Infant follow-on formulas (IFF) mimic human milk. This study aimed to identify the key structural levers that influence oxidative stability of IFF. Representative model IFF of marketed products in term of lipid composition were formulated with varying droplet size, lipid droplet core composition, and interfacial composition using different emulsifiers (soy lecithin or dairy phospholipids [DPL]). The oxidative stability of model IFF was assessed in accelerated storage conditions. No significant stabilization effect based on the lipid droplet core composition was observed. However, the nature of the interface, influenced by the emulsifier type, had an impact. Model IFF with DPL showed no loss of tocopherols and peroxide value was up to twice lower than those with soy lecithin after 20 days. This effect was particularly pronounced for the 0.4µm droplets. These results suggest that model IFF with DPL had a greater oxidative stability, likely due to the presence of sphingomyelin and the formation of a rigidified domain at the droplet surface. Model IFF with 0.4 µm droplets stabilized with soy lecithin, especially when added to the water phase, showed a tocopherols loss twice as high as that of IFF with DPL. These results indicate that oxidative stability of IFF is more influenced by the chemical environment rather than droplet size. Practical Application: Infant follow-on formulas (IFF) aim to ensure an adequate nutritional intake to support the proper development and infant growth. Therefore, IFF must be stable against degradation phenomena such as lipid oxidation and have a composition and structure that are as biomimetic as possible to mature breast milk. This study provides key information for the development of IFF with a lipid composition and structure that are suitable for the infant nutritional needs and have an acceptable resistance to lipid oxidation. Human activities have affected the surrounding natural ecosystems, including belowground microorganisms, for millennia. Their short- and medium-term effects on the diversity and the composition of soil microbial communities are well-documented, but their lasting effects remain unknown. When unoccupied for centuries, archaeological sites are appropriate for studying the long-term effects of past human occupancy on natural ecosystems, including the soil compartment. In this work, the soil chemical and bacterial compositions were compared between the Roman fort of Hegra (Saudi Arabia) abandoned for 1500 years, and a preserved area located at 120 m of the southern wall of the Roman fort where no human occupancy was detected. We show that the four centuries of human occupancy have deeply and lastingly modified both the soil chemical and bacterial compositions inside the Roman fort. We also highlight different bacterial putative functions between the two areas, notably associated with human occupancy. Finally, this work shows that the use of soils from archaeological sites causes little disruption and can bring relevant information, at a large scale, during the initial surveys of archaeological sites.

Background: Cassava breeding research programs focused initially on agronomic performance but in recent years they have considered the processability and the organoleptic properties of the final product, to increase the adoption of new varieties. One important cassava foodstuff is attiéké, a fermented and granular product, so it is necessary to determine criteria used by attiéké processors to select raw cassava and the characteristics leading consumers to like this product. This study assessed the attiéké production process, the criteria associated with the quality of attiéké, the sensory drivers of consumer acceptance, and their thresholds. Results: The total processing yield of attiéké varied according to the cassava variety and depended primarily on the fermentation-pressing yield. However, it was not correlated either with the peeling yield or with morphological characteristics of cassava roots. The production of a ton of attiéké required about 150 h. Dry matter, organic acids, soluble sugars, total pectin, and the pH of raw material and attiéké varied depending on the cassava variety. Ten discriminating sensory attributes of attiéké were identified. Consumer testing showed that overall liking for attiéké was associated with sourness, texture, and brightness. Acceptable sensory score thresholds were 1.67–2.18 for sour odor, 4.75 to 6.3 for cohesiveness, and 5.4 to 6.3 for 'mouthfeel sensation'. Attiéké dry matter correlated positively with cohesiveness and moldability. Conclusions: Several potential solutions are discussed to improve the adoption of cassava varieties for attiéké production. However, further studies need to be carried out to translate the sensory thresholds of texture attributes into robust instrumental methods because texture is an important attribute of attiéké in addition to sourness.

BACKGROUND: Retting is a key step of cassava processing into widely consumed foods (fufu, chikwangue, miondo and bobolo) in sub-Saharan Africa. For some populations, retting ability is a major quality criterion that drives the adoption of new cassava varieties. Despite this importance, the physiological basis associated with this process remains poorly understood, and should lead to improved screening tools for breeding. Eight cassava varieties contrasting in retting ability properties were used in the present study. Roots and soaking water were sampled during retting and characterized at both histological and biochemical levels. RESULTS: Histological data highlighted the degradation of root cell wall during retting. The average pH of soaking water decreased from 5.94 to 4.31 and the average simple sugars decreased from 0.18 to 0 g L−1, whereas the organic acids increased up to 5.61 g L−1. In roots tissue, simple sugars and organic acid contents decreased from 22.9 to 0 g kg−1 and from 80 to 0 g kg−1, respectively. The total pectin content of roots among varieties at harvest was similar, and decreased during the retting process. Overall, there was a negative correlation between total pectins content and root softening, although this did not reach statistical significance. CONCLUSION: Major histological and biochemical changes occurred during cassava root retting, with some of them associated with the process. Retting affected starch pasting properties more than starch content. Although this process is characterized by root softening and degradation of cell wall structure, the present study strongly suggested that pectin is not the only cell wall component involved in these changes.

BACKGROUND: Cassava utilization for food and/or industrial products depends on inherent properties of root dry matter content (DMC) and the starch fraction of amylose content (AC). Accordingly, in the present study, near-infrared reflectance spectroscopy (NIRS) models were developed to aid breeding and selection of DMC and AC as critical industrial traits taking care of root sample preparation and cassava germplasm diversity available in Uganda. RESULTS: Upon undertaking calibrations and cross-validations, best models were adopted for validation. DMC in calibration samples ranged from 20 to 45 g 100g−1, whereas, for amylose content, it ranged from 14 to 33 g 100g−1. In the validation set, average DMC was 29.5 g 100g−1, whereas, for amylose content, it was 24.64 g 100g−1. For DMC, a modified partial least square regression model had regression coefficients (R2) of 0.98 and 0.96, respectively, in the calibration and validation set. These were also associated with low bias (−0.018) and ratio of performance deviation that ranged from 4.7 to 5.0. In addition, standard error of prediction values ranged from 0.9 g 100g−1 to 1.06 g 100g−1. For AC, the regression coefficient was 0.91 for the calibration set and 0.94 for the validation set. A bias equivalent to −0.03 and a ratio of performance deviation of 4.23 were observed. CONCLUSION: These findings confirm the robustness of NIRS in the estimation of dry matter content and amylose content in cassava roots and thus justify its use in routine cassava breeding operations.

Background: Plantains are of major importance in the diet of many African populations. Plantains undergo many processing techniques at different ripening stages. Boiling is the most common method of processing plantains in Cameroonian households. This study was undertaken to evaluate the effect of cooking mode and ripening stage on the physicochemical and nutritional parameters of two Musa genotypes. Fruits from genotypes, Batard and CARBAP K74, at three ripening stages (unripe, semi-ripe and ripe) were studied. Physicochemical and nutritional analyses were performed on raw and cooked pulps with and without peel at different cooking times (from 10 to 60 min). Results: Significant variations (p < 0.05) in the parameters assessed during cooking at each ripening stage according to cooking time were observed. Plantain pulps boiled with peel exhibited high firmness (0.7–1.7 kgf), high soluble solids (7.4–22.4°Brix) and high dry matter content (29.8–38.3%) at all ripening stages. This cooking method yielded high protein (3.0–4.8%), lipid (0.2–1.8%), total starch (32–73%), and total carbohydrate (18–32%) contents. Boiling with or without peel had no significant effect (p > 0.05) on the pH of Batard pulps nor the ash content of the pulps of both genotypes. Conclusion: Irrespective of the ripening stages used, during cooking by immersion in boiling water, cooking with peel best preserves the physicochemical and nutritional parameters of the analysed genotypes.

Background: Cassava roots are widely consumed in tropical regions of Asia, Africa, and Latin America. Although the protein, vitamin, carotenoid, and mineral content in the leaves makes them a nutritionally attractive option, their consumption is limited due to their high levels of cyanogenic compounds (CCs). In this study, the CC content in different parts of the plant (leaves, storage root cortex, and parenchyma) was assessed at harvest for 50 landrace genotypes representative of cassava diversity in Latin America. The changes in CC in leaves at different physiological ages (3, 6, 9, and 11 months after planting) were also investigated. Results: The average CC was higher in the cortex (804 ppm) and leaves (655 ppm) than in root parenchyma (305 ppm). Genotypes from different regions of Latin America, as identified by seven genetic diversity groups, differed significantly in CC levels. The Andean and Amazon groups had, respectively, the lowest (P = 0.0008) and highest (P < 0.0001) CC levels in all three parts of the plants. Cyanogenic compound concentrations were higher in leaves from young plants (P < 0.0001) and decreased with increasing physiological age. Conclusion: The results help to guide the selection of parental lines with low CC levels for breeding and to contribute to the expanded use of cassava and its by-products for food and feed. Cassava for fresh consumption, especially, requires varieties with low total CC content, especially in the root cortex and parenchyma. COL1108 (204, 213, and 174 ppm, respectively, in the parenchyma, cortex, and leaves) and PER297 (83, 238, and 299 ppm, respectively, in the parenchyma, cortex, and leaves) can fulfill this requirement.

Cadmium (Cd) concentrations in cacao often exceed food limits. A better understanding of the molecular mechanisms of Cd accumulation in cacao trees is necessary to advance Cd mitigation strategies. This study explores Cd distribution and speciation (i.e., chemical form) within the vegetative organs of a high Cd accumulating cacao cultivar growing in soil with background Cd concentrations (0.28 mg Cd kg−1) by synchrotron radiation-based micro- and nano-X-ray fluorescence imaging and X-ray absorption spectroscopy on duplicate samples of roots, young branches, mature branches, and leaves. In both the roots and branches, the incorporation of Cd in Ca-oxalate crystals with binding to oxygen-ligands was identified as a major mechanism of Cd regulation. The Ca-oxalate crystals were more abundant in the branches than in the roots. We suggest that the incorporation of Cd into the Ca-oxalate crystals may limit the transfer of Cd to other organs like the leaves and beans. The roots also featured Cd-sulfur species in dilated cells of the wood, probably for the retention of Cd in the roots by strong binding with Cd to thiol-containing ligands. A Cd hotspot in large, secreting channels of the branches suggested that mucilage may play a role in the transport of Cd within cacao trees. The leaves had local Cd enrichments in the parenchymatous tissues and displayed a higher Cd concentration in the mesophyll compared to the epidermis. These insights in Cd distribution and speciation underscore that Theobroma cacao L. develops original Cd detoxification strategies, strongly different from non-tolerant species such as cereals.

Les fibres naturelles, issues de sources agricoles, offrent une solution viable, représentant une alternative écologique aux matériaux synthétiques. Parmi celles-ci, les fibres de lin sont particulièrement remarquables pour leur résistance mécanique et leur faible impact environnemental, ce qui les rend idéales pour une utilisation dans les composites verts. Un composite vert est un matériau qui combine des fibres naturelles avec des matrices biodégradables, visant à minimiser l'impact environnemental tout au long de son cycle de vie. Cette thèse se concentre sur l'intégration nouvelle de tissu de lin unidirectionnel et de fibres courtes de lin dans des matrices de poly (acide lactique) (PLA), dans le but de développer des composites qui équilibrent durabilité environnementale et viabilité économique. Le principal défi abordé dans cette recherche est l'hydrophilie naturelle des fibres de lin, qui peut entraver leur incorporation efficace dans les matrices de PLA. Pour surmonter cela, cette thèse explore divers traitements de surface, incluant à la fois des méthodes humides (traitements à l'acétone et alcalins) et sèches (plasma à pression atmosphérique). L'efficacité de ces traitements est directement comparée en évaluant leur impact sur les propriétés mécaniques finales du composite. The melon fly, Zeugodacus cucurbitae (Coquillett) (Diptera: Tephritidae), is considered to be the most destructive pest of melons and other related cucurbit crops worldwide. Despite the potential of behaviour-based control strategies, little is known about the mechanisms involved in female mate choice. Herein, we investigated the production and chemoreception of cuticular hydrocarbons in both sexes of Z. cucurbitae, and the behavioural responses they induce. We studied the epicuticular composition of virgin males and females, using two-dimensional gas chromatography coupled with mass spectrometric detection. Data were interpreted using multivariate factorial analysis. The differentiation of chemical profiles was consistently observed over time. In young individuals, the chemical profiles did not differ between sexes, while sex-specific differences were noted in mature flies. The fly olfactory sensitivity to these compounds was explored using gas chromatography combined with chopped triple electroantennography and electropalpography detectors. This extensive exploration of the pest olfactory sensitivity highlighted three compounds produced by the male. When blended, they induced a robust positive response in unmated naive females in a six-choice olfactometer. The responsiveness of other Tephritidae species (a polyphagous species Bactrocera dorsalis (Hendel) and the cucurbit specialist Dacus demmerezi (Bezzi)) to whole body extracts of Z. cucurbitae was also investigated. Our findings showed that Z. cucurbitae uses species-specific olfactory receptors to detect male produced compounds. In addition, the palps were sensitive to a female-specific component, 1,7-dioxaspiro[5.5]undecane, which the males produce in minute quantities. Overall, this study provides a starting point for a pheromone-based tephritid lure that targets unmated females. The potential implications for pest management are discussed.

Most phytophagous insect species exhibit a limited diet breadth and specialize on a few or a single host plant. In contrast, some species display a remarkably large diet breadth, with host plants spanning several families and many species. It is unclear, however, whether this phylogenetic generalism is supported by a generic metabolic use of common host chemical compounds ('metabolic generalism') or alternatively by distinct uses of diet-specific compounds ('multi-host metabolic specialism')? Here, we simultaneously investigated the metabolomes of fruit diets and of individuals of a generalist phytophagous species, Drosophila suzukii, that developed on them. The direct comparison of metabolomes of diets and consumers enabled us to disentangle the metabolic fate of common and rarer dietary compounds. We showed that the consumption of biochemically dissimilar diets resulted in a canalized, generic response from generalist individuals, consistent with the metabolic generalism hypothesis. We also showed that many diet-specific metabolites, such as those related to the particular color, odor, or taste of diets, were not metabolized, and rather accumulated in consumer individuals, even when probably detrimental to fitness. As a result, while individuals were mostly similar across diets, the detection of their particular diet was straightforward. Our study thus supports the view that dietary generalism may emerge from a passive, opportunistic use of various resources, contrary to more widespread views of an active role of adaptation in this process. Such a passive stance towards dietary chemicals, probably costly in the short term, might favor the later evolution of new diet specializations.

Skeletal muscle is essential for locomotion and plays a crucial role in energy homeostasis. It is regulated by nutrition, genetic factors, physical activity and hormones. Furan fatty acids (FuFAs) are minor fatty acids present in small quantities in food from plants and animals origin. Recently, we showed that a preventive nutritional supplementation with furan fatty acid in a DIO mouse model reduces metabolic disorders. The present study was designed to determine the influence of FuFA-F2 extracted from Hevea brasiliensis latex on skeletal muscle phenotype. In C2C12 myotubes we found that FuFA-F2 whatever the concentration used increased protein content. We revealed that in C2C12 myotubes FuFA-F2 (10 µM) increases protein synthesis as shown by the stimulation of mTOR phosphorylation. Next, to confirm in vivo our results C57Bl6 mice were supplemented by oral gavage with vehicle or FuFA-F2 (20 mg/kg) for 3 and a half weeks. We found that mice supplemented with FuFA-F2 had a greater lean mass than the control mice. In line with this observation, we revealed that FuFA-F2 increased muscle mass and promoted more oxidative muscle metabolism in mice as attested by cytochrome c oxidase activity. In conclusion, we demonstrated that FuFA-F2 stimulates muscle anabolism in mice in vitro and in vivo, mimicking in part physical activity. This study highlights that in vivo FuFA-F2 may have health benefits by increasing muscle mass and oxidative metabolism.

The main objective of infant follow-on formulas, consumed from the age of 6 to 12 months, is to mimic the composition of breast milk in order to meet the nutritional needs of infant. In this context, their composition is governed in Europe by a strict regulation that has evolved in 2020 to force manufacturers to improve the nutritional profile of the formulas. The objective of this dataset was to collect the ingredient lists and nutritional values of infant follow-on formulas present on the world market with a focus on the lipid fraction. The data collection was carried out from December 2020 to April 2021 directly on the product packaging or on the websites of the different brands. Only “classic” infant follow-on formulas that are widely consumed were listed. Thus, the ingredient lists and nutritional values of 91 infant formulas were collected. The nutritional values are systematically presented for 100 g of powder, for 100 Kcal and for 100 mL of formula. The sources of fats, emulsifiers and vitamins A and E were also extracted from the ingredient lists. This dataset can be used as a tool for the formulation of infant follow-on formulas or to situate the positioning of products in relation to the market.

While long-term organic fertilizer (OF) applications tend to decrease copper (Cu) and zinc (Zn) availability in agricultural soils, earthworm bioturbation has been reported to have the opposite effect. Thus, the consequences of OF amendments in earthworm-inhabited soils on Cu and Zn bioavailability to earthworms are still under debate. Here, we assessed the effect of a decade of agronomically realistic OF applications on Cu and Zn availability in earthworm-inhabited soils and the consequences on Cu and Zn bioavailability to earthworms. An epi-endogeic species (Dichogaster saliens) was exposed in microcosms to three field-collected soils that had received either no, mineral, or organic fertilization for a decade. Dissolved organic matter (DOM) properties (i.e., concentration, aromaticity, and binding properties toward Cu), pH, and Cu and Zn availability (i.e., total concentration and free ionic activity) were determined in the solution of the soil containing earthworms. Cu and Zn bioavailability was assessed by measuring the net accumulation (ng) and concentration of Cu and Zn in earthworms (mg kg−1). Despite soil Cu and Zn contamination induced by a decade of OF applications, organic fertilization induced an increase in soil pH and DOM properties that drove the reduction of Cu and Zn availability in earthworm-inhabited soils, while bioturbation had little effect on soil pH, DOM properties, and Cu and Zn availability. Consistently, Cu and Zn bioavailability to earthworms did not increase with OF applications. From an ecotoxicological perspective, our results suggest that agronomically realistic applications of OF for a decade should not pose a risk to earthworms in terms of Cu and Zn net accumulation, but further studies have to be undertaken to understand consequent long-term toxicity after exposure.

Effects of anthropogenic activities such as urbanization, population growth, and agriculture on water quality are major concerns particularly in low-income countries where water quality monitoring can be challenging. The purpose of the present study was to evaluate the cytogenotoxic potential of water from urban and rural Malagasy marshes, coupling a fish (Nile tilapia, Oreochromis niloticus) and a plant (Allium cepa) species as bioindicators. The fish and plants were exposed for 72 h to water sampled in the two locations investigated. Using the comet assay on fish erythrocytes, DNA strand breaks were assessed, while mitotic index and nucleolar alterations were estimated in cells of the plant root apex. Comet assays revealed significant DNA strand breaks to fish erythrocytes in both the marshes investigated while the mitotic index and nucleolar characteristics in the roots of A. cepa mainly highlighted potential cytotoxicity in the urban marsh. Our results demonstrate the advantages of coupling in vivo biological test systems to screen potential cytogenotoxicity of surface water in low-income countries where comprehensive data sets of aquatic contaminants are often lacking.

Agarwood, also known as Oud in perfumery, is a wood modified through contact with microorganisms. It emits a sweet and heady fragrance that is rare and precious. It derives its rarity from its very existence, from the trees of the genus Aquilaria. Indeed, agarwood arises from an interaction between the wood of those trees and associated microorganisms, which, after the trunk has been wounded, induce a reaction leading to the production of secondary compounds that give the wood its typical black coloration after oxidation. The compounds involved are mainly chromones and oxygenated sesquiterpenes, such as eudesmol, agarospirol, jinkoh-eremol and valerianol. Demand for agarwood on the international market has increased considerably over the last ten years or so. Its derivatives, including the essential oil extracted from it, are therefore expensive. Agarwood essential oil fetches US$ 5,000 to US$ 10,000 per kg, and is the most expensive oil on the market. That explains why this product is coveted by the owners of the trees, who attempt to compensate for its rarity by practising various agarwood induction methods. The methods, such as making holes or hammering nails into the trunks of the trees, or inoculating mixtures of biochemical products, are often harmful to the trees and detrimental to the composition of the essential oil extracted from them. Consequently, a consortium of farmers in French Guiana and scientists from CIRAD (French Agricultural Research Centre for International Development) is implementing the Aquil@Guyane project, designed to grow Aquilaria trees originating from Southeast Asia in French Guiana, with a view to producing agarwood with a controlled chemical composition that respects the biology and the ecology of the trees, while helping to conserve the genus Aquilaria, which is classed as being under threat of extinction (in CITES annex II) in its natural range. Cedrus atlantica is a tree species present in the south of France which, in the context of climate change, could become a conservation priority in the coming years. This tree species is also of considerable ecological and socio-economic interest in the Mediterranean Basin area, where it is mainly recognized for its durable timber, and also for the potentially interesting chemical properties of its essential oil. Studies of its heartwood formation process and the properties of its extractive compounds are therefore of interest, although very few have been conducted so far. The radial distribution of water/acetone extractives within the Atlas cedar tree (bark, sapwood, transition wood, outer heartwood and inner heartwood) selected for this study was screened at different tree height levels. High-performance liquid chromatography (HPLC) analyses were performed, especially to characterize flavonoid compounds in these extractive fractions. The radial variation of the extractive composition obtained highlights the phenomenon of heartwood formation. Assumptions were put forward as to the metabolic pathways involved in the heartwood formation process of cedar wood, based in particular on the occurrence and radial evolution of (-)-catechin, (+)-taxifolin and flavan compounds. The fungicidal and termite-repellent activities of the extracts were then tested. The water/acetone extractives from the Cedrus atlantica individual studied showed strong termite repellent activity and moderate antifungal activity against crop and fruit pathogens. Even though the sampling in this study was limited to a single tree, the results point to a potential for commercial use of Atlas cedar extractives as wood preservatives and/or as biocontrol products against pathogens of ligneous agricultural crops. Additional tests and chemical analyses will be carried out to confirm these interesting preliminary results.

BACKGROUND: The effects of the environment and genotype in the coffee bean chemical composition were studied using nine trials covering an altitudinal gradient [600–1100 m above sea level (a.s.l.)] with three genotypes of Coffea arabica in the northwest mountainous region of Vietnam. The impacts of the climatic conditions on bean physical characteristics and chemical composition were assessed. RESULTS: We showed that the environment had a significant effect on the bean density and on all bean chemical compounds. The environment effect was stronger than the genotype and genotype-environment interaction effects for cafestol, kahweol, arachidic (C20:0), behenic acid (C22:0), 2,3-butanediol, 2-methyl-2-buten-1-ol, benzaldehyde, benzene ethanol, butyrolactone, decane, dodecane, ethanol, pentanoic acid, and phenylacetaldehyde bean content. A 2 °C increase in temperature had more influence on bean chemical compounds than a 100 mm increase in soil water content. Temperature was positively correlated with lipids and volatile compounds. With an innovative method using iterative moving averages, we showed that correlation of temperature, vapour pressure deficit (VPD) and rainfall with lipids and volatiles was higher between the 10th and 20th weeks after flowering highlighting this period as crucial for the synthesis of these chemicals. Genotype specific responses were evidenced and could be considered in future breeding programmes to maintain coffee beverage quality in the midst of climate change. CONCLUSION: This first study of the effect of the genotype–environment interactions on chemical compounds enhances our understanding of the sensitivity of coffee quality to genotype environment interactions during bean development. The potential of drying to preserve the nutritional quality of a small freshwater fish Henicorhynchus siamensis was assessed. Drying time to reach moisture content and water activity of 10 g/100g and 0.65 ranged from 55 h at 50 °C to 20 h at 80 °C, respectively. Dried fish powder is rich in macronutrients (protein, lipid and ash) and essential minerals (calcium, phosphorus, iron and zinc) due to water removal and despite lipid loss. It is still rich in polyunsaturated fatty acids although docosahexaenoic acid was reduced except at 60°C. Vitamin A was rapidly degraded and manganese was concentrated at high level. However, mean score for the nutritional adequacy of the 15 nutrients (SAIN) and score of nutrients to limit (LIM) show that the fish powder can be used as a food ingredient for example in the formulation of fish snack or instant soup. With the abundance of Henicorhynchus siamensis, dried fish powder from this species could contribute to food security in Cambodia, especially vulnerable people in rural areas.

The chemical composition of dark chocolate has a significant impact on its complex flavor profile. This study aims to investigate the relationship between the volatile chemical composition and perceived flavor of 54 dark chocolate samples made from Trinitario cocoa beans from the Dominican Republic. The samples were evaluated by a trained panel and analyzed using gas chromatography-mass spectrometry (GC-MS) to identify and quantify the volatile compounds. Predictive models based on a partial least squares regression (PLS) allowed the identification of key compounds for predicting individual sensory attributes. The models were most successful in classifying samples based on the intensity of bitterness and astringency, even though these attributes are mostly linked to non-volatile compounds. Acetaldehyde, dimethyl sulfide, and 2,3-butanediol were found to be key predictors for various sensory attributes, while propylene glycol diacetate was identified as a possible marker for red fruit aroma. The study highlights the potential of using volatile compounds to accurately predict chocolate flavor potential.

BACKGROUND: The isosteric heat of desorption is vital in evaluating the energy performance of food dryers. The isosteric heat of desorption was investigated for different cassava (Manihot esculenta Crantz) products prepared as flour or starch, with and without fermentation. An automated moisture sorption gravimetric analyser was used to measure the desorption isotherms over 10–90% relative humidity of the drying air at temperatures ranging from 25 to 65 °C. RESULTS: Analysis of variance showed an imperceptible contribution of the preparation method in the measured desorption data. This finding also agreed with microscopical images, which revealed the lack of compelling structural differences among different products. A set of empirical sorption equations suggested by the ASAE standard was examined over the measured desorption isotherms. The standard error of estimation was found to be in the acceptable range of 2.36–3.71%. Furthermore, the fulfilment of the enthalpy-entropy compensation theory was considered as an additional criterion in the thermodynamic results of different sorption equations, besides their fitting adequacy. The modified Chung–Pfost equation has proved to be the most suitable equation for cassava products, as it is capable of reflecting the temperature dependency of the isosteric heat of desorption. The net isosteric heat of desorption obtained was in the range of 540–1110 kJ kg−1 for 0.10 kg kg−1 dry-basis moisture content and 52–108 kJ kg−1 for 0.25 kg kg−1 dry-basis moisture content. CONCLUSION: These findings are technologically relevant for optimising common drying technologies such as flash and flatbed dryers. © 2022 The Authors. The natural durability of wood species against rot has again become a matter of interest for the uses of wood as a natural material, while the use of synthetic fungicides is being debated. In the mid-20 th century, many experimental studies were performed in Europe and North America, using different standardised protocols. More than five hundred tropical wood species were tested in France between 1955 and 1990, with a total of 9,842 wood samples tested. It would seem useful to allow free access to all the data from these tests in the interests of a more comprehensive study of the natural durability of a wide range of wood species. The great majority (68%) of all these tests used two slightly different protocols with only a change in woodblock test dimensions. Roughly half of the species were tested under one of the two protocols, and the other half under the second. In addition, certain species were tested with both protocols. The dimensions of the test blocks, the fungal strain used, and the wood type (sapwood or heartwood) all give significantly different results, but the mean mass loss due to the 4 main fungal strains is a good predictor of the wood resistance to rot. Overall, mass loss for sapwood with each protocol is 45% higher than for heartwood of the same species. There is a significant positive correlation between the rot resistance of the sapwood and the heartwood, but the decrease from heartwood to sapwood is greater in durable wood species than in non-durable ones. Heartwood rot resistance was observed to be highly variable between trees of the same species, except in those classified as “very durable” and “non-durable”. This opens up possibilities for a classification of natural rot resistance for numerous useful types of timber that are often regarded as only moderately resistant because they include a small proportion of species with poor resistance. Knowledge of the wood properties of tropi- cal tree species is still relatively limited, so timber extraction focuses on a few abun- dant, large-diameter species. Very little is known about small-diameter trees, although they could be used directly as roundwood for construction. The aim of this study was to determine the natural durability of 8 candi- date species for use as structural roundwood in French Guiana: Goupia glabra, Licania alba, Hymenopus heteromorphus, Lecythis per- sistens, Oxandra asbeckii, Pouteria bangii, Simarouba amara, Tachigali melinonii and Virola surinamensis. Samples of their wood were exposed to white rot (European and tro- pical), brown rot (European), and European subterranean termites (using non-choice and multi-choice tests) in laboratory conditions and subjected to screening tests adapted from European standards. Only two species were classified as durable against both fungi and termites: L. alba and P. bangii, which means they can be used without treatment as buil- ding material in tropical or temperate climates. The other species tested were classified (1) as durable but with notable differences observed in their resistance to fungi and termites res- pectively (G. glabra, L. persistens, O. asbeckii), (2) moderately durable (H. heteromorphus), (3) low durability to sensitive (T. melinonii, S. amara, V. surinamensis), meaning actual European standards would not let use these last species in outdoor structures without pro- tection, despite their use by local population in traditional building. However, they could be used for building purposes with appropriate protection systems (including wood protec- tion). The results we obtained for resistance to wood decay provide essential information to assess the potential of these eight tree species in French Guiana's construction sector.

Qymyz is a traditional acidic and ethanolic beverage in central Asian countries made from mare milk fermentation with lactic acid bacteria (LAB) and yeasts. Modeling the growth of microorganisms during fermentation is one of the methods used to control the quality of fermented products. The objective of the study was, firstly, to model the growth kinetics of Kazachstania unispora found in qymyz, and, secondly, to understand their interaction with Lacticaseibacillus casei and Lactobacillus kefiri during the fermentation of mare milk. The K. unispora optimum values of pH and temperature were 4.81 ± 0.22 and 30.16 ± 0.53 °C, respectively, with an optimal growth rate (µopt) of 0.56 ± 0.02 h−1. K. unispora had an ethanol production rate of 6.1 × 10−8 mg·CFU−1. Growth, in terms of limiting substrates showed a lower Ks value for galactose at 0.13 ± 0.04 mg·mL−1 with µopt of 0.45 ± 0.01 h−1, while, for glucose, the Ks was 0.24 ± 0.03 mg·mL−1 with the same µopt. Cocultures of K. unispora were conducted with L. casei and L. kefiri in a synthetic medium and mare milk. The results showed that K. unispora growth was limited and, thus, its ethanol production capacity was inhibited. VOC analysis of mare milk fermented with the studied strains and their cocultures resulted in 37 major volatile compounds. Statistical analysis of the VOC profiles showed that K. unispora modulates the aroma production in coculture with LAB.

Pyrolysis of lignocellulosic biomass is widely used for the production of charcoal, pyroligneous liquid, and noncondensable gases. All three are value-added products that are exploited in several fields. However, this review focuses on three main areas: wood vinegar production methods, its physicochemical properties, and the use of wood vinegar or pyroligneous acid in agriculture and the environment. Wood vinegar is a liquid derived from wood by the condensation of gases and vapors released during the carbonization process, which is the transformation of wood into charcoal. It is mainly composed of aliphatic, aromatic, and naphthenic hydrocarbons and other oxygenated compounds such as alcohols, aldehydes, ketones, furans, acids, phenols, and ethers. Wood vinegar has antioxidant and free-radical-scavenging properties and is used in agriculture as an antimicrobial, antifungal, insecticide, and plant germination and growth agent. It is also used in food preservation, in medicine, and in the ecological preservation of wood. This review also examines the state of the art in pyroligneous liquid production techniques and factors that could potentially affect its quality.

Rubber trees (Hevea brasiliensis Muell. Arg.) are a major crop of economic importance in Thailand. The main product harvested from the rubber trees is latex. Latex production depends on a biochemical process for synthesis, degradation, mobilization, and the storage of nonstructural carbohydrates (NSCs), such as starch and sucrose. The rubber trees demand carbohydrates and enzyme activities for growth, maintenance, and latex synthesis. Therefore, with the appropriate management of the taping system, the balance between growth and latex synthesis in the trees should be maintained since it is regarded as a balance between use and formation of NSCs, which is controlled by the involved enzymes. This research aimed at studying the effects of downward and upward tapping systems on NSCs content and on the activity of the enzymes in the wood and the bark of rubber tree trunks given that the two systems are related to latex yield. It was found that the latex yield was higher with the upward tapping system as compared to downward tapping. Furthermore, upward tapping had induced more sucrose synthase (SuSy) activity, which is involved with sucrose degradation, than downward tapping had. It was, therefore, concluded that the sucrose dynamic had depended on SuSy, which is the key enzyme located in bark with upward tapping. The sucrose had functioned as the local buffer in the bark, which is related to the balance system of high starch hydrolysis in the wood to produce higher rubber biosynthesis in latex cell metabolism with upward tapping.

Lignocellulosic powders have a chemical composition that makes them explosive under certain conditions. In the form of ultrafine particles, they can be directly used as fuel in combustion devices to generate heat and mechanical power without the need to convert them into a liquid form. However, the production of such powder encounters two main challenges that affect engine efficiency: high energy consumption during grinding and poor flowability of the resulting powder. To tackle these challenges, one option is to modify the chemical and physical characteristics of the biomass before grinding. This can be effectively achieved through thermal pretreatment methods such as torrefaction, which alter the chemical structure of lignocellulosic biomass, making it more brittle, modifying its surface properties, and thereby improving its flowability. In this study, we investigated the impact of two torrefaction temperatures (220 °C and 280 °C) on the chemical and physical properties of wheat straw prior to fine milling. Our results indicate that the physical and chemical properties of the wheat straw were not significantly affected at 220 °C, whereas a significant change was observed at 280 °C. In particular, extensive chemical analysis and atomic force measurements show that the modifications of the properties are related to heat-induced degradation of cell wall polymers and an increase in cellulose crystallinity. For the wheat straw torrefied at 280 °C, both the grindability and flowability of the ground powder improved significantly. Meanwhile, the total energy consumption for the transformation remained constant, making the torrefaction process interesting for designing combustible powders.
