of Chinese residents was 4.13 ± 1.50 points. 99.7% of the respondents considered that drinking milk was beneficial, whereas only 12.8% gained a correct insight into the specific benefits of drinking milk. 4.6% of the respondents correctly knew what nutrients they could get from milk. 4.0% of the respondents could correctly identify the type of dairy product. 50.5% of the respondents knew that adult should drink at least 300 ml milk per day. Breast cancer (BC) constitutes a prevalent health condition among women. Recent years have witnessed the identification of dietary proto-oncogenic factors that deserve attention. Besides the well-known role of alcohol and red and processed meat in BC development, the impact of other dietary components remains unclear. Our narrative review aims to explore the diet-BC relationship, focusing on sugar, dairy, and soy consumption. We conducted a PubMed literature search covering the last decade (2013–2023) and included 35 papers. We found limited evidence on the association between high sugar intake and BC incidence. On the other hand, dairy and soy consumption displayed a protective effect in the majority of the analyzed papers. However, a significant degree of heterogeneity was reported among the results. Menopausal status and the specific BC molecular subtypes were the main factors influencing the interpretation of the results. Exploring dietary factors and BC revealed inconsistencies: high glycemic index post-menopause may be a risk factor, while sugar-sweetened drinks and artificial sweeteners yielded conflicting results; fermented dairy showed potential benefits, non-fermented dairy presented inconsistent findings; soy impact on BC varied according to molecular subtype, with some studies suggesting a positive association in luminal-like BC. Hence, further investigation is crucial to obtain a uniform consensus on the diet-BC relationship.

This study aimed to investigate the macronutrient and carotenoid content of red and yellow Coffea arabica var. Caturra pulp, a by-product of coffee processing in Colombia. The study employed ultra-sound-assisted extraction (UAE) to extract carotenoids, and a 23 factorial design was used to evaluate the effects of pulp color, biomass-solvent ratio, and solvent mixture composition on carotenoid content and extraction yield. The condition that provided the highest carotenoid extraction was further encapsulated by spray drying and added to a dairy product. The results showed that coffee pulp has significant dietary fiber content and high levels of carotenoids, with yellow pulp having a higher content than red pulp. Lutein isomers and lutein esters were the most abundant carotenoids found in both red and yellow coffee pulp. The highest carotenoid extraction was achieved using a 1:40 (g/mL) biomass:solvent ratio and a 20:80% v/v Ethanol:Ethyl Acetate solvent mixture for the yellow pulp. The carotenoid extract also demonstrated high encapsulation efficiency (46.57 ± 4.03%) and was found to be stable when added to a fermented milk product. This study presents an alternative solution for utilizing coffee by-products in Colombia, which could positively impact the families of over half a million Colombian coffee producers.

Yogurt and kefir are well-known fermented dairy products that provide many benefits to human health. Microorganisms contained in yogurt and kefir play an important role to produce bioactive metabolites, including eradicating pathogens. This study presents the antimicrobial activity of 12 strains isolated from kefir and yogurt samples obtained in Malang, Indonesia. Strain K3 from kefir shows the highest antimicrobial activity with the diameter of the inhibitory zone was 8.11±0.07 mm against Escherichia coli and 8.20±0.17 mm against Staphylococcus aureus. Phenotypic characterization through Gram-staining, endospore-forming, motility, catalase, oxidase, and carbohydrate fermentation test, and genotypic identification through the 16S rRNA gene sequencing and phylogenetic analysis was performed to identify the species of isolate. Based on the result, K3 was characterized as non-motile Gram-negative bacilli bacteria, tested negative in endospore formation, catalase, and oxidase. According to the nucleotide sequence of 16S rRNA gene, the isolate was classified as Staphylococcus saprophyticus strain UTI-045 with 100% of similarity. Furthermore, the GC-MS analysis of the strain's cell-free supernatant (CFS) reveals 3,6-Dioxa-2, 7-disilaoctane, 2,2,4,7,7-pentamethyl-(Rt=9.449 min); and Propanoic acid, 2-[(trimethylsilyl)oxy]-, trimethylsilyl ester (Rt=11.328 min) as the active metabolites. The aim of this study was to produce electrospun gliadin nanofibers containing Zataria multiflora Boiss essential oil (ZMEO) (5, 10 and 15%, w/w) to create active antimicrobial mats. The minimal inhibitory concentration (MIC) and minimal bactericide concentration (MBC) of essential oil were measured. The ZMEO loaded gliadin nanofibers were characterized for physicochemical, antioxidant and antibacterial activity. Results according to the MIC and MBC revealed that the ZMEO showed the most remarkable bactericidal effect. The nanofibers showed an encapsulation efficiency close to 95% and the presence of ZMEO led to increased contact angle and opaque. ZMEO increased the absorption of color in the visible region, which in turn led to increase of the b* parameter but reduced a* and L* parameters. The nanofibers’ antimicrobial activities were induced by incorporating ZMEO, and Bacillus subtilis was the most sensitive bacterium to ZMEO-containing nanofibers, while Salmonella tiphi was the most resistant. The nanofibers incorporating ZMEO showed good antioxidant properties; this effect was greatly improved when the proportion of added ZMEO was 15%. Then, efficacy of bioactive nanofibers included 5, 10 and 15% (w/w) ZMEO to reduce microbial growth (Listeria monocytogenes) of smoked salmon fish fillet during chilled storage was evaluated; the results indicated that its final population was reduced to about 2.5-3 Log cycles after 16 days of storage at 4 °C in presence of ZMEO, compared with negative control mats produced without the ZMEO. These results suggest that the developed gliadin nanofibers with active substance could be used in designing antimicrobial packaging materials.

By exchanging the conventional role of functional monomer and template molecules, we develop a new molecularly imprinted nanospheres with grape grain structures based on multi-hydrogen bonding interactions between melamine and 6-aminouracil. Molecular imprinting-electrochemical sensor was established with the assistance of graphene and ionic liquids. The content of melamine in dairy products was detected by the molecular imprinting-electrochemical sensor. The detection limit was determined to be as low as 1.57 × 10−3 mg kg-1.

Milk and dairy products are among the most important foods in the human diet. They are natural and culturally accepted and supply the human body with microorganisms that modulate the intestinal microflora. Improper lifestyles, highly processed diets, and certain drugs may contribute to adverse changes in the composition of the gut microflora. These changes may lead to dysbiosis, which is associated with the pathogenesis of many gastrointestinal diseases. This review aims to determine the effect of fermented milk products on the composition of the gut microbiota and their possible support in the treatment of dysbiosis and gastrointestinal diseases. While most research concerns isolated strains of bacteria and their effects on the human body, our research focuses on whole fermented products that contain complex mixtures of bacterial strains. Semi-hard pressed goat's cheese, a traditional matured cheese in Andalusia, has a residual lactose content that may affect people with intolerance to that carbohydrate. Nowadays, lactose-free dairy products are characterized by presenting a scant sensory quality, far removed from their traditional profile for their pronounced sweet and bitter taste and aroma related to Maillard reactions. The aim of this work was to make a cheese with a similar sensory profile to that of the traditional Andalusian one but without lactose. For this purpose, the doses of the enzyme lactase that would be necessary to add to the milk were investigated so that, during the manufacturing of the cheese, there would remain enough lactose for the starter cultures to trigger lactic fermentation and, in turn, to spark the cheese's own maturity processes. The results show that the combined action of lactase (0.125 g/L, 0.250 g/L, 0.5 g/L, and 1 g/L) and of the lactic bacteria reduces the final content of lactose to below 0.01%, complying with the European Authority of Food Safety's recommendations for considering the cheeses as being under the denomination "lactose-free". The physicochemical and sensory values resulting from the different batches of cheese obtained indicate that the lowest dose studied (0.125 g/L) had very similar ones to those of the control cheese. Objectives: Few prospective cohort studies have evaluated the relationship between dairy product intake frequency and risk of osteoporotic fractures in Asians. This study aimed to investigate the association between habitual dairy product intake and risk of osteoporotic fractures. Design: Secondary analysis of prospective cohort study. Setting: Five municipalities of Japan. Participants: This study included 1,429 postmenopausal Japanese women (age ≥45 years at baseline). Measurements: Baseline milk-intake frequency was obtained using nurse-administered questionnaires. Intakes of yogurt and cheese, and estimated calcium intake, were assessed using a validated food frequency questionnaire. Osteoporotic fracture was defined as a clinical fracture diagnosed using radiography. Hazard ratios (HRs) with 95% confidence intervals (CIs) were estimated using Cox proportional hazards models. Results: Over a median follow-up period of 15.1 years (interquartile range [IQR], 10.1–15.4 years; total, 18,118 person-years), 172 women sustained at least one osteoporotic fracture. The proportions of participants with milk intakes <1, 1, and ≥2 cups/d were 34.4%, 48.0%, and 17.6%, respectively. After adjustment for age, frequency of yogurt intake, frequency of cheese intake, body mass index, history of osteoporotic fractures, and frequency of natto intake, the HRs compared with that for milk intake <1 cup/d were 0.71 (95% CI: 0.51–0.98) and 0.57 (95% CI: 0.35–0.92) for 1 cup/d and ≥2 cups/d, respectively. After adjustment for bone mineral density, HR significance for milk intakes ≥2 cups/d remained significant. Yogurt and cheese intakes were not related to the risk of osteoporotic fractures.
