The introduction of IoT technologies in industrial settings is changing the way manufacturing companies perceive their production processes, allowing for more accurate monitoring of production-related parameters. Due to the introduction of IoT technologies and associated enhancements in terms of data acquisition, processing, and availability, it becomes possible for manufacturing companies to tackle complex issues, such as the efficiency of production. In this paper, the development of an Industrial IoT solution targeting the fish canning industrial sector is described, as an approach to identify and monitor raw input material losses as well as water and energy waste, an endemic issue of the sector, promoting an increased efficiency in the production processes. This paper mainly focuses on the description of the implementation of the proposed IoT technologies for monitoring waste and loss, and its deployment in three distinct environments, including at a fish canning manufacturing company. Aquaculture supplies more than 50% of the total fish consumed by the world population. It is considered by FAO authorities that it will be the main source of fishery products by 2030. These positive data are contradicted by the fact that aquaculture relies too much on fish oil and fish meal as essential ingredients for food, which exerts significant pressure on marine ecosystems. The present study was planned to look for alternative ingredients in aquafeeds and three different ingredients were evaluated for the first time in juveniles of rainbow trout: (1) House cricket, Acheta domesticus, meal (DI) as a quality protein source; (2) a mixture of four marine microalgae species (DM), as an important source of protein and lipids; (3) protein and lipid fraction recovered from cooking water from canned tuna manufacturing processes (DP&L); and (4) a mix of the three ingredients (DMIX). All the feeds assayed were compared with a commercial feed (DC). Results showed that the formulated alternative feeds had different effects on the growth of the fish. DI and DP&L have a similar growth performance to the control, while the fish fed with DM and the DMix have a slightly lower growth (p < 0.05). No significant differences were observed in terms of FCR (Feed Conversion Ratio) and PER (Protein Efficiency Ratio) (p < 0.05). Fish muscle composition did not show any differences in moisture, protein, lipids and carbohydrates content. Only a significant difference was detected in ash and in saturated fatty acid (SFA) content (p < 0.05). The hepatosomatic index (HSI) was significantly reduced in DI compared to that observed for the DC (p < 0.05), whereas the viscerosomatic index (VSI) was significantly higher in DM. The nutritional value of the rainbow trout muscle at the end of the study shows that DM fed fish showed the highest PUFA/SFA ratio and the lowest atherogenic index (AI), whereas DMIX showed the lowest PUFA/SFA and the highest n-3/n-6 and AI. No differences were observed among diets in the thrombogenic index (TI) values. Any of these ingredients might be used as alternative sources of protein in feeds for fish aquaculture because no negative effects were detected on fish growth, muscle composition, fish health or final nutritional value, except in the case of microalgae, which needs more research to adjust its inclusion rate in the feed. In this article, we seek to reconnect architectural history with social and industrial histories as a strategy for understanding the relationship between infrastructure, fishing, and urbanisation by studying the emblematic case of Matosinhos. This paper traces the formation of the port area and the process of its subsequent transformation with the development of the fishing and canning industries, to understand the relationship between urban planning, the architectures of production (infrastructures, industries, and urbanism) and the architectures of reproduction (housing), and the dynamics of the physical and economic transformations, as well as the key role played by the port in supporting the urbanisation process. In the last decades of the twentieth century, the canneries almost completely disappeared and the gap left by its concentration and modernisation led to the creation of a new urbanisation plan, directed by Álvaro Siza Vieira. Recent works, such as the seaside platform designed by Eduardo Souto de Moura and built at the beginning of the present century, the redevelopment of Leça’s shoreline in 2006 or the conversion of the ruins of a former winery into the new ‘house of architecture,’ are signs of growing functional disputes and symbolic transformations of a particular port city.

Galicia, the leading region in Europe in the manufacture of canned fish. The governance of the sector is characterized by two main actors, the regional government of Galicia and the National Association of Fish and Seafood Cannery Manufacturers, and the multiannual strategic plans of the sector. During the period of validity of only two existing strategic plans, economic crisis affected the region severely. However, the canning sector maintained, and even improved, its performance at the aggregate level. The aim of this article is to analyze the degree of incidence of the strategic plans in the resilience shown by the sector during the crisis and whether this positive trend is shared across all segments of Galician canned industry. The methodology used is based on the analysis of the profitability of the sample of 64 Galician canning companies, by company size (very large, large, medium and small) and over a period of eight years (2011–2018). The results show a greater strength in the financial structure of the very large and large companies compared to the medium and small ones, for which compliance with the objectives of the strategic plans is lower. In conclusion, a trend of consolidation of the leadership of very large companies can be observed. This fact is evidenced by a doubling of turnover, investment in fixed assets and employment. Entrepreneurship is at the heart of new developments that often lead to the creation of new industries. This study examines the origins of the canning industry via the experiences of three of its earliest entrepreneurs: Edward Wright, William Numsen, and Thomas Kensett II. The narrative examines key aspects of the industry's context including the growth in demand for preserved foods, the resources of the Chesapeake region, and the development of food preservation technology. Using the five characteristics of entrepreneurial processes, the importance of entrepreneurs in the development of the economic growth of Baltimore's early canning industry is examined. Each founder exhibited entrepreneurial characteristics in different ways. One failed in his efforts; the other two succeeded in developing businesses that endured into the next century. The study reveals that using entrepreneurial processes does not guarantee success, and that there are various paths to success. An entrepreneurial multiplier effect was also evident in the growth of firms producing supplies and equipment for canners. Using an entrepreneurial lens offers a closer insight into the development of firms and their industries. Some remaining unanswered questions as well as avenues for future studies are discussed. In the food industry, quality assurance is strongly associated with consumer safety and the risk of compromising the purity of products. Specifically, in the canning industries, rusty, dented or bulging cans may contain bacteria and cause foodborne illness. This article discusses the application of DMAIC and failure analysis to reduce the number of crushed cans in a canning industry. The methodology was of an applied nature, with an exploratory objective, a qualitative and quantitative approach and a case study method used. Through statistical analysis, it was found that the amount of dented packaging in the production process, which comprises the steps of filling, seaming and basketing, was high. The step with the highest number of crushed cans between three stages was seaming. This was followed by the application of FMEA failure analysis related to the use of an automated seaming machine. Finally, an action plan was roposed to solve the problem of cans crushed in the seaming step and the results demonstrate the improvements obtained before the target after 4 months (August-November 2015).

The objective of this study aimed to recover and characterize fish oil from by-products generated in the sardine fillet canning process. The oil was recovered by hydraulic pressing at 85°C for 30 min. This experiment was done twice a month for one year. The recovery oil samples were analyzed for their fatty acids profile, acidity, peroxide value, and p-anisidine value. The results of this study showed that recovery yield varied significantly during the year depending on the catching period, from 6.0% (April) to 32.9% (July). The average values of acidity, peroxide value, and p-anisidine value were 1.43% oleic acid, 4.61 mEq active oxygen/kg oil, and 4.25, respectively. The fatty acid categories and individual fatty acids of the recovered oil showed a significant seasonal dependency. The sum of polyunsaturated fatty acids ranged from 35.29 to 42.93%. Within this group, the most important acids are eicosapentaenoic acid 20:5 n-3 (EPA) and docosahexaenoic acid 22:6 n-3 (DHA). The EPA and DHA ranges were 20.46–24.95% and 4.57–10.18%, respectively. This study confirmed the ability to recover high quality food-grade oil from by-products of the fish canning industry that can be used in other food products to ameliorate their nutritional quality. Good climate in Bulgaria defines the excellent qualities of local varieties of fruits and vegetables and by default of Bulgarian canned foods. However, problems such as reduced amount of arable lands or wastelands that have been amassing for decades now, seem to affect this sector of the industry. Lack of agriculture produce requires imports from other countries. Until 1990, former state factories used to produce up to 1 million tons of canned food. 55% of them were a direct export for Russia. After the democratic changes, canned-food factories were privatized and today they are about 150 big and smaller ones which have an annual output of about 150,000 tons of produce. Through bank credits and thanks to the European funding program, most of the canned-food factories fully renewed their technical equipment. About 60% of canned food produced in Bulgaria is exported to EU and the U.S., a fraction still goes to Russian markets. The article analyzes some statistical information about the developing of the food industry in Bulgaria. The production capacity of modern canned-food factories is not fully utilized due to lack of vegetables. The reduced agriculture production has led to the fact that only half of the necessary produce is Bulgarian. 100% of eggplants are produced in Bulgaria. Half of the red peppers in canned-food factories are imported from abroad. Concerning tomato puree, up until 20 years ago entirely produced in Bulgaria is now imported from China. As a result of crossing with patty pan squash with male sterility, the new parent lines of Cucurbita реро L., «ANZH» and «ANZ», with the original set of morphological traits («kabakson») based on the gene of male sterility of functional type were developed. The F1 hybrids with economically valuable features were obtained. These hybrids are characterized by small fruits of pickling types, high yield and biochemical content.

Breeding of novel pea cultivars is of significant interest in scope of increasing food shortages. The cultivars of new generation have to be highly technological and appropriate for mechanical treatment in all stages of planting. To provide higher outcome of plant products, pea is to be harvested for prolonged seasonal period, i.e. bred for conveyor usage. In this paper we presented the results of preliminary investigation of pea germplasm collection and studies on inheritance of flowering time in a series of crosses. We evaluated all hybrid progeny for duration of vegetation, lodging resistance and seed mass. Seven maturity groups were emphasized with most of obtained lines exhibiting an average duration of vegetation period measured as number of sterile nodes (11-15 for average fraction). As a result of this survey, the prospective genotypes for breeding new forms resistant to lodging and suitable for mechanical harvest were isolated. We propose a scheme of conveyor usage of new forms for sustainable delivery of stock for conversion industry. The obtained material is recommended for further improvement as the initial material for breeding.

In a global framework of growing concern for food security and environmental protection, the selection of food products with higher protein content and lower environmental impact is a challenge. To assess the reliability of different strategies along the food supply chain, a measure of food cost through the environmental impact-protein content binomial is necessary. This study proposes a standardized method to calculate the Green Protein Footprint (GPF) index, a method that assesses both the environmental impact of a food product and its protein content provided to consumers. Life Cycle Assessment (LCA) was used to calculate the environmental impact of the selected food products, and a Life Cycle Protein Assessment (LCPA) was performed by accounting for the protein content along the supply chain. Although the GPF can be applied to all food chain products, this paper is focused on European anchovy-based products for indirect human consumption (fishmeal) and for direct human consumption (fresh, salted and canned anchovies). Moreover, the circular economy concept was applied considering the valorization of the anchovy residues generated during the canning process. These residues were used to produce fishmeal, which was employed in bass aquaculture. Hence, humans are finally consuming fish protein from the residues, closing the loop of the original product life cycle. More elaborated, multi-ingredient food products (salted and canned anchovy products), presented higher GPF values due to higher environmental impacts. Furthermore, the increase of food loss throughout their life cycle caused a decrease in the protein content. Regarding salted and canned products, the packaging was the main hotspot. The influence of the packaging was evaluated using the GPF, reaffirming that plastic was the best alternative.
