Abstract

Gingerol is one of the bioactive ingredients in ginger，which plays an important role in the medicinal efficacy of ginger.In this study，the chemical structure and composition of gingerol were introduced，and the advantages and disadvantages of different extraction technology and separation methods of components were compared according to the difference of gingerol compounds.In addition，the main problem of determining gingerol method was put forward.The research progress of gingerol functions and mechanisms including anti-tumor，antioxidant，anti-inflammatory and anti lipid of gingerol in the domestic and foreign were introduced.According to it’s functional characteristics，the application prospects of gingerols in food，medicine，health care and cosmetics were finally prospected.

Abstract

Based on the determination of wall breaking method and dissolving reagent, ultrasonic-assisted extraction was used in this study to explore the effect of extracting astaxanthin from Haematococcus pluvialis under different conditions, and further optimize the test results by response surface methodology. The results showed that under the conditions of ultrasonic time of 18 mins, ultrasonic temperature of 39 ℃, liquid-material ratio of 9∶50 (mL/mg), and ultrasonic power of 200 W, ultrasonic treatment was carried out under the condition of oscillating ultrasound. Finally, the treatment was carried out under the condition of water bath oscillation at 40 ℃ for 20 mins, the astaxanthin extraction rate can be 85.1% using Liquid nitrogen grinding broken wall treatment with ethyl acetate-ethanol (v/v: 1∶2) as the extraction solvent.

Abstract

Based on the essence of traditional Naan cooking method, the formula of Xinjiang Naan product baked by electric oven was studied in this research. In the formulation of Naan, the effects of water, oil, yeast, and salt on the quality of Naan were optimized by Single-factor and orthogonal experiments, the results showed that the optimization parameters of Naan formulation with better quality were as following: the water 55%, Oil 10%, yeast 0.5% and salt 1%. Under these conditions, the sensory score of Naan was 19.2.

Abstract

Astaxanthin belongs to lutein in carotenoids and is a secondary metabolite synthesized by many microalgae, yeasts and bacteria. Astaxanthin has been listed as one of the best preventive and therapeutic agent for many acute or chronic diseases due to its unique chemical structure.Based on current research trends, the existing data on astaxanthin in various biological activities, including antioxidants, regulation of inflammation and atherosclerosis, skin damage, neurodegeneration, tumor and immune activity, improved cognitive function and repair of damaged DNA, were summarized in order to provide theoretical guidance for the functional study of astaxanthin.
